KITTENCAL'S MARINATED OIL AND VINEGAR COLESLAW

I make this quite often for BBQ parties and everyone loves it! plan ahead, this salad must be prepared a day ahead and left in the fridge overnight to blend the flavors, it will take on a completely different flavor --- I have even added in lightly blanched broccoli and/or cauliflower florets to the veggies, feel free to add in whatever you want to --- remember to add in the white sugar to suit taste if you prefer a sweeter coleslaw adjust the sugar amount, I have added up to about 1 cup, taste the dressing before adding to the salad if you think it needs more sugar then add it into the dressing before mixing into the slaw just make certain to whisk very well so that the sugar is mixed in completely.

1 large cabbage (shredded or finely chopped)
1 small green bell pepper, sliced
2 green onions, chopped (or use sweet onion)
2 large carrots, peeled and shredded (hand-squeeze excess moisture out)
3/4 cup white vinegar
1 teaspoon seasoning salt (or use white salt to taste)
1 tablespoon brown sugar (or to taste)
1 1/2 teaspoons celery seeds
2 -3 tablespoons prepared mustard
1/2-1 teaspoon garlic powder (optional)
2/3 cup vegetable oil
1/2 cup white sugar (can add up to 3/4 cup)
black pepper (optional)

Steps:

  • In a large bowl, mix the vegetables together.
  • Mix first 6 dressing ingredients together in a small saucepan; bring to a boil.
  • Remove from heat then immediately add in the oil and white sugar; mix to combine until the sugar is completely dissolved, then pour the hot mixture over the veggies.
  • Allow to sit out at room temperature for 1 hour stirring occasionally with a spoon.
  • Cover and refrigerate for 24 hours stirring occasionally, I just keep a spoon in the bowl and just mix every time I open the fridge.
  • Season with freshly ground black pepper (if desired) before serving.

1 head of green cabbage (finely shredded)
1 large carrot (grated)
1/2 yellow or red onion (finely sliced)
1/3 cup apple cider vinegar
3 tbsp olive oil
1 tbsp honey ((or more, depending on sweetness))
1/2 tbsp Dijon mustard
1 tsp celery seed
1/4 tsp salt
1/4 tsp black pepper

Steps:

  • Add the shredded green cabbage, carrot and onion to a large bowl.
  • In a smaller bowl, whisk together the apple cider vinegar, Dijon mustard, honey, olive oil, celery seed, salt and pepper to create the dressing. Taste the dressing and decide if you'd like to add more honey.
  • Add about half of the dressing to the cabbage, onions and carrots and gently toss. Slowly add more dressing until you've reached your desired consistency.
  • Serve and enjoy!

You've found it! The perfect Carolina style vinegar coleslaw made with cabbage and sweet Vidalia onions. This simplest of no-mayo slaws is the perfect side dish, you're going to want it with everything this summer.

1 small to medium head of Savoy cabbage
1 small to medium Vidalia onion (or other sweet onion.)
1/4 cup olive oil
6 Tbsp apple cider vinegar
1/2 tsp celery seed
1/2 tsp fennel seed
1/2 tsp dill, either dried or fresh
1/2 tsp onion salt, use more to taste
1 tsp sugar, feel free to use more or less.
fresh cracked pepper to taste

Steps:

  • Remove the outer leaves from the cabbge and slice it in half, lengthwise, through the core. Remove the core from each half. If your head is on the larger side, cut each half in half again. Finely slice/shred the cabbage with a large sharp knife. Put in a large salad bowl.
  • Peel and halve the onion. Remove the core and very thinly slice. Add to the bowl. Note: If your onion is large, don't use the whole thing.
  • Whisk the dressing ingredients together and taste it to adjust any of them to your particular liking.
  • Toss the slaw with enough dressing to moisten everything, but not drown it. You may not need it all. Add more salt and pepper if you like.
  • Serve right away, or chill the slaw until needed.

1/3 cup mayonnaise
1/3 cup yellow mustard
1/3 cup cider vinegar
1/3 cup sugar
2 tablespoons hot sauce, preferably Texas Pete
1 teaspoon celery seeds
For the Slaw Mix
1 large head green cabbage (about 3 1/2 pounds), finely shredded on a mandoline or by hand
1 large carrot, peeled and grated on the large holes of a box grater
2/3 cup sugar
1/3 cup kosher salt

Steps:

  • For the Dressing: Whisk together mayonnaise, mustard, vinegar, sugar, hot sauce, and celery seeds in small bowl.
  • For the Slaw: Combine cabbage and carrot in a large bowl. Sprinkle with sugar and salt and toss to combine. Let stand five minutes, then transfer to a large colander and rinse thoroughly under cold running water.
  • Transfer vegetables to a salad spinner and spin dry. Alternatively, transfer to a large rimmed baking sheet lined with a triple layer of paper towels or a clean kitchen towel and blot mixture dry with more towels. Return to large bowl.
  • Pour dressing over vegetables and toss to coat. Adjust seasoning to taste with salt, pepper, and/or sugar.
