POTATO SKINS

Spicy Cheese & bacon skins

Provided by Emeraldlass

Time 2h30m

Yield Serves 4

Number Of Ingredients 0

Steps:

  • Preheat the oven to 415 degrees F (200c/gas mark 6).
  • The day (or up to 2 days) before you load them, prick all 10 potatoes, then bake the potatoes until the skins are crisp and the insides floury, about 1 to 1 1/2 hours.
  • As soon as you can bear to tackle the hot potatoes, cut them in half lengthwise and scoop the insides into a bowl.
  • Put the husk-like skins of the potatoes on a tray and, when cool, cover until you are ready to fill them.
  • Let the potato cool in the bowl, and then cover until needed.
  • When you are ready to fill the potatoes, preheat the oven to 415 degrees F (200c/ gas mark 6).
  • Add 7 ounces (200g) of grated Cheddar to the cold potato along with the sour cream. Finely chop the spring onion and add to the potato, with the salt, pepper, garlic powder and Paprika.
  • Spoon the potato filling into the potato skins, and lay each half on a baking tray so they fit snugly together. Sprinkle with the remaining cheese, giving each potato skin a light covering, and cook until golden, about 20 to 30 minutes.
  • In a large saute pan, over medium heat, add enough oil to coat the bottom of the pan. Fry the bacon rashers in the oil, or grill them, until crispy. Remove them to a paper towel lined plate and then crumble.
  • Sprinkle each potato skin with the bacon to make them fully loaded.

21 TYPES OF VEGGIE CHIPS TO KEEP YOU FUELLED AT WORK - …

From hoppier.com
  • Zucchini. Too much junk food can mess with your system, and no one wants to take time off work because they aren’t feeling well. Veggie chips made with zucchini seriously improve digestion and help with weight loss.
  • Seaweed. Probably one of the last things you would guess on this list, but seaweed offers a unique flavour profile not often experienced in North America.
  • Carrot. What’s up, doc? Did you think we’d forget these nuggets of nutrition? No chance! Carrots are good office snacks to share and offer plenty of variety for those looking to add some color to their diet.
  • Swiss Chard. This rainbow-colored delight is very similar to kale chips, but is actually closely related to the beet family. Swiss chard is awesome for a healthy office birthday snack because of its vibrant colors, so you can munch happily knowing that you’re getting your recommended dose of dietary fibre.
  • Beets. These snacks are hard to beet... I mean... triumph over. The deep purple of a beet chip makes snacking fun, and with raw, earthy tones baked beet chips have a more neutral flavour.
  • Broccoli. Another not-quite-a-chip-but-we’ll-count-it-anyways exception is broccoli. Looking a lot like a tree, this powerful produce item can also make YOU big and strong.
  • Tomato. I know what you’re thinking. “But Jonathan, tomatoes aren’t vegetables?!” To which I say, “If pizza can be a vegetable, tomatoes get a seat at the table.”
  • Turnip/Rutabaga. This root has soooo many B vitamins packed into it that one of them starts with the letter “f”. (It’s folate, and it’s super good if you need to turnip red blood cell production.)
  • Taro Root. Once an unknown edible, now a staple for healthy diets. Taro root was popularized thanks to TERRA chips and their attractive offering of root vegetables.
  • Brussels Sprouts. Energy levels keep dropping before those afternoon meetings? Well no more! Brussels sprouts leaves are chocked full of energy for you to power through your day, while also keeping your blood sugar levels in check.
