1 medium Spanish onion, chopped
2 stalks celery (with leaves), chopped
3 medium carrots, chopped
1/2 cup plus 1 tablespoon flour
7 cups chicken broth, homemade or low-sodium canned
3 sprigs parsley
3 sprigs fresh thyme
1 bay leaf
2 3/4 cups cooked, diced chicken
1/2 cup heavy cream
2 1/2 teaspoons dry sherry
1 tablespoon kosher salt
Freshly ground black pepper to taste
2 tablespoons chopped flat-leaf parsley

Steps:

  • Melt the butter in a large soup pot over medium heat. Add the onion, celery, and carrots and cook, covered, stirring occasionally, until soft, about 12 minutes. Add the flour and cook, stirring with a wooden spoon, for 2 minutes more.
  • Pour in the broth and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.
  • Stir in the chicken and bring to a boil. Remove from the heat.
  • Whisk the heavy cream, sherry, and salt into the soup and season with pepper to taste. Remove and discard the herb bundle. Divide among soup bowls, sprinkle the top of each soup with the chopped parsley and serve immediately.

6 tablespoons butter
1 cup yellow onion, chopped
1 cup carrot, thinly sliced and chopped
2 stalks celery, chopped
1/2 cup flour, all purpose
6 cups chicken stock, reduced sodium
3/4 teaspoon salt, to taste
1/8 teaspoon ground white pepper
2 cups cooked chicken, diced
1/2 cup half-and-half

Steps:

  • In a large soup pot over medium heat, melt the butter.
  • Add the onions, carrots, and celery and saute' until tender, about 10 minutes.
  • Stir in flour and blend. Continue stirring for a minute, careful not to burn.
  • Increase heat to medium-high.
  • Add the stock and bring to a boil, stirring constantly (whisk comes in handy here) until slightly thickened, 8-10 minutes.
  • Taste test and season with salt and white pepper.
  • Add some hot stock to the half-and-half, tablespoon by tablespoon to warm it up before adding to the soup. Stir in the half-and-half and add the chicken to the soup pot.
  • Reduce the heat to low and simmer until all the flavors are blended; 10 minutes longer.
  • Ladle into bowl and serve.

1 lemon
2 chicken breast halves with skin and bones (about 3/4 pound)
2 3/4 cups chicken broth
10 snow pea pods
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 cup heavy cream
2 tablespoons minced fresh flat-leafed parsley leaves

Steps:

  • With a vegetable peeler remove two 2-inch-long strips zest from lemon and squeeze 1 teaspoon juice into a small cup. In a small saucepan simmer chicken and zest in broth, covered, 20 minutes, or until chicken is just cooked through. Transfer chicken to a bowl and pour broth through a sieve into a 4-cup measuring cup. Chill chicken until it is cool.
  • While chicken is cooling, trim snow peas and cut diagonally into thin slivers. In a 2-quart saucepan heat butter over moderately low heat until foam subsides and stir in flour. Cook roux, stirring constantly, 2 minutes. Add broth and cream in a stream, whisking, and simmer, whisking, 2 minutes, or until soup thickens slightly. Remove pan from heat.
  • When chicken is cool enough to handle, discard skin and bones and cut chicken into thin strips. Add chicken and snow peas to soup and simmer, stirring occasionally, 1 minute, or until peas are crisp-tender. Stir in lemon juice, parsley, and salt and pepper to taste.

½ cup milk
½ cup light cream
1 cup finely chopped cooked chicken

Steps:

  • Melt butter in a pot over medium-high heat. Whisk flour into butter until mixture forms a smooth paste, about 1 minute.

3/4 cup flour
3/4 cup butter
1 cup warmed milk
1 1/2 quarts hot chicken broth
1 cup warmed half-and-half
1 1/2 cups shredded cooked chicken breasts
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Melt butter in saucepan.
  • Add flour to melted butter; cook for 1 minute over medium high heat.
  • Set aside.
  • Combine milk, 1 pint of broth and the cream in a large pot.
  • Heat but don't boil
  • Add butter flour mixture and stir and cook until mixture thickens.
  • Add remaining 1 quart broth, cooked chicken, salt and pepper.
  • Heat but do not boil.
  • Add some frozen green beans or grated carrot for color.

4 tablespoons butter
1 stalk celery, sliced plus leaves
1/2 onion, chopped
5 carrots, sliced
4 medium white potatoes, peeled and cubed
2 sprigs fresh parsley, coarsely chopped
5 cups chicken broth
1 cup heavy cream
salt and pepper, to taste

Steps:

  • Melt butter in large saucepan or dutch oven and saute the celery, onion and carrots until tender, about 20 minutes, add salt and pepper to taste.
  • Add potatoes and parsley, toss until coated.
  • Add broth, bring to a slow boil and cook until potatoes are soft.
  • Remove from stove.
  • Reserve 1/3 of the chopped veggies; puree remaining soup (broth and veggies) in a food processor or blender.
  • Pour puree back into original pot, along with the reserved chopped veggies.
  • Stir and add heavy cream,heating through- DO NOT BOIL.

1kg pack free-range chicken thigh, skin removed
300ml dry white wine
2 large onions, cut into large wedges
4 celery sticks, quartered
3 leeks, quartered
2 sprigs thyme, plus extra leaves for sprinkling
2 bay leaves
½ tsp ground white pepper (optional)
40g plain flour
300ml pot double cream

Steps:

  • Put the chicken thighs in a very large, heavy-based pan and fry for a few mins, turning frequently to lightly colour them. Providing the heat is low, there is no need to add any oil. Pour in the wine, turn up the heat and boil rapidly to evaporate the alcohol. Pile in the veg and herbs, add 1 tsp salt and the white pepper (or you can use black pepper). Pour in 2 litres boiling water. Cover the pan and simmer for 45 mins until the chicken and veg are tender. Take out the bay leaves and thyme sprigs and cool for about 30 mins.
  • Remove chicken from the soup, then strip the meat from the bones. Put all but 140g of the chicken back into the pan. Blitz the soup with a hand blender or in batches in a food processor until very smooth, then return to the pan.
  • Blend the flour and cream together with a couple of ladles of the soup, then stir the creamy mixture into the rest of the soup and heat, stirring continuously until thickened. You can blitz again if it looks a little lumpy. Chop the remaining chicken and stir into the soup. Scatter with thyme leaves, to serve.

  • Mix all ingredients well and roll into size meatball of your choice. Brown in the oven for 30 minutes.

This is a recipe out of my grandmother's cookbook. It is a lovely creamy soup with lots of chickeny-goodness. I have no idea how much it makes and she can't remember either, so I'll have to guess. Also, by setting the milk and cream out a little while before preparing this soup and letting it come closer to room temperature, you can avoid lumps.

6 cups chicken stock, heated

1 cup fresh parsley, snipped

Steps:

  • Blend together the butter and flour in a medium (3 qt) saucepan. Add warmed cream and stir until smooth. The soup will begin to thicken as it is heated.
  • Stir in 2 cups of the hot stock. Over low heat, stir and cook until heated and blended, about 4 minutes.
  • Add the remaining 4 cups of stock and the chopped chicken. Season to taste with salt and pepper.
  • Heat to serving temperature- steaming, but not boiling lest the cream break into unattractive particles. Watch the pot closely to keep from coming to a boil.
  • Serve in heated tureen and leadle into heated bowls. Garnish with snippets of parsley.

1 whole chicken (3-4 pounds)
1 large onion
2 stalks celery
2 leeks, white part only
1 large pinch salt
1 bunch herbs (parsley, bayleaf, thyme)
1 ounce butter
1 ounce all-purpose flour
3 egg yolks
5 ounces heavy cream

Steps:

  • Place the cleaned whole chicken into a large deep pan. Add the vegetables, cleaned and coarsely chopped, salt and the herbs. Cover with about 4-5 pints of cold water, bring slowly to the boil and skim off the scum as it rises.
  • When the soup is free of scum turn the heat down, place the lid on the pan and allow to simmer for 25 minutes per pound plus 20 minutes. When the chicken is tender, remove it from the pan taste the broth at this point and boil it further if necessary to end up with about 2 pints of liquid.
  • In a separate pan, large enough to hold the soup, melt the butter and stir in the flour. Let it simmer, stirring it for a minute or two, until it is glistening. Then gradually add 1 1/2 pints of the strained chicken broth, stirring to obtain a smooth liquid. Simmer for 15 minutes.
  • Beat the yolks in a bowl with the remaining hot (not boiling) soup and the cream, then add it, away from the heat, to the soup. DO NOT BOIL or eggs may curdle.
  • Stir or whisk over the lowest possible heat until the soup thickens to a velvety cream. Add diced chicken breast. Heat through and serve at once. (Save remaining chicken for salad, etc.).
