VERY BEST BANANA LOAF
This banana bread is, without a doubt, one of the very best I have ever made. The loaves have a very nice deep color and a beautiful crumb. The secret is not the unusual liquid ingredient, the secret is slow baking. Oil makes this recipe parve, (thanks Mirj for explaining this to me & Chia and Miraklegirl for your help too).

Steps:
- Preheat oven to 300 degrees.
- Spray two 9 X 5 inch loaf pans with non-stick cooking spray.
- Using your food processor, puree the bananas, then remove the puree to another bowl and set aside.
- No need to clean the work bowl of your food processor, just add together and blend well the sugar, oil, eggs and vanilla.
- Takes about 1 minute.
- Measure and mix together, in a separate bowl, all the dry ingredients except the nuts.
- Return banana puree to processor work bowl.
- Add dry ingredients and blend, pouring in the coca cola as mixture is blending together.
- Blend until smooth, about 1 minute.
- Blend in nuts by hand.
- Divide mixture between the two loaf pans.
- Place loaf pans on a baking sheet in the oven.
- Bake for 1 hour and 20 minutes OR until loaves test done in the middle with a toothpick.
- Let cool about 10-15 minutes then turn loaves out of pans to finish cooling.
- These loaves keep well or can be frozen.

- Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

- Preheat oven to 350 degrees F.
- Cream butter and sugar; mash bananas, beat 2 eggs and add to the bananas with vanilla and buttermilk; mix well and add to creamed butter and sugar; sift together flour, soda and salt; add to banana mixture, beat well; pour into 2 greased and floured 9x5x3-inch loaf pans; bake 45 to 50 minutes (I find this bread needs over an hour) or until bread pulls away from sides of pan; add topping.
- To prepare Topping: Melt butter in saucepan; add sugar and milk; cook until syrupy (like honey); remove from heat and add chopped pecans; pour over bread spreading to all the corners and place under broiler until bubbly and brown.
- Watch closely (this takes around 1 minute- maybe even less!).

- Cream together butter and sugar.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. - In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.

A basic banana bread recipe taken from a cookbook I pilfered from my Mom. I added the fresh cranberries which makes for a wonderful combination of sweet and tart. Adding chopped walnuts really completes this recipe. The final key is to use really, I mean really ripe bananas. I freeze them once they are almost black and thaw when ready to use. - Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds.
