7-8 ounces dried vermicelli noodles
2-3 shallots
1 julienned carrot
3 garlic cloves
1/2 cup bean sprouts
1/4 cup sliced cabbage
1/2 cup stir fry sauce
14 ounces cubed tofu

Steps:

  • Soak the noodles for 7-10 minutes in hot water.
  • Mix the tofu with cornstarch and salt.
  • Stir fry the vegetables first, then the noodles, and stir fry sauce

Number Of Ingredients 8

1 pound vermicelli
Salt
3 tablespoons extra-virgin olive oil, 3 turns of the pan
3 tablespoons butter, cut into small pieces
3 cloves garlic, crushed away from skins
6 scallions, whites and greens, cut into 3-inch pieces then shredded lengthwise
Pepper
20 leaves fresh basil (1 cup), shredded into a chiffonade

Steps:

  • Cook vermicelli in salted water to al dente; drain. Heat extra-virgin olive oil and butter with garlic over medium heat and cook garlic until it begins to soften, about 4 to 5 minutes. Remove garlic and raise heat. Fry the scallions in the seasoned oil for 3 to 4 minutes. Add well-drained pasta to the pan and season with salt and pepper. Toss the pasta liberally with the scallions and seasoned oil. Place a plate smaller than the pan down over the vermicelli and weight it with a few cans or a heavy skillet. Let the vermicelli brown and crisp up a bit. Remove the skillet and plate and invert onto a serving platter. Garnish with basil.

This is a buttery, hearty, warming soup. Has leeks, red onions, scallions, lots of garlic, and dried Porcini mushrooms. You can top it with cheese if you like.

3 leeks, sliced, white part only, rinsed very good
3 large red onions, sliced
6 -10 garlic cloves, sliced
4 tablespoons butter
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sugar
1 cup dried porcini mushrooms, soaked and rough chopped (reserve liquid for soup)
8 cups water
2 tablespoons beef base or 2 tablespoons vegetable stock base
1 teaspoon dried parsley
scallion, thinly sliced, for garnish

Steps:

  • Melt butter and olive oil in a large pot.
  • Sauté leeks, onions, salt, pepper, sugar, 8-10 minutes adding garlic and cook 3 more minutes.
  • Add strained chopped mushrooms, water, beef base, strained liquid from mushrooms and parsley.
  • Bring to a boil lower heat to a simmer and cook for 20 more minutes.
  • If desired, toast bread in over and top with your favorite cheese and place on top of soup and serve topped with a garnish of scallions and pepper.
  • For vegetarian use only the vegetable base.

200g rice vermicelli noodles
2 carrots, finely shredded
½ small bunch of cucumber, peeled into ribbons using a vegetable peeler
150g sugar snap peas, halved at an angle
½ small bunch of coriander, finely chopped
2 tbsp unsalted peanuts, toasted and roughly chopped
3 tbsp olive oil
1 tbsp rice vinegar
½ tsp honey
thumb-sized piece of ginger, peeled and grated
2 small garlic cloves, grated
1 red chilli, finely sliced

Steps:

  • Put the noodles in a heatproof bowl and cover with boiled water from the kettle. Leave for 3-5 mins to soften, then drain and plunge the noodles into a bowl of cold water to prevent them drying out. Set aside.
  • Whisk all the dressing ingredients with 2 tsp cold water in a small bowl and season lightly. Put the carrots, cucumber ribbons, sugar snap peas and half the coriander in a bowl, then toss with half the dressing.
  • Drain the noodles well, then toss with the vegetables. Divide between two plates, then top with the rest of the coriander and the peanuts. Serve with the remaining dressing on the side for drizzling over.
