MARINATED VENISON STEAKS

Marinated Venison Steaks image

"Thanksgiving here is about hunting rather than football," said Errol Rice of the Montana Stockgrowers Association. The season for hunting big game comes to a close in the last, best place on the Thanksgiving weekend, and those who have not yet bagged a buck are known, said Dennis Konopatzke, the proprietor of Great Northern Brewing Company in Whitefish, to rush their holiday dinners in order to get out to the woods to hunt. You'll find huckleberries on Thanksgiving tables in Montana, Mr. Konopatzke added, or the Norwegian cured fish known as lutefisk, or pork pies and stuffed pasties, all nods to the state's history of settlers from afar. But game is the game. What follows is a recipe honed over the years by the members of the Rocky Mountain Elk Foundation for a marinade that works on wild venison perfectly and most other proteins as well. Broil some steaks and pair the result with traditional Thanksgiving side dishes.

EMILY'S MARINATED VENISON STEAKS

Emily's Marinated Venison Steaks image

I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

GRILLED VENISON STEAKS

Grilled Venison Steaks image

If you're a big game hunter, you should know how to grill a venison steak. First off, it's important to know that wild red meat can cook faster than beef because it's leaner. In order to get consistently juicy and tender steaks, you should try using a meat thermometer until you develop a knack for...

Yield 4

Number Of Ingredients 35

Salt and Pepper Seasoning
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly ground black pepper
Vegetable oil for brushing
Cajun Rub
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly cracked black pepper
1 recipe Cajun Dry Rub (see below)
Vegetable oil for brushing
Mix in a small bowl
5 tbsp. paprika
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. kosher salt
2 tbsp. freshly ground black pepper
2 tsp. cayenne pepper
1 tsp. red pepper flakes
Spicy Orange Marinade
4 sirloin steaks, cut 3/4-1 inch thick
1 recipe Spicy Orange Steak Marinade (see below)
Vegetable oil for brushing
Kosher salt
Freshly ground black pepper
Combine in a Blender
1 tsp. orange zest
1/2 cup orange juice
4 tbsp. olive oil
6 cloves garlic
2 tbsp. red pepper flakes
2 tbsp. fresh oregano leaves (or 1 tsp dried oregano)
2 tsp. kosher salt
2 tsp. freshly ground black pepper
Blend until smooth

Steps:

  • Salt and Pepper Preparation
  • Season the steaks liberally on both sides with salt and pepper.
  • Cajun Rub Preparation
  • Season the steaks with salt and pepper. Rub the steaks liberally with the Cajun Dry Rub. You can let them sit in the fridge up to an hour like this or cook them right away.
  • Marinade Preparation
  • Place the steaks in a baking dish or a resealable bag. Add the marinade. Marinate in the refrigerator for at least 1 hour and up to 12 hours. Remove the steaks from the marinade, letting the excess drip off. Season the steaks lightly with salt and pepper.
  • To Grill
  • With a basting brush, brush both sides of the steaks lightly with the vegetable oil and then place the steaks on the grill.
  • As with all grilling, let the grill do the work. Don't move the steaks at all until they release easily from the grill, about 4 minutes. Flip the steaks and grill on the second side for 3-4 minutes.
  • Use an instant-read thermometer to tell you when they're done: insert the thermometer horizontally into the steaks from the shorter side.
  • Remove the steaks from the grill at 125° for medium rare and 130° for medium.
  • Set aside to rest for 10 minutes before serving.

VENISON STEAK MARINADE

Venison Steak Marinade image

This is the only steak my family will eat. They do not even like NY strip any more. We have our meat processor cut our venison steaks to about 1 inch thick, then I marinate and grill to medium rare. Better than beef and better for you too! Our traditional family Christmas Eve dinner menu is always venison steak and shrimp scampi!

VENISON MARINADE

Venison Marinade image

It takes only a few extra steps to make a venison marinade that will enhance your hard-earned venison for the table. For any cut of meat made for the oven, grill, or skillet, the flavor is everything. The same is true for game meat!

Provided by meredith

Categories     marinade

Number Of Ingredients 9

1.5 - 2 lbs. venison back strap
3 Tablespoons extra virgin olive oil
2 Tablespoons Worcestershire sauce
1 Tablespoon soy sauce
1 teaspoon liquid smoke
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon cracked black pepper

Steps:

  • Prep: Cut your backstop, loin, or favorite cut of venison into 1 inch thick steaks if not already done. Using a sharp knife, trim all the silverskin from the meat.
  • Create Marinade: Combine all marinade ingredients in a bowl and stir well until the salt dissolves. Place your venison into a gallon size freezer bag and pour over the marinade. Remove as much air from the bag as you can. Allow the steaks to marinate in the refrigerator for a minimum of 2 hours, but no more than 6.
  • Cook: Cook the steaks on a pellet smoker, grill, or cast-iron skillet with a preheated temperature of 350˚F. If making venison steaks, they only need 4-5 minutes per side.Pellet Smoker: Preheat to 350˚F. Each steak only requires 4-5 minutes of cooking per side. Since venison does not have a high natural fat content, you'll ruin your steak by overcooking it. Regular Grill: Grill until you reach an internal temperature of 135˚ to 140˚ F to reach a medium-rare to medium steak.Cast Iron Skillet: Look for a key internal temperature of 135-140˚F to reach a medium-rare to medium steak. When you reach a key internal temperature of 135-140 degrees (medium-rare to medium), pull them off the heat immediately and allow them to rest under foil for 7-10 minutes before serving.

DEER STEAK MARINADE & HOW TO GRILL DEER MEAT

Deer Steak Marinade & How to Grill Deer Meat image

This deer steak marinade is delicious for grilling or frying on the stovetop. I'm also sharing how to grill deer steaks, one of our favorites on how to cook deer steak.

Provided by Jessica Burgess

Categories     Main Course

Number Of Ingredients 9

2 1/2 inch-thick deer steaks
1 cup soy sauce
3/4 cup worcestershire sauce (We use Lea & Perrins)
1/3 cup brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
5 dashes hot sauce (or per taste)
salt and pepper to taste (Remember soy sauce has a LOT of salt already)
2 Tablespoons melted butter

Steps:

  • In a bowl, mix together soy sauce, Worcheshire sauce, brown sugar, garlic powder, onion powder, hot sauce, and salt and pepper.
  • Place steaks in gallon size ziptop bag and pour marinade over steaks, pushing out air, and sealing the bag.
  • Let marinate in the refrigerator for at least one hour, preferably overnight, moving the bag around often to make sure all steaks sit in marinade at some point.
  • When ready to cook, remove steaks from the refrigerator and bring to room temperature, or as close as possible. (Do not microwave.)
  • Preheat grill to high heat and place steaks over the hot part of the grill, and grill on each side for 3-4 minutes.
  • Pull steaks off of the grill, coat with melted butter and let rest for 3-4 minutes.
  • Steaks will be a "medium" steak at this cook time. If you prefer steaks that are well done, cook on the grill an additional minute until steak reaches desired "doneness".

OUTRAGEOUSLY WONDERFUL MARINATED VENISON STEAKS

Outrageously Wonderful Marinated Venison Steaks image

This recipe is from Taste of Home and it's the most wonderful marinade for venison that I've ever tried! It's great with venison steaks and tenderloins, but I'm sure it would be fabulous with beef also. I get better results if I grill my steaks rather than broil, but that's just me. It's the only way I've been able to keep venison steaks tender and juicy - you won't be disappointed either! I often double the marinade recipe so that I have plenty for marinating, basting and for serving. I have not included the marinating time in the prep time, but it's best if marinated overnight.

Provided by Jenny Rowan

Categories     Deer

Time 18m

Yield 6 serving(s)

Number Of Ingredients 9

6 (4 ounce) boneless venison steak or 2 venison tenderloins (or any other red meat)
1/2 cup white vinegar
1/2 cup ketchup
1/4 cup vegetable oil
1/4 cup Worcestershire sauce
4 cloves garlic, minced
1 1/2 teaspoons ground mustard
1/2 teaspoon salt (Kosher is best)
1/2 teaspoon pepper

Steps:

  • Place venison in a large Ziploc bag.
  • In a bowl, combine all of the remaining ingredients.
  • Pour half over the venison; seal bag and turn to coat.
  • Refrigerate overnight.
  • Refrigerate remaining marinade.
  • Drain and discard marinade from the steaks.
  • Broil steaks 3-4 inches from the heat for 4 minutes.
  • Turn; baste with reserved marinade.
  • Broil 4 minutes longer.
  • Alternatively, grill steaks on a gas grill over high heat for 3 1/2 to 4 minutes a side, basting often.
  • I prefer to grill venison to medium-rare at most so that it remains tender.
  • Serve steaks with more of the reserved marinade.
  • YUMMY!

MARINATED VENISON BACKSTRAP

Marinated Venison Backstrap image

Tender, juicy, flavorful venison backstrap that is marinated then pan seared or grilled until nicely browned on the outside and lightly pink on the inside. Super easy to make, melt in your mouth venison without the gamey taste!

Provided by Rachel Riesgraf

Categories     Dinner

Time 4h25m

Number Of Ingredients 9

1 pound venison backstrap
1/2 tablespoon olive oil
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons lemon juice
2 tablespoon balsamic vinegar ((or apple cider vinegar))
1 tablespoon Worcestershire
2 garlic cloves, minced
1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a shallow dish or a ziploc bag. Add the backstrap and place in the refrigerator. Marinate for at least 4 hours or up to 24 hours, flipping halfway through.
  • 30 minutes before you're ready to cook, remove the venison from the marinade, rinse off and pat dry. Set on a clean plate and allow to come to room temperature.
  • Preheat the oven to 375 degrees F.
  • Heat an oven-safe cast iron skillet or staineless steel skillet with olive oil over medium-high heat. Once hot, add the backstrap and sear on all sides until a nice brown crust forms, including the ends by using tongs to stand the backstrap in the pan.
  • If using an oven-safe skillet, transfer the skillet with the backstrap to the preheated oven. If your skillet isn't oven-safe, transfer the backstrap to an oven-safe dish with a little olive oil. Bake for 12-15 minutes, or until a meat thermometer reads 130-135 degrees F. for medium-rare. Keep in mind that the internal temperature will continue to rise once removed from the heat. Transfer the backstrap to a plate and loosely tent with tinfoil for 5-10 minutes before slicing. While resting, the temperature will rise another 5-10 degrees bringing it closer to medium doneness.
  • Preheat the grill to medium-high heat.
  • Place the backstrap on the hot grill and cook for 6-8 minutes, then flip and continue to cook another 6-8 minutes.
  • The backstrap is done when a meat thermometer reads 130-135 degrees F. for medium-rare. Keep in mind that the internal temperature will continue to rise once removed from the heat. Transfer the backstrap to a plate and loosely tent with tinfoil for 5-10 minutes before slicing. While resting, the temperature will rise another 5-10 degrees bringing it closer to medium doneness.

  • Place garlic cloves in a mortar and pestle with the kosher salt and pepper. Mash into a pulp to release the oils. If you don’t have a mortar and pestle, you can use the back of a thick wooden spoon, the side of a chef knife, or a meat mallet.
  • Add the lemon juice and herbs then whisk in the olive oil until emulsified. This makes enough marinade to cover about 1 pound of steaks.
  • Place the venison in a resealable bag or container and pour in the marinade. Mix to coat evenly and let it rest in the refrigerator. Marinate for at least 1 hour and up to 8. Don’t be tempted to over-do this, acids can turn the outside layer of meat mushy and ruin the texture.
  • Take the meat out of the fridge, wipe off any excess marinade and bring to room temperature before cooking. Preheat a grill, light charcoal or burn a hot fire down to coals.
