KIELBASA AND POTATOES RECIPE
This easy kielbasa and potatoes recipe is a classic comfort food your family is sure to love.

Steps:
- Preheat skillet on med-high heat.
- Cut the kielbasa sausage into slices, and drop in the heated pan. Stir while frying.
- As kielbasa is browning, chop the onion and potatoes.
- Once the sausage has browned for approximately 6 minutes, scoop it out and put aside. Much of the fat will have rendered. Make sure to leave grease in the pan.
- Dump the chopped potatoes into the hot skillet with the kielbasa grease. Add the paprika, salt and oregano. Stir to coat in the fat and reduce the burner to medium to medium-low. Cover.
- Brown the potatoes for 13 minutes, stirring regularly.
- Add the onions and garlic. Cook for about 12 minutes. Covered, but stirring regularly.
- Once the potatoes have softened and onions are cooked add the kielbasa back into the pan mix in and all cook for 4 minutes.

Steps:
- In a large pot, boil potatoes.
- While the potatoes are cooking, cut the sausage into 1/4 inch pieces.
- When the potatoes are ALMOST done-not fork tender, drain.
- When potatoes are cool enough to handle, dice.
- In a large pot, add oil, onions and garlic.
- Saute until translucent.
- Remove from burner and add paprika. Mix well.
- Add the potatoe and kielbasa, mix well, cover and cook on low heat for 15 minutes, stirring often.

UNCLE BILL'S FRIED POTATOES AND ONIONS
I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

Steps:
- Peel and slice potatoes about 1/8 inch thick or thinner.
- Slice onion thinly.
- In a large frying pan on medium-high heat, melt butter, add olive oil.
- Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
- Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
- Serve hot with your meal.
- Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.
EASY FRIED POTATOES & ONIONS
This is so good. My grandmother was from Ireland and she used to make this dish all the time. When I make it, it always reminds me of her. I hope you enjoy it :)

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
- Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
- Return the onion to the pan, toss and season. Serve warm.
FRIED TATERS
My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

- In a large skillet, pour the olive oil and heat on med-high heat.
- Wash potatoes well and cut with skin on into thin cubes or triangles.
- Add potatoes to skillet.
- Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
- Lower your heat to medium and turn potatoes until browned on each side.
- Takes about 10-15 minutes.

FRIED KIELBASA SANDWICH

VERY EASY FRIED TATERS & KIELBASA

- Wash potatoes, peel and slice into thin slices. Put butter in a medium pan that has a cover, put on medium heat. Take kielbasa out of packages and slice them to about 1/4-inch thick. Take and chop onion in small squares.
- Put onions in the melted butter and saute. Then add the potatoes and kielbasa and add salt and pepper.
- Cook on medium heat for about 20-25 minutes or until potatoes are soft enough to be easily cut into with a fork. ENJOY!
