This is a good way to use up leftover venison. I usually don't have leftovers so I have to make fresh when making this. I ground my venison with a hand grinder much like my grandmother did. I hope you enjoy an old family favorite of ours.

2 tablespoons bacon drippings
1 large onion, chopped
3 cups ground venison, browned
2 medium potatoes, cut in 16 pcs
1 tablespoon flour
1 garlic clove, minced
3 cups beef broth
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon thyme
1/2 tablespoon chili powder

Steps:

  • Brown onion and potatoes in bacon fat. Add flour and make a roux:, add venison, broth and spices. Let simmer until tender.

CAMPFIRE GIRLS' TEXAS HASH

My mom was a Campfire Girl from Bluebirds until adulthood, when she was a summer camp counselor for several years. On some of those Bluebird overnights, they used to make this simple version of "Texas Hash". Transposed to the kitchen, it became a family favorite with her kids, and now I make it for my family. It's easy, cheap, fast, and satisfying. I add garlic and use no-salt-added tomatoes because I'm on a reduced-sodium diet due to pregnancy, and it turns out okay for us, but you may do as you wish, of course. This recipe would, of course, adapt easily to be a camp-out recipe.

1/2-1 lb lean ground beef
1 medium onion, chopped
2 -3 cloves garlic, minced (optional)
1 cup long-grain white rice, uncooked
1 (14 1/2 ounce) can peeled diced tomatoes
1 -2 tablespoon dark chili powder
water

Steps:

  • In a deep-sided saute pan, dutch oven, or other deep pan with tight-fitting lid, brown beef over medium-high heat.
  • (If not using lean ground beef, you will need to drain off all but a few Tbsp. of the fat at this point.) Add onion and garlic.
  • Saute until onion begins to get transparent.
  • Add rice.
  • Stir in and saute a little more, just until rice starts to get opaque.
  • Reduce heat to low.
  • Add tomatoes, with their liquid.
  • Stir well.
  • Stir in chili powder.
  • Add half the tomato can or so of water, and stir.
  • Cover and cook for 15 minutes.
  • Remove lid and stir again.
  • Add 1/3 to 1/2 can more water, as necessary.
  • Make sure you stir thoroughly so that none burns to the sides.
  • Cook another 10 to 15 minutes, or until rice is done and all water is absorbed.

1 lb ground venison
3 tablespoons extra virgin olive oil
3 large onions
1 lb cooked tomatoes, canned ok
2 jalapeno peppers, chopped
1 teaspoon chili powder
2 medium potatoes, thinly sliced
salt, to taste
pepper, to taste
1 cup grated cheese

Steps:

  • Preheat oven to 350.
  • Brown meat in EVOO.
  • Add onions until soft.
  • Stir in peppers, chili powder, salt and pepper to taste.
  • Cook about 5 minute.
  • In an oven dish, spread mixture and then layer potato over top.
  • Cover with foil.
  • Bake 45 minute.
  • Remove foil and top with grated cheese.
  • Bake 15 min more.

This makes an easy weekend breakfast or a quick supper. Came up with it on my own after trying corned beef hash for the first time in a pancake house in Georgia. We prefer it with the added spice but it is optional n'est ce pas.

3 tablespoons vegetable oil
1 medium onion, diced (Vidalia when available)
1 green bell pepper, diced
1 red bell pepper, diced
1 (340 g) can corned beef, cubed
1 (750 g) package frozen hash browns
1 tablespoon cajun seasoning (optional) or 1 teaspoon chili powder (optional)

Steps:

  • In electric frying pan or large skillet saute onions and peppers until onions soften.
  • Add corned beef; continue to cook until cubes fall apart.
  • Add frozen hash browns.
  • Add seasoning if desired.
  • Cook, stirring often until potatoes are done and start to brown.

1 lb elbow macaroni
1 tablespoon olive oil
1 medium onion, finely chopped
1/2 green bell pepper, finely chopped
1 teaspoon minced garlic
1/4 teaspoon crushed red pepper flakes
1 1/2 lbs ground beef or 1 1/2 lbs venison
salt and pepper
1 (26 ounce) jar tomato sauce

Steps:

  • In a large pot, heat water to a boil.
  • While waiting for the water to boil, in a medium to large sized skillet, heat olive oil on medium high heat; add onion, green pepper, minced garlic, and crushed red pepper and cook until onion is transparent.
  • Add ground beef, salt and pepper, and cook mixture on medium high heat until no pink is showing in the meat; drain.
  • Return the mixture to the skillet, add tomato sauce, and simmer.
  • Cook macaroni according to directions on box then drain and rinse.
  • Add macaroni to ground beef mixture and serve.

  • Build a small fire or preheat charcoal. Burn the wood down until it blackens and begins to turn to white coals. Use a grill grate or metal stand to hold the cast iron skillet about 6 inches above the coals. You want the fire to be hot, but not so hot that it scorches the bottom of the pan.
  • Preheat the cast iron for several minutes. Once hot, add a drizzle of oil to coat the pan. Brown the venison sausage in the cast iron. Add all the veggies, stirring every minute or so to make sure nothing burns. Once the veggies and rice are soft, use a spoon or spatula and make small wells into the hash. Crack each egg into the small well.
  • Place a sheet of foil over the top of the cast iron. If you have the tools, pick up a hot lump of coal and place on top of the foil. This adds heat coming from the top to cook more evenly and faster.
  • Check after 10 minutes or so. You want the egg whites to be set, and yolks to still be a little jammy when pricked with a fork. Serve with bread or tortillas and salsa.
