2 tablespoons vegetable oil, plus more for the grill and brushing
Grated zest and juice of 1 lime
1 clove garlic, grated
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon packed dark brown sugar
Kosher salt and freshly ground pepper
1 pound skirt steak, cut into 4- to 6-inch-long pieces
1 pound skinless, boneless chicken breasts
3 bell peppers (assorted colors), halved lengthwise and seeded
2 large onions, sliced into 1/2-inch-thick rounds
12 to 16 small flour tortillas
Shredded Mexican cheese blend, sour cream, salsa and guacamole, for serving

Steps:

  • Whisk the vegetable oil, lime zest and juice, garlic, chili powder, cumin, coriander, brown sugar, 1 teaspoon salt and a few grinds of pepper in a small bowl. Put the steak in a medium bowl. Place the chicken between 2 pieces of plastic wrap and pound on both sides with the flat side of a meat mallet or a heavy skillet until 1/2 inch thick. Transfer to a separate bowl. Divide the marinade between the steak and chicken and toss well. Refrigerate 30 minutes.
  • Preheat a grill to medium high. Oil the grates. Remove the steak and chicken from the marinade and season with salt. Grill, covered, 3 to 5 minutes per side for the steak and 6 to 7 minutes per side for the chicken. Transfer the steak and chicken to a cutting board and let rest 10 minutes.
  • Meanwhile, brush the bell peppers and onions with vegetable oil; season with salt. Cover and grill, turning, until charred, 6 to 8 minutes. Transfer to the cutting board. Wrap the tortillas in foil and warm on the grill, flipping once, 5 minutes. Slice the bell peppers and separate the onions into rings. Slice the steak and chicken. Serve the meat and vegetables with the tortillas and assorted toppings.

2 teaspoons canola oil
1 medium green pepper, cut into thin strips
1 medium red sweet pepper, cut into thin strips
1 medium onion, halved and sliced
4 flour tortillas (10 inches)
3/4 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine beef and seasoning mix, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties., In a large skillet, heat oil over medium heat. Add burgers; cook 4 minutes on each side. Remove from pan. In same skillet, add peppers and onion; cook and stir 5-7 minutes or until lightly browned and tender., On the center of each tortilla, place 1/2 cup pepper mixture, 1 burger and 3 tablespoons cheese. Fold sides of tortilla over burger; fold top and bottom to close, forming a square., Wipe skillet clean. Place wraps in skillet, seam side down. Cook on medium heat 1-2 minutes on each side or until golden brown and a thermometer inserted in beef reads 160°.

3 steaks of choice, still a little frozen; i used strip steaks for this recipe
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp dried oregano
1/4 tsp dried cumin
1/2 tsp black pepper
1-1/4 c water
1 Tbsp butter
4 Tbsp olive oil/canola oil - divided
1 large onion, sliced into rings
2 medium peppers, or 1 large sliced into strips
1-1/2 c shredded cheddar cheese
6 flatbread, breads

Steps:

  • 1. In a large skillet, add your steaks, season with seasonings, add water and let come to a full boil.
  • 2. In about 10 minutes, the steaks will be almost cooked. Remove steaks to rest on a plate, and reduce heat to simmer. Simmer down braise water, about 4 minutes. Now is the time to start slicing your steaks into strips and set aside. Once water has reduced to about half, turn off heat, add the 1 tbsp. butter, and stir to incorporate, pour into a small bowl and set aside.
  • 3. In a separate skillet, add half your oil, and let heat. Add in your sliced onions and peppers and sauté for a few minutes till the vegetables are softened. Add in ¼ of your reserved sauce. Stir to incorporate and add a few cranks of pepper *optional*. Remove from heat and place directly in the center of your flatbread.
  • 4. Sprinkle on your cheese, dividing accordingly.
  • 5. To same skillet, add in the remaining oil along with your steak strips. Once nicely brown on one side, add in the remaining of your reserved sauce and stir to incorporate making sure all strips are coated with that amazing reduction sauce. Heat thru, remove from heat and place directly over the cheese and veggie mixture.
  • 6. Wrap, secure and ENJOY!! Amazing, delicious Fajitas without the fuss or muss! Trust me; your family will love you!

Juice of 1 lime
2 tablespoons of extra virgin olive oil
2 cloves garlic, peeled, minced
1/2 teaspoon ground cumin
1/2 jalapeño pepper, seeded, ribs removed, finely chopped (be careful not to touch your eyes or anywhere near your eyes after handling a jalapeño pepper!)
1/4 cup chopped fresh cilantro, including stems
Fajitas
1 pound flank steak, skirt steak or carne asada
Salt
1 tablespoon vegetable oil
1 large yellow onion, peeled and sliced with the grain not against the grain as one would normally slice an onion. Slice first in half, and then slice off sections a half inch wide at widest point.
2-3 bell peppers of various colors, stemmed, seeded, de-ribbed, sliced lengthwise into strips

These spicy beef fajitas are packed with fresh flavours and are surprisingly low in calories if you use lean beef. This is a healthy dinner that can form part of a diet of 1200-1500 calories a day. 300g/10½oz lean beef steak, such as sirloin or rump, visible fat trimmed and cut into thin strips
1½ tbsp extra virgin or sunflower oil
2 yellow peppers, deseeded and thinly sliced
2 red peppers, deseeded and thinly sliced
2 red onions, cut into thin wedges
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
400g tin red kidney beans, drained and rinsed
200g/7oz cherry tomatoes, halved
1 long red chilli, finely chopped, or ½ tsp dried chilli flakes
25g/1oz fresh coriander, chopped, plus extra to garnish
lime wedges, for squeezing
4 x 40g/1½oz white or wholemeal flour tortillas, warmed, to serve
2 Little Gem lettuces, trimmed and shredded, to serve
6 tbsp natural yoghurt, to serve
sea salt and freshly ground black pepper

Steps:

  • Season the beef with pepper. Heat half a tablespoon of the oil in large, non-stick frying pan and stir-fry the beef for 1½ minutes, or until lightly browned but not quite cooked through. Tip onto a plate, set aside and return the pan to the heat.
  • Add the remaining oil, peppers and red onions to the pan and stir-fry for 5-6 minutes, or until only just softened. Add the cumin, coriander and paprika. Season with salt and pepper and cook for 30 seconds, then stir in the beans, cherry tomatoes and cooked beef. Cook for 2-3 minutes, or until the beans and beef are hot.
  • Stir in the chilli and season with salt and pepper. Cook for a few seconds more. Remove from the heat, scatter over the coriander and add a squeeze of lime. Toss lightly.
  • Divide the tortillas between four warmed plates. Top with shredded lettuce then pile the beef mixture on top. Spoon the yoghurt over each tortilla and garnish with the coriander. Serve immediately, with extra lime wedges for squeezing.

3/4 lb top sirloin steak
2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced
1/2 teaspoon chili powder

Steps:

  • Slice steak into thin strips.
  • In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.
  • Add beef strips and stir to coat, set aside.
  • Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
  • Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
  • In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
  • Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  • Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
  • Return onions and peppers to skillet; stir for about one minute.
  • To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

2 cloves garlic, grated
2 limes

Two 8-ounce New York strip steaks, about 1 inch thick, such as Good & Gather™ USDA Choice New York Strip Steak
3 bell peppers (about 1 1/2 pounds), stemmed, seeded and sliced 1/2 inch thick, such as Good & Gather™ Tri-Colored Bell Peppers
1 medium onion (about 8 ounces), halved and sliced 1/2 inch thick
2 tablespoons unsalted butter, at room temperature

Steps:

  • Place a 12-inch cast-iron skillet on one side of a gas grill, preheat the grill to high and lightly oil the grates. Alternatively, lightly oil a large grill pan and preheat over high heat and preheat a 12-inch cast-iron skillet over high heat.
  • Mix the oil, 2 tablespoons chili-lime seasoning, garlic, the juice of 1 lime, 1 tablespoon salt and a generous amount of pepper in a large bowl. Place the steaks on a plate and spoon 3 tablespoons of the mixture on top, flipping so that both sides are nicely coated, spooning any marinade on the plate back onto the meat. Refrigerate covered for 15 minutes and up to 2 hours if time allows.
  • Put the peppers and onions in the large bowl with the remaining marinade and toss to coat evenly.
  • Place the steaks on the open side of the grill or on the grill pan and put the vegetables and any oil left in the bowl in the cast-iron skillet.
  • Cook the steaks, flipping once halfway through, until cooked through, about 8 minutes total for medium-rare. Transfer to a cutting board and let rest for 2 minutes. Cook the vegetables, stirring occasionally, until softened and charred in some spots, about 10 minutes.
  • Meanwhile, mix the butter and remaining 1/4 teaspoon chili-lime seasoning in a small bowl. Wrap the tortillas loosely in foil and grill until warm, about 1 minute per side.
  • Thinly slice the steaks and add to the skillet with the vegetables. Top with the butter and quickly stir until melted and incorporated, about 1 minute.
  • Cut the remaining lime into wedges. Serve the steak and vegetables with the tortillas, salsa and lime wedges.

1 tablespoon cumin seeds, lightly toasted and ground
1 teaspoon chipotle or ancho chile powder
1 teaspoon salt, more to taste
1 1/4 pounds flank or skirt steak
Zest of 1 lime (2 teaspoons)
1/4 cup fresh lime juice
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon Worcestershire sauce
4 large garlic cloves, minced
1 large red or yellow onion, halved and sliced
2 red bell peppers (or 1 red and 1 orange or yellow), seeded and sliced 1/4 inch thick
1 green bell pepper, seeded and sliced 1/4 inch thick
1 jalapeño or 2 serrano chiles, minced
1/4 cup chopped cilantro
4 large flour or 8 corn tortillas
1 teaspoon grapeseed or canola oil
1 romaine heart, cut crosswise into 1-inch wide pieces
Salsa fresca, for serving (see recipe)
Queso fresco, for sprinkling

Steps:

  • Combine 2 teaspoons ground cumin, the chile powder and 1 teaspoon salt. With a sharp knife, cut shallow crosshatched incisions across top and bottom surfaces of steak. Rub spice mix all over surface of steak. (It's best to wear gloves as the chile powder is hot.) Place steak in a resealable freezer bag.
  • In a small bowl, whisk together lime juice and zest, 1/4 cup olive oil, the Worcestershire sauce and half the garlic. Reserve 2 tablespoons of the marinade and pour the rest into the bag with steak. Seal and move steak around in bag to coat thoroughly. Place on a sheet pan and refrigerate for at least 4 hours and up to 24 hours. Massage bag periodically to redistribute marinade. Refrigerate reserved marinade if cooking the next day.
  • Heat 2 tablespoons olive oil in a large, heavy skillet over medium-high heat. Add onions and cook, stirring, until they soften and begin to color, 4 to 5 minutes. Stir in bell peppers and chile. Cook, stirring, until peppers begin to soften, about 3 minutes.
  • Lower heat to medium, add remaining garlic and cumin, and salt to taste. Cook, stirring often, until peppers are nicely seared, softened and beginning to caramelize, 5 to 8 minutes.
  • Pour in reserved 2 tablespoons marinade and scrape bottom of pan with a wooden spoon to deglaze. Stir in half the cilantro. Taste and adjust seasoning. Remove from heat but keep warm.
  • Wrap tortillas in foil and warm in a low oven, or wrap in a towel and warm in a steamer or in the microwave.
  • Heat a large cast iron skillet over medium-high heat, or prepare a medium-hot grill. Remove meat from marinade and discard marinade. Pat meat dry with paper towels. If using a skillet, heat remaining 1 tablespoon oil in skillet. (If your skillet is not large enough for the steak, cut it in half and cook in batches.) Cook for 3 to 4 minutes per side. Meat should be medium rare. Remove to a cutting board, cover with foil and let sit for 10 minutes. Cut across the grain into 1/2- to 3/4-inch wide strips.
  • Arrange lettuce on a platter, then place steak next to lettuce. Tip juices from cutting board over meat and sprinkle with remaining cilantro. Serve vegetables on the same platter or separately, along with warm tortillas, salsa and crumbled queso fresco.
