UN-FRIED FRENCH FRIES

Steps:
- Heat oven to 425°F.
- Cut potatoes into 1/4-inch-thick sticks; place in large bowl. Add remaining ingredients; toss to coat.
- Spread into single layer on large rimmed baking sheet sprayed with cooking spray; lightly spray with additional cooking spray.
- Bake 22 to 25 min. or until potatoes are crisp and golden brown, turning after 12 min.

UNFRIED FRENCH FRIES
You can have your french fries and eat them too! This recipe is perfect for the dieter. Not even a trace of fat. I got this recipe... I don't know HOW many years ago, out of a cook book that was put out by one of Oprah Winfrey's personal chefs.

Steps:
- 1. Preheat oven to 400/.
- 2. Slice each potato lengthwise into 1/4 inch ovals, then slice lengthwise into thin french fry strips. Place french fries in a bowl of ice water to crisp.
- 3. Line a baking sheet with aluminum foil or the new nonstick foil, and coat the foil with a few sprays of the cooking spray.
- 4. Combine the egg whites and the Cajun spice or Old Bay Seasoning in a bowl.
- 5. Add the potatoes and mix to coat. Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.
- 6. Place the baking sheet on the bottom shelf of the oven. Bake for 50-60 minutes, or until the fries are crispy and done, turning them every 5 minutes or so with a spatula so that they don't stick to the foil and brown evenly.
- 7. Serve immediately.

- Preheat the oven to 425 degrees Fahrenheit.
- Cut the potatoes into wedges (see the video below!). Place all ingredients into a bowl and mix until fully coated.
- Line a baking sheet with parchment paper. Place the wedges onto the sheet in a single layer.
- Bake the potatoes for 20 minutes. Remove the baking sheet from the oven and flip the potatoes.
- Reverse the baking sheet in the oven, and bake another 15 minutes until browned and crispy. Enjoy immediately!

Steps:
- Put veggie broth and coarsely chopped onion into a frying pan and bring to a boil while you slice the potatoes into about 1/4 inch thick slices.
- Toss in potatoes, cut the sun dried tomatoes into small pieces and toss them inches.
- Add pepper to taste.
- Toss in sliced mushrooms.
- Simmer until all the broth has been mostly absorbed by the potatoes.
- Really yummy and simple.

UNFRIED SWEET POTATO FRIES
These are my favorite! Anytime I want fries I make these. I sometimes eat them with a fat free turkey hot dog and it takes me back to my childhood. I think these are better then the ones you make with regular baking potatoes. Try them and tell me what you think :)

Steps:
- Preheat oven to 350 degrees.
- Scrub sweet potato and remove any bad spots.
- Cut the sweet potato up into thin matchsticks (as for fries).
- Leave the skin on.
- Place on large cookie sheet with aluminum foil (so you don't have a messy pan to clean) coated lightly with cooking spray.
- Spray sweet potatoes with cooking spray and season with the salt and pepper.
- Cook about 20 minutes and then crank oven up to about 380 degrees and bake until crispy (about 10 additional minutes).
- If you overloaded the pan (as I always do) not all of them get real crispy, but they are good either way.
- Serve with ketchup on the side.
