Vietnamese Chicken and Rice Noodle Salad image

With fresh ingredients, crunchy textures and bright flavours - there's so much to love in this Vietnamese Chicken & Rice Noodle Salad!

1 tablespoon | 15 ml lime juice
2 tablespoons |28 g light brown sugar
2 tablespoons | 30 ml fish sauce
2 tablespoons | 30 ml rice vinegar
1 red birds eye chili, deseeded and diced
2 cloves garlic, minced
2 cooked boneless, skinless chicken breasts, shredded or diced
4 ounces thin rice noodles
1/2 large cucumber
1 large carrot, thinly sliced or grated
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint leaves, sliced
1/4 cup salted peanuts, chopped

Steps:

  • Start by mixing all of the nuoc cham dressing ingredients together in a small cup or bowl until combined. Set aside.
  • Place the rice noodles in a large pot and cover with boiling water. Let the noodles sit in the hot water three minutes, then drain and rinse the noodles with cold water. If you don't own a tea kettle, add 3-4 cups water to your pot and bring to a boil on the stove top first before adding the noodles.
  • Once cooked and rinsed, add the noodles to a large salad bowl and set aside as you prep the remaining ingredients.
  • Take the cucumber and cut in in half lengthwise. Use a teaspoon to scoop out the seeds in the middle, then use a vegetable peeler to peel the cucumber in to ribbons. Thinly slice or grate the carrot and slice the fresh herbs.
  • Add the cucumber, carrot, herbs, shredded chicken and peanuts to the rice noodles. Pour the dressing over the top then toss well to mix the salad until everything is well covered in dressing.
  • Add more peanuts and fresh herbs if desired and enjoy.

This refreshing, tasty rice noodle salad is perfect for a hot summer day, served with lots of raw crunchy vegetables, seared chicken, and nuoc cham sauce.

1 pound boneless, skinless chicken thighs
2 cloves garlic ((minced))
1 lime ((juiced))
2 tablespoons fish sauce
1 tablespoon soy sauce
2 tablespoons brown sugar
1 tablespoon vegetable oil
3 cloves garlic ((minced))

2 tablespoons rice vinegar or white vinegar
1/4 cup fish sauce
3 tablespoons sugar
1 red chili ((de-seeded and sliced, or substitute 2 teaspoons chili garlic sauce or Sriracha))
1/2 cup cold water
7 ounces dried rice vermicelli noodles
Vegetable oil
2 cups bean sprouts
1 large carrot ((julienned))
1 seedless cucumber ((julienned))
6 leaves romaine lettuce ((finely julienned))
Mint
Cilantro

Steps:

  • In a medium bowl, combine the chicken thighs with your marinade ingredients, and set aside at room temperature for 30 mins to 1 hour while you prepare the other salad ingredients.
  • Combine all the nuoc cham ingredients and stir until the sugar has completely dissolved into the sauce. Taste and adjust any of the ingredients if desired.
  • Boil the rice vermicelli noodles according to the package instructions. Drain and rinse under cold running water. Set aside in a colander.
  • Heat 2 tablespoons of vegetable oil in a cast iron skillet, grill pan, or frying pan over medium high heat. Sear the chicken for about 4 minutes per side, or until cooked through. Set aside on a plate.
  • To assemble the salad, combine the rice noodles with bean sprouts, julienned carrots and cucumber, romaine lettuce, mint, and cilantro. Slice the chicken thighs and add to the salad. Serve with your nuoc cham sauce.

1 cup loosely packed chopped cilantro
½ jalapeno pepper, seeded and minced
3 tablespoons white sugar
¼ cup fresh lime juice
3 tablespoons vegetarian fish sauce
1 (12 ounce) package dried rice noodles
2 carrots, julienned
1 cucumber, halved lengthwise and chopped
¼ cup chopped fresh mint
4 leaves napa cabbage
¼ cup unsalted peanuts
4 sprigs fresh mint

Steps:

  • Mince the garlic with the cilantro and the hot pepper. Transfer the mixture to a bowl, add the lime juice, fish sauce or salt and sugar; stir well. Let the sauce sit for 5 minutes.
  • Bring a large pot of salted water to a boil. Add the rice noodles; boil them for 2 minutes. Drain well. Rinse the noodles with cold water until they have cooled. Let them drain again.
  • Combine the sauce, noodles, carrots, cucumber, mint and Napa cabbage in a large serving bowl. Toss well and serve the salad garnished with the peanuts and mint sprigs.

1 jalapeno pepper, chopped
1 tablespoon honey
1/4 cup fresh lime juice
3 tablespoons fish sauce
1 teaspoon kosher salt
1 pound dried rice vermicelli
2 carrots, julienned
1 cucumber, halved, peeled, seeded and sliced into thin half-rounds
1/4 cup chopped fresh mint
1/2 cup finely shredded napa cabbage
1/4 cup chopped dry-roasted nuts

Steps:

  • Place the garlic, cilantro, jalapeno, honey, lime juice, fish sauce and salt in the bowl of a food processor and process until almost smooth. Bring a large pot of salted water to a boil, add the noodles and cook for 2 minutes. Drain, rinse well with cold water and drain again. In a large bowl, combine the sauce, noodles, carrots, cucumber, mint and napa cabbage. Toss well and garnish with peanuts.

1 lb boneless skinless chicken breast
4 ounces wide rice noodles
1/2 cup rice wine vinegar
1 tablespoon fish sauce
2 teaspoons sugar (to taste)
3 cups napa cabbage, shredded
1 English cucumber, halved, seeded and thinly sliced
1 cup carrot, shredded
1 cup fresh basil, slivered
1/2 cup unsalted dry roasted peanuts, finely chopped

Steps:

  • Cook chicken in just enough water to cover and bring to a boil. Cover, reduce heat and simmer chicken is just done. When cool enough to handle shred into bite-size pieces.
  • Bring a large pot of water to boil and cook rice noodles until tender (6 to 8 minutes) Drain and rinse.
  • Combine vinegar, fish sauce and sugar and whisk until sugar dissolves. Add the chicken and rest of the ingredients and toss to combine.
  • Serve immediately.

2 tablespoons peanut butter
3 tablespoons rice-wine vinegar
1 tablespoon low-sodium soy sauce
1 tablespoon honey
2 tablespoons freshly squeezed lime juice, plus 6 lime wedges for garnish
1 teaspoon minced garlic
1 teaspoon minced ginger
1 tablespoon peanut oil
2 tablespoons finely chopped fresh mint leaves, plus sprigs for garnish
2 fourteen-and-a-half-ounce cans low-sodium chicken stock, or homemade, skimmed of fat
1 1/2 pounds boneless skinless chicken breasts
1 pound rice vermicelli
1 cucumber, seeded and cut into 3-inch-long matchsticks
1 red pepper, seeded and cut into 3-inch-long matchsticks
2 carrots, peeled and cut into 3-inch-long matchsticks
1/2 small red onion, peeled and cut as thinly as possible

Steps:

  • Place the peanut butter, 1 tablespoon rice-wine vinegar, soy sauce, honey, 1 tablespoon lime juice, garlic, and ginger in the bowl of a food processor or the jar of a blender. Process until the mixture is smooth and creamy. Set the peanut sauce aside until ready to use.
  • Whisk together the remaining 2 tablespoons rice-wine vinegar, the remaining tablespoon lime juice, peanut oil, and mint in a small bowl, and set the vinaigrette aside.
  • Place the chicken stock in a large saucepan, and bring to a boil. Add the chicken, and simmer 12 to 15 minutes, until chicken is completely cooked. Remove the chicken from the pan, and set aside to cool, reserving stock. Shred the chicken into bite-size pieces, and toss with the reserved peanut sauce.
  • Add 3 cups water to stock, and return to a boil. Add the vermicelli, and cook until al dente, about 4 minutes. Drain, and toss with reserved vinaigrette.
  • Divide noodles, cucumber, red pepper, carrots, red onion, and chicken among six large bowls, and garnish with mint sprigs and lime wedges. Serve.

2 -3 light brown sugar
6 -8 tablespoons water, to taste
1 medium garlic clove, minced
1 fresh Thai chiles or 1 jalapeno pepper, minced
8 ounces thin rice noodles
3 -4 napa cabbage leaves, thinly sliced crosswise
1 medium carrot (shredded or cut into matchsticks)
1/2 cucumber, halved, seeded and thinly sliced
1 handful chopped fresh herb, preferably a combination of basil, cilantro and mint
8 ounces cooked pork, chicken (cut or chopped into bite-sized pieces) or 8 ounces shrimp (cut or chopped into bite-sized pieces)
1/2 salted peanuts, coarsely chopped

Steps:

  • To prepare the dressing, combine the fish sauce, lime juice, 2 tablespoons of the brown sugar, 6 tablespoons of the water, the garlic and the chile. Whisk well. Taste: if it's too pungent, add more water, 1 tablespoon at a time. If you'd like more sweetness, add more brown sugar, 1/2 tablespoon at a time. Remember that you're going to be putting this dressing on unsalted vegetables and noodles: you want the dressing to have a lot of flavor, but it shouldn't knock you over. Pour into a serving bowl. (Covered and chilled, the dressing will keep for 3 days to a week.).
  • Bring a large pot of water to a boil. Add the rice noodles, and cook for 4 to 5 minutes, until tender but not mushy. Immediately drain the noodles into a colander, and rinse them well with cold water. Lay out a clean kitchen towel on the countertop, shake the colander to drain away excess water and then spread the cooked noodles on the towel to drain further.
  • Divide the noodles between two or three good-sized bowls, depending on the number of diners, and top with the vegetables, herbs and meat. Scatter the peanuts on top. Allow each person to spoon on dressing to taste. Toss well, and eat. (Alternatively, you can present this salad family-style: Toss the vegetables, herbs and noodles in a mixing bowl and then mound them on a serving platter. Arrange the meat over the noodles, and top with peanuts. Each diner can scoop their own portion from the platter and dress it as they see fit.).

500 g chicken breast fillets
150 g rice stick noodles
2 cups Chinese cabbage (wombok cabbage)
2 carrots, peeled and coarsely grated
8 green onions, ends trimmed, thinly sliced diagonally

1/4 cup coriander leaves
1 garlic clove, finely chopped finely
1 medium sized hot red chili, deseeded and finely chopped (asian style chilli)
1 tablespoon rice vinegar

2 teaspoons sweet chili sauce

Steps:

  • Place chicken in a medium saucepan and cover with cold water. Place over high heat and bring to the boil. Reduce heat to low and simmer, uncovered, for 10 minutes or until chicken is cooked through. Remove the chicken from the water and set aside to cool for about 10 minutes.
  • Coarsely shred chicken and place in a large mixing bowl.
  • Meanwhile, place noodles in a large heatproof bowl and cover with boiling water. Set aside for 5 minutes to soften. Stir with a fork to separate. Drain the noodles well.
  • Place the salad dressing ingredients in a screw top jar and shake well until combined.
  • Add the noodles, cabbage, carrot, green shallot, mint and coriander to the chicken and gently toss to combine.
  • Drizzle with dressing and gently toss to combine.
  • Divide the salad among serving plates and serve immediately.

Bring to a boil then reduce to a simmer and cook uncovered for 20 minutes or until the sauce has reduced by half or until it coats the chicken pieces.
  • While the chicken is cooking, place the rice noodles in a bowl and cover with boiling water and let sit for about 5 minutes or until they've softened. Drain and set aside.
  • To assemble the salad bowls, add a handful of noodles to the bowl and top with a scoop of curry chicken and onions. Dress with the sliced vegetables, fresh herbs and peanuts. Drizzle with the Nuac Cham dipping sauce and serve.
