- In a large bowl, cream butter and sugar until light and fluffy. Beat in vinegar and vanilla. Combine flour and baking soda; gradually add to creamed mixture and mix well. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Flatten to 1/4-in. thickness; sprinkle with colored sugar., Bake at 350° for 8-10 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks. Store in an airtight container.

- 1. Preheat oven to 325 degrees. Cream together, butter and sugar. Add vinegar,soda,flour and nuts. Drop by teaspoon on lightly greased cookie sheet. Bake 18-20 minutes depending on your oven. Don't over bake, remove when light golden color. Cool on wire rack.
- 2. Makes about 2 dozen cookies.

- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a medium bowl mix together the flour, baking soda and the salt: Set aside.
- In a large bowl beat together the butter, sugars, vanilla extract and the vinegar until smooth. Beat in the egg just until combined.
- Mix the flour mixture into the wet mixture just until combined. Stir in the chips.
- Using a large cookie scoop (about 2 rounded tablespoons) drop about 3 inches apart onto cookie sheet.
- Bake for 8 to 10 minutes, they will look light brown around the edges and will look underdone in the center. Remove from the oven and immediately sprinkle each cookie with a little sea salt. Allow to sit on the sheet for 10 minutes before moving to a rack to cool.

- In a large bowl stir together the lard or shortening, the butter, 1 cup of the sugar, the egg, and the vanilla. Into the bowl sift together the flour, the baking soda, and the salt and stir the mixture until it forms a dough. Chill the dough, covered, for at least 2 hours or overnight.
- Preheat the oven to 375°F. Roll rounded tablespoons of the dough into balls, roll the balls in the additional sugar, coating them completely, and arrange them 3 inches apart on lightly greased baking sheets. Flatten the balls with the bottom of a glass dipped in the sugar (the edges will crack slightly) and bake the cookies in batches in the middle of the oven for 8 to 12 minutes, or until they are pale golden. Transfer the cookies to racks and let them cool. The cookies keep in an airtight container for 1 week.
