1 10 ounce package frozen chopped spinach (thawed and squeezed to remove excess liquid)
2 cups cooked white rice
1/3 cup melted butter
2 cups shredded cheddar cheese
3/4 cup grated parmesan cheese
1/3 cup chopped onions or 2 large green onions (chopped)
1 garlic clove (minced)
3 large eggs (beaten)
3/4 cup milk
salt and pepper to taste
1/4 cup grated Parmesan cheese (for topping)
shredded mozzarella cheese ((optional))

Steps:

  • Preheat oven to 350°F and generously grease a 11 x 7-inch baking dish.
  • In a large bowl, combine spinach, rice, butter, cheddar cheese, Parmesan cheese, onions, garlic, eggs, and milk until well combined.
  • Season with salt and pepper to taste.
  • Transfer the mixture to the prepared baking dish then sprinkle with Parmesan cheese.
  • Bake for 25 minutes and then top with mozzarella cheese the last 5 minutes of baking if desired.

Spruce up your side dish spread with this unique, veggie-packed twist on classic cheesy rice.

1 cup brown rice
2 ¼ cups water
1 (10-oz.) package frozen spinach
2 Tablespoons olive oil
1 teaspoon minced garlic
1 cup shredded Parmesan cheese
1/8 teaspoon salt

Steps:

  • Begin by combining the brown rice and the water in a saucepan and bringing the mixture to a boil.
  • Cover the saucepan with a lid, reduce the heat and let simmer for 45 minutes, or until fully cooked.
  • Transfer the cooked rice to a serving bowl. Set aside.
  • Defrost the spinach by placing it in a bowl and microwaving for 6-7 minutes until thawed.
  • Strain the frozen spinach in a sieve to remove all liquid (you can also just ring it out in your hands, but make sure to remove as much liquid as possible.)
  • Add two Tablespoons of olive oil to a pan set over low heat. Add the garlic and saute in the oil for 5 minutes until garlic is golden brown.
  • Add the drained spinach to the garlic-infused olive oil and saute for an additional 5 minutes.
  • Transfer the spinach mixture to the bowl with the cooked rice, folding the ingredients into each other.
  • While the mixture is still hot, add Parmesan cheese and salt.
  • Fluff with a fork and serve.

1 small onion (about 1/2 to 3/4 cup finely chopped)
4 1/2 to 5 cups chicken stock (unsalted or low sodium)
2 cups long grain rice (uncooked)
1/2 teaspoon freshly ground black pepper
6 ounces fresh spinach (coarsely chopped, about packed 4 cups)
3 tablespoons chopped fresh herbs (e.g., dill, basil, thyme, chives, etc.)
1 cup shredded fresh Parmesan cheese (about 4 ounces, or 2/3 cup grated)
Kosher salt (to taste)
3 tablespoons olive oil

Steps:

  • Heat the oven to 400 F.
  • Grease a 3-quart baking dish or casserole.
  • Peel the onion and chop it finely.
  • Heat the olive oil in a medium saucepan or saute pan over medium heat. Add the finely chopped onion and cook until it is softened and translucent, stirring frequently. Add 4 1/2 cups of chicken stock and continue cooking until the stock comes to a simmer.
  • Put the rice in a colander or mesh strainer and rinse with cold water.
  • Transfer the rice to the prepared baking dish or casserole; add the chicken stock and onion mixture and stir the mixture gently until blended.
  • Bake the rice, uncovered, in the preheated oven for 25 minutes, or until the liquid is almost absorbed. Stir the rice occasionally and add more stock, if necessary.
  • Meanwhile, give the spinach a rough chop
  • De-stem and chop the herbs finely.
  • Remove the casserole from the oven and stir in the pepper, spinach, herbs, and Parmesan cheese. Taste the rice and add salt, if necessary. If the mixture seems dry, add more chicken stock.
  • Cover the baking dish tightly with foil and return it to the oven. Bake the casserole for about 5 minutes longer, or until the rice is tender and the spinach has wilted.
  • Stir the rice mixture with a fork to fluff.

This is a wonderful easy side dish to chicken or meat and any leftovers freeze wonderful, it may also be baked in a 10-inch deep-dish pie plate and cut into wedges, this may be doubled but I would still only use one package or spinach or maybe 1-1/2 packages adding in too much spinach will overpower all other ingredients, prep time does not include cooking the rice --- FOR FREEZING prepare recipe as directed but do not bake, wrap pan in plastic wrap then tightly in foil and freeze, to serve thaw over night in refrigerator, remove wrapping bake at 350°F for 25-30 minutes or until hot.

After she (and the rest of the family) had two helpings and proclaimed it a keeper, I let her in on the fact that the parsley was really spinach and that there was also cottage cheese in it!

  • Combine Parmesan and remaining cooked rice in a small bowl. Lightly coat a 9-inch round baking dish, 2 inches deep, with oil, and spoon ricotta mixture into dish. Top with Parmesan-rice mixture. Bake until filling is set and top is golden, 35 to 40 minutes. Let stand for 15 minutes before serving.

A favorite family casserole, updated. My mother served this as a side dish for company. I have adapted it, using fresh spinach and other embellishments.

1 pound spinach (about 2 bunches), washed
1 1/2 cups long-grain white rice, such as Carolina or jasmine
Salt and pepper
2 tablespoons butter, plus more to butter the baking dish
1 cup grated Parmesan
1/2 cup slivered almonds
1 cup ricotta
1 cup grated Gruyère or other Swiss cheese
1/4 cup currants
Pinch of grated nutmeg
1 teaspoon grated lemon zest
1 teaspoon chopped thyme
1 teaspoon chopped sage

Steps:

  • Bring a large pot of well-salted water to a boil. Add spinach and wilt for 30 seconds. Remove with a wire mesh spider or tongs and rinse in a colander with cold water. Squeeze dry and chop roughly.
  • In the same pot, boil the rice for 10 minutes, keeping it slightly underdone. Drain and spread on a baking sheet to cool, then transfer to a large bowl.
  • Heat oven to 375 degrees. Butter a 2-quart soufflé dish (or other baking dish) and dust with about 2 tablespoons grated Parmesan.
  • Melt 2 tablespoons butter in a small skillet over medium heat. Add almonds and cook, stirring, until golden, about 2 minutes. Season lightly with salt and add contents of skillet to rice.
  • Add remaining Parmesan to rice, along with the ricotta, Gruyère, currants, nutmeg, lemon zest, thyme and sage. Season lightly with salt and add pepper to taste. Add chopped spinach and gently toss rice with hands or wooden spoons to distribute ingredients evenly. Transfer mixture to prepared baking dish. (May be prepared up to this point several hours in advance of baking.)
  • Cover and bake for 30 minutes, then uncover and bake 10 minutes more, until top is browned.
