500g pack puff pastry
plain flour, for dusting
1 egg yolk mixed with 1 tbsp milk, to glaze
fillings of your choice, to serve (see 'goes well with')

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a large baking tray with baking parchment. Roll out the pastry on a lightly floured surface and cut into 30 x 6cm squares, trimming any edges. Score a smaller square inside each one, leaving a 7.5mm border, taking care not to cut the pastry all the way through.
  • Put the squares on the tray, lightly brush with egg glaze and bake for 15 mins until puffed up and golden brown. Transfer to a wire rack to cool. When cool, carefully remove and discard the central piece of pastry from each one. To serve, fill with the fillings (see 'goes well with'). The vol-au-vent cases can be kept in an airtight container for up to a day before filling and serving.

1 package (17.30 ounces) frozen puff pastry, thawed
1 large egg
1 tablespoon water
6 bacon strips
2 medium leeks (white portion only), sliced
1 medium sweet yellow pepper, diced
1 cup shredded rotisserie chicken
8 ounces cream cheese, softened
1/4 teaspoon salt
1/4 teaspoon pepper
Minced fresh parsley plus additional ground pepper

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold 1 puff pastry sheet. Using a 3-1/4-in. round cutter, cut out six circles. Place on a parchment-lined baking sheet., Unfold the remaining pastry sheet. Cut 6 more circles out with the 3-1/4-in. round cutter; with a 2-1/2-in. cutter, cut centers out of the circles. Place the rings on top of the circles that are on the baking sheet. Place the center circles also on the baking sheet. In a small bowl, whisk egg and water; brush over pastries. Chill 15 minutes. Bake until dark golden brown, 20-25 minutes. Cool on a wire rack., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Discard all but 1 tablespoon drippings. Add leeks and pepper to drippings; cook and stir over medium-high heat until tender, 5-7 minutes. Reduce heat to low; stir in bacon, chicken, cream cheese, salt and pepper. Cook and stir until blended; remove from heat., When cool enough to handle, hollow out pastries with a small knife. Fill with chicken mixture. Sprinkle with parsley and pepper. Serve with small center pastries on the side.

3 potatoes, boiled & grated
1/4 cup corn, boiled
2 tbsp melted butter
1 tsp crushed pepper
Salt as per taste
1/8 cup spring onion, chopped
1/4 cup cheese spread
1/2 tsp chili flakes, or as per taste
1 tsp dried oregano

Steps:

  • In a bowl, combine the grated potatoes, butter, crushed pepper, salt, corn & chopped spring onion. Add the cheese spread and mix well

All-purpose flour, for work surface
1 pound Puff Pastry Dough
1 large egg yolk
1 tablespoon heavy cream

Steps:

  • Lightly flour a clean work surface. Using a rolling pin, gently roll out dough until it is about 1/4 inch thick. Using a 4-inch vol-au-vent cutter, cut out 4 rounds. If using a 3 1/2-inch cookie cutter, cut out 8 rounds; cut out centers from half the rounds with a 2 1/2-inch round cookie cutter to form rings.
  • In a small bowl, whisk together egg yolk and cream. Using a pastry brush, moisten top of each vol-au-vent with egg wash, being careful not to let any drip down over the cut edges. (Or moisten each ring and round with egg wash; lay one ring on top of each round, lining up outside edges.) Place vol-au-vents on an ungreased baking sheet. Cover with plastic wrap; place in refrigerator 1 hour.
  • Preheat oven to 425 degrees. Bake until vol-au-vents are puffed and golden on the outside, about 12 minutes. Reduce heat to 350 degrees; continue baking 10 to 12 minutes to let insides cook through.
  • Transfer vol-au-vents to a wire rack. While still warm, cut out center of tops with a paring knife; set aside. Remove and discard inside dough, and let shells cool completely. Spoon or pipe in desired filling. Replace tops, and serve.

11 ounces frozen puff pastry
1 egg, blended with 1 tbsp water
3 tablespoons butter
2 cups sliced mushrooms
4 tablespoons flour
1 1/4 cups milk
salt & pepper

Steps:

  • If you would rather not make the pastry you can purchase Vol au Vent shells and can skip the first several steps.
  • Roll the pastry out to 1/4 inches thick on a well floured board.
  • Cut six 3 inches circles with a pastry cutter. Make a smaller cut 1/4 " inside each case all around but do not cut all the way through.
  • Place on ungreased baking tray and chill in the refrigerator for 30 minutes.
  • Brush the tops of the cases with the egg and water glaze and bake at 400 degree for 20 minutes or until well risen and golden.
  • Cool on a wire rack then carefully remove the lids with a sharp knife and scoop out any uncooked mixture.
  • Filling.
  • melt the butter in a skillet and add the sliced mushrooms. Cover and cook for 2 minutes.
  • Blend in the flour and cook for 1 minute.
  • Blend in the milk, bring to a boil then lower to a simmer for 2 minutes.
  • Season well with salt and pepper.
  • Fill the prepared cases with the filling, replace the lids and return to a 400 degree oven for another 10 - 15 minutes. Be careful they do not burn.

It is divided into three steps: preparing the puff pastry (which can be done a day in advance), preparing the classic sauce financière, and filling the vol-au-vent.

PUFF PASTRY
500g (1.1 lbs) flour
300 ml (1 ¼ cup) water
1 ½ tsp salt
500g (1.1 lbs) butter
1 egg
SAUCE FINANCIÈRE
lean ham
pinch of mignonette
thyme
bay leaf
mushroom and truffle trimmings
2 tbsp consommé
2 ½ glasses dry Madeira

Steps:

  • First, prepare the puff pastry. Sieve the flour and put it on a board making a well in the middle. Into the center of this circle put salt and water - the exact amount of water may vary depending on the type of flour. Mix and knead until the dough is smooth and elastic. Form into a ball and let it stand for 25 minutes.
  • Roll out the dough evenly into a sheet measuring 20 x 20 cm (8" x 8"). Put the kneaded butter in the middle and fold the ends of the dough over the butter to enclose it completely. Leave it to stand for 10 minutes in a cool place.
  • The next step is called tourage - giving turns to the dough. Flour the board lightly and roll the dough with a rolling pin to obtain a rectangle 60 cm (24") long, 20 cm (8") wide, and 1.5 cm (5/8") thick. Refold the strip in three and roll the folded dough in the opposite direction.
  • Give 4 more turns to the dough, leaving it to stand for 10 minutes between each turn. After having been given the 6 prescribed turns, the puff pastry is ready to use.
  • Roll the pastry to a thickness of 5 mm (1/5"). Cut the first piece in a circle 15 cm (6") in diameter and place it on a baking sheet which has been brushed with water. Cut the second piece into a circle and remove a round from the middle so it resembles a ring with the interior diameter of 11 cm () and the exterior diameter of 16 cm (). Brush the first piece with water and place the second piece on top. Press lightly to fix and leave for 10 minutes
  • Brush the top with a beaten egg. Cut a circle on the central part which will be used as a lid after baking. Bake in a hot oven (180°C/350°F) for 20 to 25 minutes. Detach the lid afterward and leave to cool.
  • Next, prepare the sauce financière. Put the shredded ham, mignonette, thyme, bay leaf, mushroom and truffle trimmings and 2 glasses of Madeira in a saucepan. Boil down over low heat and add the consommé. Boil down in half, strain, put back on the heat and mix in ½ glass Madeira. Finally, boil down in a bain-marie.
  • Assemble the vol-au-vent by filling them with tepid sauce financière and covering them with a lid. Serve immediately.

1/2 cup chopped green onion
1 tablespoon chopped french shallot
1/4 cup dry white wine
2 cups heavy cream
1 pinch saffron thread
1/2 teaspoon salt
1/4 teaspoon white pepper
1 pinch ground ginger
1 pinch cayenne
1/2 teaspoon fresh tarragon (or 1/4 tsp. dried)
1 lb sea scallops
1 lb large shrimp, peeled and deveined
2 dozen oysters
6 large vol-au-vent cases

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Saute the green onions and shallots until they're limp.
  • Add the wine and bring it to a boil.
  • Reduce until most of the liquid is gone.
  • Add the cream, saffron, salt, pepper, cayenne and ginger, and bring to a light boil.
  • (Also add tarragon at this point if using dried.) Add scallops and shrimp.
  • Cook for four minutes, then add oysters and fresh tarragon.
  • Cook until edges of oysters are curly.
  • Throughout the process, agitate pan to slosh the sauce over the seafoods.
  • Spoon the seafoods into a puff pastry shell, until seafoods and sauce run over the top and onto the plate.

1 roll frozen puff pastry (defrosted)
1 small egg
1 Tablespoon milk or water

Steps:

  • Allow the puff pastry to defrost.
  • Preheat oven to 190°C / 375°F
  • Unroll the puff pastry. If using a block rather than a sheet, roll it into a rectangle, roughly 24cm x 36cm
  • Cut the puff pastry into equal squares.
  • Take half of the pastry squares and cut a smaller square from the centre of each one. Leave the cutout piece in place.
  • Beat the egg lightly with the milk or water to form an eggwash and brush the edges of the uncut squares with the eggwash.
  • Place each of the squares with the cutout on top of the eggwashed squares
  • Place each vol-au-vent on a baking tray lined with baking parchment and eggwash the top of each one.
  • Place the baking tray in the oven and bake for approximately 15 to 20 minutes until well risen and golden
  • Remove from the oven and switch off the oven.
  • Allow to cool then carefully cut out the centre square from each vol-au-vent. Set aside for using as a topping when you fill the vol-au-vents
  • Fill with your favourite fillings and serve.

1 large sheet puff pastry ( ready-rolled)
2 egg yolks (beaten)

Steps:

  • 1) Place the puff pastry on a clean surface. With a metal serving ring, cup or glass cut out 14 large circles, 3 inches (7,5 cm) in diameter. Leave 2 of the circles intact and then cut out the middle of the remaining 12 circles, creating rings.
  • 2) Then remove the middle circle. Prick holes in the 2 intact circles using a fork.
  • 3) Once that's done, assemble the vol au vent: place the 2 intact pastry circles and the 14 pastry rings on a clean chopping board. Brush them all with a little beaten egg yolk.
  • 4) Then start building up the vol au vent: place the pastry ring on top of the circle. Keep on doing that until you have a nice little stack of puff pastry.
  • 5) You can also use the mini circles you cut out and then brush them with the egg yolk if you don't want to throw them away.
  • 6) Place the 2 pastry towers (and the small circles) on a baking tray lined with baking paper. Bake them in a preheated oven at 374°F (190°C) for 25 to 30 minutes until golden and crisp. Keep an eye on them and cover with tinfoil if necessary. Then remove them from the hot oven and serve with your favorite filling!

1 bay leaf
3 tablespoons butter
1 onion or large shallot, minced
4 ounces/110 g mushrooms, trimmed and chopped (we used oyster, and ripped them)
1 clove garlic, minced
1 tablespoon all-purpose flour
A splash of white wine (about 2 tablespoons)
2 cooked chicken breasts, diced
1/4 cup/60 ml creme fraiche
1 to 2 teaspoons mustard
Salt and pepper
A few handfuls of chopped fresh parsley
6 vol au vent shells

Steps:

  • Put the stock and bay leaf in a saucepan. Bring to a boil, and turn off the heat.
  • Melt the butter in a saute pan and fry the onions for 2 minutes. Add the mushrooms and cook until shrunken, dark and golden. Add the garlic and cook for 1 minute. Sprinkle over the flour and cook, stirring, for 1 minute. Add the wine and cook until it disappears. Pour over the stock, add the chicken and cook, stirring, until the sauce thickens, about 3 minutes. Stir in the creme fraiche and mustard. Season with salt and pepper. Stir in the parsley.
  • Spoon the chicken mixture into the vol au vent shells and serve.
