VIETNAMESE SWEET & SOUR SOUP (CANH CHUA)



Vietnamese Sweet & Sour Soup (Canh Chua) image

A sweet and sour soup made with pork, catfish, and a variety of traditional Vietnamese vegetables.

Number Of Ingredients 12

1 ½ lb pork
1 yellow onion
1 ½ oz fresh tamarind
1 tsp salt
1 can pineapple (20 oz)
1 piece ginger (1 inch long)
1 ½ lb catfish (cut into 1 inch pieces)
10 oz elephant ear stem (cut into chunks)
3 tomatoes (quartered)
12 oz bean sprouts
1 tsp granulated sugar
1 oz rice paddy herb

Steps:

  • Add pork to a large soup pot. Cover with water until it just covers the pork. Bring to a boil and simmer for 10 minutes. Take out the pork and then throw away the water. This process cleans the pork. Rinse the pot and add the pork back. Cover the pork with fresh water until it just covers the meat. Bring to a boil.
  • Add the onion and simmer for 1.5 hours. Make sure to check every 30 minutes for impurities. Scoop away any you see.
  • While the soup is simmering, combine 1 cup of water and tamarind in a small saucepan. Bring to a boil and let it simmer until the tamarind dissolves.You can help speed up the process by using the back of a spoon to crush the tamarind. Pour the tamarind through a fine mesh sieve into a small bowl. Set aside.
  • After simmering the soup for 1.5 hours, add the pineapple and ginger to the soup. Simmer for another 20 minutes.
  • Put the catfish in and simmer for another 10 minutes until it is cooked through.
  • Lastly, add the vegetables and tamarind from step 3. Bring the soup to a boil and serve with a side of white rice. Make sure to taste the soup for seasoning and add more salt if it tastes bland.

4 cups fish or 4 cups vegetable stock
1/2 cup fish sauce
2 tablespoons grated palm sugar
2 garlic cloves, finely chopped
600 g firm white fish fillets, cut into 2cm pieces
2 tomatoes, skinned and cut into thin wedges
2 small red chilies, deseeded and finely sliced (or to taste)
2 tablespoons lime juice
mint (Vietnamese for preference)
fresh coriander
bean sprouts

Steps:

  • Combine fish stock, fish sauce, palm sugar, garlic and 2 cups water in a large saucepan. Heat and simmer for 5 minute.
  • Add fish and cook for 3-5 min, until the fish is just cooked through.
  • Stir in tomato, chillies and lime juice. Cook for 1-2 min, or until tomato is soft. Season to taste and garnish with Vietnamese mint, coriander and bean shoots.

  • Drain pineapple juice into a 2 cup glass measuring cup. Add enough water to measure 2 cups of liquid. Set aside.
  • Heat oil in a large saucepan over medium-high heat until hot but not smoking. Add scallions and fish and cook until fish is lightly browned and just cooked through. Transfer fish to a plate and set aside.
  • To saucepan, add 3 tablespoons fish sauce and cook until reduced by half, scraping to loosen any browned bits, about 2 minutes. Add pineapple juice mixture, 2 cups of water, pineapple chunks, and tomatoes. Bring to a boil, then reduce heat and simmer, uncovered, for 10 minutes until tomatoes are cooked through. Return fish to the pan along with any accumulated juices. Simmer another minute.
  • To serve, divide noodles or rice among four soup bowls. Ladle hot soup over noodles, add a good squeeze of lime juice, and sprinkle with cilantro and scallions. Serve with additional fish sauce to taste, if desired.
