My DH was feeling nostalgic for foods of his youth. After an online search (and some tinkering) we came up with this winner! Ore-Ida Crispy Crowns work better than plain old Tots if you like this crispy.

1 lb lean ground beef
1 small onion, finely chopped
10 3/4 ounces cream of mushroom soup
1/4 cup milk
8 -10 ounces frozen mixed vegetables
1 cup cheddar cheese, shredded
16 ounces tater tots

Steps:

  • Preheat oven to 375°F Brown ground beef with onions until cooked. Drained thoroughly, then put in bottom of a 2 qt casserole dish. Mix mushroom soup and milk. Pour over ground beef. Sprinkle 2-3 cups of frozen mixed veggies over ground beef/mushroom soup. Top with 1/2 cup cheese, Crispy Crowns and the remaining cheese. Bake (uncovered) for 45-50 minutes or until crowns are crunchy.

16 oz. Green Giant™ Veggie Tots
6 eggs
1 cup sausage crumbles, cooked
1 cup milk
1 cup shredded cheese
1 cup diced bell peppers
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees and grease a 9 x 13 casserole dish.
  • In a large bowl, beat together milk, eggs, salt and pepper.
  • Add sausage crumbles to the bottom of the casserole dish and top with the egg mixture.
  • Then layer the Green Giant™ Veggie Tots on top of the egg mixture and top with shredded cheese.
  • Bake for 45 minutes or until done.

cooking spray
2 vegetarian mushroom burger patties
1 (15 ounce) can vegetarian chili
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can cream of asparagus soup
½ (12 fluid ounce) can evaporated milk
½ large onion, chopped
freshly ground black pepper to taste
1 cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a skillet with cooking spray and heat over medium heat. Cook mushroom patties in the pan until halfway cooked through, 7 to 9 minutes. Remove from heat and let cool, about 5 minutes. Chop finely on a cutting board. Line the bottom of a rectangular or square 2 1/2-quart baking dish with patty pieces. Pour chili on top and spread evenly. Layer potato nuggets over chili.
  • Mix mushroom soup, asparagus soup, evaporated milk, onion, and pepper together in a large bowl. Pour mixture over potato nuggets evenly.
  • Bake in the preheated oven until bubbly and heated through, 45 minutes to 1 hour, removing 15 minutes before baking completes to sprinkle with Cheddar cheese.

Rich-tasting comfort food that's easy and yummy! I like to have a salad and a piece of bread and I call it dinner! Serve as a side dish or a vegetarian entree!

1 chopped onion
3 stalks chopped celery
2 tablespoons olive oil
1 (10 1/2 ounce) can condensed cream of celery soup
1 teaspoon garlic powder
1/4 teaspoon black pepper
3 tablespoons half-and-half (or milk)
1 (32 ounce) package frozen frozen tater tots
1 cup shredded cheddar cheese

Steps:

  • Saute onion and celery in oil until tender.
  • Set aside to cool slightly.
  • Scrape into mixing bowl.
  • Add soup, garlic powder, pepper, and half and half.
  • Mix well.
  • Add frozen tater tots (reserve a handful first) and toss well.
  • Spray a casserole dish (I use my 13X9 square Pyrex baking dish) with Pam.
  • Pour mixture into dish.
  • Arrange reserved tots over top.
  • Cover with cheese.
  • Bake at 350 for 45 to 50 minutes until cheese is melted and just barely starting to brown.
  • Cool slightly before serving.

1 cup cauliflower
1 cup green beans, chopped into 1-inch pieces

4 large eggs

Steps:

  • Steam vegetables so they're slightly-tender but not limp.
  • Whip eggs and add some cheese and the vegetables.
  • Layer half the tater-tots along the bottom of a casserole dish. Pour vegetable/egg/cheese mixture over tater-tots. Add the last of the tater-tots then sprinkle with the last of the cheese.
  • Bake at 350 degrees for 1 hour and 15 minutes.

1 (12 ounce) package Boca meatless ground burger (or 4 Boca meatless burgers, crumbled)
1 (32 ounce) package frozen tater tots
1 (16 ounce) package frozen French-cut green beans
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/2 white onion, chopped
4 garlic cloves, minced
3 tablespoons olive oil

Steps:

  • Pre-heat oven to 350 degrees.
  • Saute Boca Crumbles in olive oil over medium heat, stirring frequently, in large saute pan for approximately 8-10 minutes or until evenly browned.
  • Add green beans and chopped onion saute for an additional 2 mins., stirring frequently.
  • Add minced garlic and saute for one additional minute, stirring frequently.
  • Add cream of mushroom soup, mixing thoroughly on reduced heat for approximately 1-2 minutes.
  • Place mixture in 9" x 13" rectangular cake pan.
  • Cover mixture with frozen tater tots in neat rows.
  • Bake in 350 degree oven for approximately 18-20 mins., or until tater tots are golden brown.
