CAKE MIX COFFEE CAKE
This Cake Mix Coffee Cake is so easy and yummy! I am a big fan of quick desserts, especially treats with buttery cinnamon and sugar crumb toppings.

- Preheat oven to 350 degrees. In a large bowl, combine cake mix, water, buttermilk, oil, eggs, pudding mix. Beat with a mixer for about 2 minutes. Fold in sour cream.
- In a smaller bowl, combine sugars, flour, cinnamon, and salt. Cut butter into small pieces and add to the sugar mixture. Mix together with a fork or pastry blender until crumbly. Stir in walnuts.
- Pour batter into a greased 9x13 glass baking dish. Sprinkle half of the topping over the batter. Use a knife to swirl the mixture throughout the cake.
- Top evenly with remaining topping.
- Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean.

EASY COFFEE CAKE
This is an easy cake to make using Duncan Hines yellow cake mix. My family and friends all like and I like because it does not take a long time to put together.

- 1. Preheat oven to 350' I use a glass cake pan but use whatever you have. Keep in mind that the baking time will be shorter in a metal pan and you should probably lower oven temp. by 25 degrees. Grease a 9x13 pan or cover bottom of pan with parchment paper if you have it.
- 2. In a large bowl whip egg whites to a stiff peak and set aside until the cake batter is ready.
- 3. In a separate large bowl mix all other ingredients together and beat until smooth.
- 4. Gently fold egg whites into cake batter by hand. Pour into prepared cake pan and bake until done in the center. 40 to 50 minutes. Cake is done when a toothpick inserted in the middle comes out clean.
- 5. While cake is baking dump the topping ingredients into a food processor and chop until butter is pea size. Remove to a bowl and put in the freezer until cake is done.
- 6. When cake is done remove from oven. While cake is hot from the oven remove topping from the freezer and sprinkle evenly over the top.
- 7. You can serve this cake warm or cold. Either way you will get many compliments.
VINTAGE DUNCAN HINES COFFEE CAKE
Although I know that I will make other coffee cakes in the future, this is probably the best one I have in my repertoire. It figures that a recipe that has been around for decades would be a good one. I have a sneaking suspicion that this is the "secret" recipe my sister-in-law has been making us for years, too. No matter how many times I asked for the recipe, she always managed to forget to write it down for me before we had to drive home. I am now wondering if the fact that this cake is just a jazzed up cake mix had anything to do with her reluctance to share. Hmmm, could be. This cake is super moist and full of flavor. That middle layer of cinnamon really sends it over the top (although my husband says that it isn't possible to have enough filling and that I could add more). I actually took two vintage Duncan Hines recipes, one for coffee cake and one for "Sock-It-To-Me" Cake. The result was a crowd pleaser (I have served it on a couple occasions to crowds of 15+ and it always goes fast).

- Mix cake mix, sour cream, water, oil and eggs in a large bowl.
- In a smaller bowl, stir together brown sugar and cinnamon.
- Grease a 9X13 pan and preheat oven to 325 degrees.
- Layer half batter, then half cinnamon mixture, remaining batter, then top with remaining cinnamon mixture.
- Bake for 45-55 minutes or until tests done.
