Grill up this burger-sandwich combo in 25 minutes! Top with thinly sliced bell peppers for a mouth-watering meal.

1 package (10 ounces) frozen meatless soy-protein burgers (4 burgers)
1/2 teaspoon salt
4 slices (3/4 ounce each) mozzarella cheese
4 whole-grain sandwich buns, split
1/4 cup roasted-garlic mayonnaise
1 cup grilled tricolored bell peppers or purchased roasted bell peppers
1 medium tomato, sliced

Steps:

  • Heat coals or gas grill for direct heat. Sprinkle burgers with salt.
  • Cover and grill burgers 4 to 6 inches from medium heat 8 to 10 minutes, turning once or twice, until thoroughly heated. Top each burger with cheese. Cover and grill about 1 minute or just until cheese is melted.
  • Spread cut sides of buns with garlic mayonnaise. Thinly slice grilled peppers. Layer tomato, burger and bell peppers in each bun.

1 medium zucchini, thinly sliced lengthwise into ribbons
1 medium sweet red pepper, quartered
1 small red onion, cut into 1/2-inch slices
1/4 cup prepared Italian salad dressing
1 loaf ciabatta bread (14 ounces), split
2 tablespoons olive oil
1/4 cup reduced-fat mayonnaise
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 teaspoon minced garlic
1/2 cup crumbled feta cheese

Steps:

  • In a bowl or shallow dish, combine the zucchini, pepper, onion and salad dressing. Cover and turn to coat; refrigerate for at least 1 hour. Drain and discard marinade., Brush cut sides of bread with oil; set aside. Place vegetables on grill rack. Grill, covered, over medium heat for 4-5 minutes on each side or until crisp-tender. Remove and keep warm. Grill bread, oil side down, over medium heat for 30-60 seconds or until toasted., In a small bowl, combine the mayonnaise, lemon juice, zest and garlic. Spread over cut side of bread bottom; sprinkle with cheese. Top with vegetables and remaining bread. Cut into 4 slices.

1 each green and red pepper, cut into strips
1 small onion, sliced
1/2 cup A.1. Original Sauce, divided
1 lb. ground beef
4 kaiser rolls, split

Steps:

  • Heat grill to medium heat.
  • Place peppers and onions in center of large sheet heavy-duty foil; drizzle with 1/4 cup steak sauce. Fold to make packet. Grill 2 min.
  • Meanwhile, mix meat and 2 Tbsp. of the remaining steak sauce; shape into 4 (1/2-inch) patties. Grill 8 to 10 min. or until vegetables are crisp-tender and burgers are done (160ºF), turning burgers after 4 min. and brushing with remaining steak sauce.
  • Remove packet from grill; cut slits in foil to release steam before opening packet. Fill rolls with burgers and vegetables.

1/2 cup pitted ripe olives
2 to 3 tablespoons balsamic vinegar
1 garlic clove, minced
1/8 teaspoon salt
Dash pepper
1/4 cup olive oil
SANDWICHES:
1/4 cup olive oil
3 garlic cloves, minced
1 teaspoon pepper
1/2 teaspoon salt
1 large eggplant, cut lengthwise into 1/2-inch slices
2 large sweet red peppers, quartered
8 slices firm white bread (1/2 inch thick)
1/4 cup fresh basil leaves, thinly sliced

Steps:

  • Place the first five ingredients in a food processor; cover and process until pureed. While processing, gradually add oil in a steady stream; process until blended. Set aside., For sandwiches, in a small bowl, combine the oil, garlic, pepper and salt; brush over eggplant and red peppers. Prepare grill for indirect heat, using a drip pan. Arrange vegetables on a grilling grid; place on a grill rack over drip pan., Grill, covered, over indirect medium heat for 10-12 minutes or until tender. Remove and keep warm. Grill bread over medium heat 1-2 minutes on each side or until toasted., Spread olive mixture over toast. Top four slices with vegetables and basil; top with remaining toast.
