Time 20m

Number Of Ingredients 25

1.5 lb chicken thigh fillets
1 tbsp garlic (chopped)
1/2 sliced of medium-size onion/shallot
2 tbsp brown sugar
1 stalk of lemongrass (trimmed and chopped)
1/4 tsp black pepper
1 1/2 tsp dark soy sauce
1 1/2 tbsp fish sauce
1 tbsp vegetable oil
1/2 cup fish sauce
1/4 cup rice vinegar
5 tbsp water
3 tbsp brown sugar
1 small garlic clove (finely chopped)
1 Thai red chili (finely chopped)
1/4 cup fresh lime juice
7 oz dried vermicelli noodles
2 cucumber (julienned)
2 carrots (julienned)
5 cups iceberg lettuce (finely sliced)
3 cups bean sprouts
A handful of mint leaves
A handful of cilantro/coriander
Sliced red chili (optional)
2 Lime wedges

Steps:

  • In a blender, combine sugar, garlic, shallots, and lemongrass and process to a fine mixture. Then, add the pepper, soy sauce, fish sauce, and oil. Blend to combine well to get that smooth texture.
  • Place the chicken in a ziplock bag, pour the marinade mixture. Toss and turn to coat the chicken well. Seal the ziplock bag and marinate for about an hour or refrigerate up to 24 hours (recommended).
  • Once ready to use, let the marinated chicken sit at room temperature or 30 minutes to remove some chill before grilling.
  • Preheat a grill to medium-high. Grill the chicken for 6-8 minutes turning them on both sides or until cooked.
  • Nick with a knife to test the doneness and transfer to a plate once ready.
  • In a bowl, combine all the ingredients and stir well to dissolve the sugar. You can adjust the spiciness, the sweetness and lime according to your taste. Set aside for 20 minutes to let the ingredients mend together.
  • Soak the vermicelli noodles in hot water (or check the package instructions). But I cooked the vermicelli for 7 minutes as per package instructions. Drain and rinse in cold water to stop the noodles from sticking together.
  • Arrange the noodles in a bowl, top with the toppings and the sliced chicken. Drizzle with the Nuoc Cham sauce (2-3 tbsp or more according to your taste) and serve with lime wedges.

VIETNAMESE NOODLES WITH LEMONGRASS CHICKEN

Vietnamese Noodles with Lemongrass Chicken image

Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

Time 30m

Number Of Ingredients 25

600 - 800g / 1.2 - 1.6lb chicken thigh fillets (, skinless and boneless or breast (or pork, beef or any seafood))
1 stalk lemongrass (, white part only, bruised them sliced into pieces easy to pick out later (Note 1))
2 garlic cloves (, finely chopped or minced)
2 tbsp lime juice
2 tbsp fish sauce ((Note 2))
1 tbsp soy sauce ((all purpose or light, NOT dark soy))
2 tbsp brown sugar
1 tbsp vegetable oil
1/4 cup fish sauce ((Note 3))
4 tbsp rice vinegar
2 tbsp white sugar
1/2 cup water
2 garlic cloves (, finely chopped)
1 red birds eye chilli (, finely chopped (Note 4))
3 tbsp lime juice
1/2 tbsp oil
200 g / 7 oz vermicelli noodles (, dried)
2 carrots (, julienned)
2 cucumbers (, julienned (optional: remove seeds))
5 cups iceberg lettuce (, finely sliced)
3 cups bean sprouts
Handful of mint leaves
Handful of cilantro/coriander
Sliced red chilli ((for garnish - optional))
Lime wedges ((to serve - optional but recommended))

Steps:

  • Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)
  • Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).
  • Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.
  • Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.
  • Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.
  • Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.
  • Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.
  • DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

Yield Makes 4 servings

Number Of Ingredients 13

1 1/2 pound skin-on, bone-in chicken breasts (about 2)
Kosher salt
1 large shallot, thinly sliced crosswise, separated into rings
1/2 cup vegetable oil
8 ounces rice vermicelli noodles
1 Fresno chile or red jalapeño, with seeds, finely chopped
1 small garlic clove, finely grated
1/3 cup fresh lime juice
1/4 cup fish sauce (such as nam pla or nuoc nam)
2 tablespoons light brown sugar
4 baby white turnips, trimmed, thinly sliced into rounds
4 radishes, trimmed, thinly sliced into rounds
1 1/2 cups fresh Thai or sweet basil leaves, divided

Steps:

  • Prepare grill for medium heat. Season chicken with salt and grill, turning often and moving away from direct heat if needed, until cooked through and an instant-read thermometer inserted into the center registers 165°, 20-25 minutes. Transfer chicken to a plate. Let cool slightly, then shred meat, discarding skin and bones. Set aside.
  • Cook shallot in oil in a small saucepan over medium heat, stirring occasionally, until shallot is golden brown and crisp, 8-10 minutes (reserve shallot oil and use to make vinaigrettes). Using a slotted spoon, transfer shallot rings to a paper towel-lined plate and season with salt. Set aside.
  • Meanwhile, place noodles in a large bowl and add boiling water to cover. Let noodles soak until tender but not mushy, 5-10 minutes; drain. Rinse under cold water and drain well.
  • Mix chile, garlic, lime juice, fish sauce, and brown sugar in a large bowl to combine. Add noodles, turnips, radishes, half of basil, and reserved shredded chicken, and toss to combine. Top with reserved fried shallot rings and remaining basil.
  • DO AHEAD: Shallot rings can be fried 3 days in advance. Store airtight at room temperature. Dressing can be made 2 days ahead.

VERMICELLI WITH CHICKEN SKEWERS AND NUOC CHAM

Vermicelli With Chicken Skewers and Nuoc Cham image

Food and Wine: "In this version of a Vietnamese dish, individual piles of cucumber, fresh herbs, and grilled chicken are arranged in a platter of vermicelli and bean sprouts. Tangy nuoc cham sauce is poured over all. As each diner takes a portion, the components intermingle." "The high acidity, citrus, and mineral flavors, and slight sweetness of a German riesling are the perfect foils for the sweet and savory taste of this dish. Try a you kabinett from the Mosel region."

Time 25m

Yield 4 serving(s)

Number Of Ingredients 15

5 tablespoons asian fish sauce (nuoc mam or nam pla, available at Asian markets and many supermarkets)
2 tablespoons sugar
3 garlic cloves, minced
1 tablespoon cooking oil
1 lb boneless skinless chicken breast, cut lengthwise into about 12 strips
1/2 teaspoon dried red pepper flakes
1 teaspoon wine vinegar
2 tablespoons lime juice
1 teaspoon lime juice
2 tablespoons water
1/2 lb vermicelli
1 cup bean sprouts
1 cucumber, peeled, halved, lengthwise, seeded, and cut into thin slices
2/3 cup basil (or any combination of the three) or 2/3 cup cilantro (or any combination of the three)
1/3 cup chopped peanuts

Steps:

  • Heat the broiler or light the grill. In a medium bowl, combine 1 tablespoon of the fish sauce, 1 tablespoon of the sugar, 2 cloves of garlic, and the oil. Add the chicken, toss, then thread each strip onto a wooden skewer. Broil or grill the chicken until just done, about 2 minutes per side.
  • In a small bowl, combine the remaining fish juice, sugar, and garlic with the red pepper flakes, vinegar, lime juice, and water. Set this (nuoc cham!) aside.
  • In a pot of boiling, salted water, cook the vermicelli until just done, about 9 minutes. Add the bean sprouts during the last minute of cooking. Drain, rinse with cold water, and drain thoroughly.
  • Put the pasta and bean sprouts onto a platter and top with the cucumber, herbs, and chicken skewers. Pour the nuoc cham over all and sprinkle with peanuts.

CHICKEN AND HERB SALAD WITH NUOC CHAM

Chicken and Herb Salad With Nuoc Cham image

Nuoc cham, a Vietnamese sauce bright with lime juice and chile, is tossed into this simple, satisfying salad to give it a salty-sweet finish. Thinly sliced bell pepper and shaved cabbage provide crunch, while meat pulled from a store-bought rotisserie chicken - or any leftover chicken - soaks up the dressing. Serve this by itself, or alongside steamed rice or room-temperature cooked rice vermicelli.

BRAISED CHICKEN WITH OLIVES AND CITRUS

Braised Chicken With Olives and Citrus image

In Israel, chicken with olives is a simple midweek dish, but this braised chicken with olives and citrus, while still simple, is a delicious step up.

Provided by Einat Admony

Yield Serves 4 to 6

Number Of Ingredients 18

4 chicken legs or 8 thighs or 8 large drumsticks
½ cup pitted olives (cracked green, Moroccan oil-cured, Manzanilla, or Kalamata olives)
1 medium yellow onion, halved and sliced
4 wedges preserved lemon, store-bought or homemade, pulp and seeds scraped out
2 dried Persian limes, cracked
1 lemon, thinly sliced and seeded
3 Tbsp. extra-virgin olive oil
1½ tsp. honey
1 Tbsp. kosher salt
1 cup coarsely chopped fresh cilantro, plus a handful of whole leaves for serving (optional)
2 large garlic cloves, smashed
½ tsp. ground turmeric
1½ tsp. ground cumin
1 tsp. sweet paprika
Pinch of chile flakes
1 cup homemade or low-sodium store-bought chicken stock
1 cup fresh orange juice
Cooked couscous, for serving

Steps:

  • Preheat the oven to 400°F.
  • Put the chicken, olives, onion, preserved lemon, dried limes, lemon slices, oil, honey, salt, cilantro, garlic, turmeric, cumin, paprika, and chile flakes in a large bowl. Using your hands, mix everything thoroughly, making sure the chicken pieces are well coated with the spices and herbs.
  • Arrange the chicken pieces skin-side down in a deep baking dish in a single snug layer. Arrange the rest of the mixture over the chicken. Whisk the stock with the orange juice in a measuring cup and pour over the chicken.
  • Cover with aluminum foil and bake for 40 minutes. Remove the foil and, using tongs or a couple of spoons, turn the chicken pieces skin-side up. Bake, uncovered, for another 20 to 25 minutes, until the chicken is cooked through and the skin is nicely browned and crackly. To check for doneness, make a small incision in the thickest part of a chicken thigh and make sure the juices run clear. If they are still pink, baste the skin with the pan juices to prevent the chicken from drying out and roast for another few minutes.
  • Sprinkle with the cilantro leaves (if using) and serve over couscous.
