Can substitute any red meat. The directions call for baking in oven but I like to simmer most of my recipes on top of the stove for 2-3 hours. It is much easy to taste the meat to see if it's tender. I also like to add broccoli to this sometimes.

2 lbs venison sirloin or 2 lbs round steaks, 1 inch thick
1/4 cup bacon fat or 1/4 cup other fat
1 garlic clove, crushed
1/4 cup onion, minced
2 cups water
1 bay leaf
1 cup tart fruit juice, cranberry or 1 cup apple
8 peppercorns
1 teaspoon salt
1 tablespoon butter
4 tablespoons flour
3/4 cup sour cream

Steps:

  • Cut venison into 2 inch pieces.
  • Melt fat in heavy skillet. Add meat and garlic and saute until brown on all sides.
  • Arrange meat in 2 quart casserole.
  • Put onions in skillet and cook 2 minutes in remaining fat.
  • Add to onions the water, juices, bay leaf, peppercorns and salt.
  • Pour this mixture over venison in casserole.
  • Bake in slow oven 325 degrees for 1-2 hours or until meat is tender.
  • Melt butter in fry pan, stir in flour. Stir constantly until smooth.
  • Add sour cream and cook at low temperature for five minutes.
  • Pour over meat in casserole.
  • Serve immediately with buttered noodles or plain noodles.

If you think your deer, elk or moose steak is a little tuff, try this recipe. I got this recipe from my mother-in-law, Beverly. She is a Wonderful cook.

Number Of Ingredients 10

4 or 5 large venison steaks
1/2 c flour
4 Tbsp butter crisco
salt & pepper to taste
garlic powder to taste
1 large onion, chopped
2 can(s) 14 1/2 oz - diced tomatoes (plain, stewed, etc)
1 can(s) tomato sauce
1 Tbsp worcestershire sauce
a dab of butter as needed

Steps:

  • 1. Prep your steaks. No fat or silver skin. (I enclosed a photo of small steaks for visual) Use an electric skillet for ease of use. Turn on at 350 degrees. Add butter crisco. Just enough to cover bottom of pan.
  • 2. Flour both sides of steaks and place in skillet. Add your seasonings of salt, pepper & garlic powder to taste and brown one side.
  • 3. Turn over steaks and add chopped onion. Brown the other side. If you need more grease, add butter. Add tomatos, tomato sauce & worcestershire sauce. Stir and bring to a boil. Add more seasoning if needed. After it starts boiling, turn down skillet to simmer (200 degrees)and simmer for 2 hours. (More or less depending on the size steak. Cover. Add water as needed. Stir once in a while. Check to make sure that the meat is not sticking to bottom of pan. Test for tenderness. Meat should cut very easily.
  • 4. Serve over noodles or potatoes. I like a spoonful of sourcream on my swiss steak.

1-1/2 teaspoons each salt, pepper, paprika and ground mustard
3 pounds beef top round steak, cut into serving-size pieces
3 tablespoons canola oil
3 tablespoons butter
1-1/2 cups water
1-1/2 cups sour cream
1 cup finely chopped onion
2 garlic cloves, minced
1/3 cup soy sauce
1/4 to 1/3 cup packed brown sugar
Additional paprika, optional

Steps:

  • In a shallow bowl, combine 1/3 cup flour, salt, pepper, paprika and ground mustard; dredge the steak. , In a large skillet, heat oil and butter. Cook steak on both sides until browned. Carefully add water; cover and simmer for 30 minutes., In a bowl, combine the sour cream, onion, garlic, soy sauce, brown sugar and remaining flour; stir until smooth. Transfer steaks to a greased 2-1/2-qt. baking dish; add sour cream mixture. , Cover and bake at 325° for 1-1/2 hours or until tender. Sprinkle with paprika if desired.

DREW'S VENISON STEAKS AND GRAVY

I've been making this comfort food forever, and it's DH's favorite. I especially like the creamy gravy over rice or mashed potatoes. If you want a stroganoff-like gravy, stir in 8 ounces of sour cream at the last minute, and serve over wide noodles!

1 lb cubed venison
1 package dry lipton onion and mushroom soup mix
2 teaspoons beef bouillon
1/2-1 cup water
1/2 cup white wine or 1/2 cup water
2 large onions, thinly sliced or diced
salt and pepper, to taste
1 (4 ounce) can sliced mushrooms, drained or 2 ounces dried mushrooms (optional)
2 tablespoons cornstarch
1/4 cup water

Steps:

  • Spray cast iron skillet with non-stick cooking spray and heat on high.
  • Cut cubed venison into serving-size pieces.
  • Brown venison on each side, about 1 minute.
  • In bowl, add 1/2 cup water, wine, bouillon and soup mix.
  • Stir to mix well.
  • Add soup mixture to skillet, along with onions (and mushrooms if you decide to use them).
  • Cover skillet and lower heat to simmer.
  • Cook about 30-45 minutes (gravy will thicken).
  • Add a little more water if gravy gets too thick before meat is fork-tender.
  • GRAVY: When meat is very tender, mix cornstarch with water to make a slurry.
  • Pour slurry into hot liquids in skillet, stirring until gravy returns to a boil and is thickened.
  • Serve steaks with gravy over steamed rice or mashed potatoes.
  • FOR A STROGANOFF: Stir in 8 ounces sour cream, heat until warm but not boiling.
  • Serve over wide noodles.
  • Variations: Other seasonings you could add: 1/4 tsp thyme, 1/2 tsp basil, 1/2 tsp oregano, OR 1/2 tsp Italian seasoning.
  • If you like hot/spicy foods, add 1/4-1/2 tsp crushed red peppers.

1 dash cayenne

2 teaspoons seasoning salt (can use white salt)

2 tablespoons butter

Steps:

  • Set oven to 300 degrees.
  • Cut the steaks into serving-size pieces.
  • Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
  • In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
  • Heat oil and butter in a large oven-proof skillet over medium heat.
  • Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
  • Add in onions and garlic; saute for about 3 minutes, scraping up any browned bits on the bottom of the skillet with a wooden spoon.
  • In a bowl mix together sour cream, water, soy sauce and brown sugar, then add to the skillet; mix to combine with the onion/garlic mixture.
  • Return the steaks back to the skillet.
  • Sprinkle lightly with Parmesan cheese.

sunflower oil , for frying
2 large potatoes , cut into skinny chips
2 venison steaks (about 175g/6oz each)
2 tbsp butter
1 small onion , chopped
1 garlic clove , chopped
250g chestnut mushroom , sliced
1 tsp smoked paprika
1 tsp tomato purée
1 tsp plain flour
2 tbsp brandy (optional)
200ml beef stock
4 tbsp soured cream
small handful parsley , chopped

Steps:

  • To make the sauce, heat 1 tbsp of the butter in a large frying pan, tip in the onion and cook over a low heat for about 10 mins until soft. Add the garlic and mushrooms, increase the heat and fry until all the liquid has evaporated.
  • Meanwhile, heat enough oil to come 4-5in up the sides of a large saucepan. When hot, add the chips and cook, in batches, for 3-5 mins until golden. Remove and drain on kitchen paper, but keep the oil hot.
  • Add the paprika, tomato purée and flour to the mushrooms, cook for 1 min then add the brandy, if using, and leave to bubble away for a further 1-2 mins. Be careful as the brandy may set alight. Pour in the beef stock and set over a high heat to reduce by half. Stir in the soured cream and parsley, then season. Keep the sauce warm while you cook the venison.
  • Heat the remaining butter in a frying pan over a medium-high heat. Season the venison and cook for 3 mins on each side for medium-rare, depending on the thickness of the meat. Remove from the pan and leave to rest, loosely covered with foil.
  • Tip the fries back into the hot oil and cook for a further 2-3 mins to crisp up. Drain and season with salt. Serve the steaks with the sauce poured over and a pile of fries on the side.
