MUFFIN PAN POPOVERS
Skip all of the fancy kitchen gadgets and whip up this quick recipe for light and fluffy Muffin Pan Popovers!

Steps:
- Preheat the oven to 450°F and position the oven rack on a lower shelf. (See Kelly's Notes.)
- Place the eggs in a bowl of hot water for 10 minutes.
- Generously grease a standard 12-cup muffin pan all over (including the areas around the cups) with unsalted butter.
- In a large bowl, whisk together the eggs, milk and salt until the mixture is well combined. Add the flour and continue whisking until the mixture is frothy. (There shouldn't be any large lumps.)
- Quickly whisk in the melted butter until combined then divide the the batter among the muffin cups, filling them 2/3 to 3/4 full.
- Bake the popovers for 20 minutes without opening the oven door. Reduce the heat to 350°F (again without opening the door), and bake the popovers for an additional 10 to 15 minutes, until they're a deep, golden brown. (See Kelly's Notes.)
- Remove the popovers from the oven, release them from the pan and serve immediately.

- DO NOT Preheat the oven.
- Grease 12 large muffin tin cups or 12 custard cups.
- Break the eggs into a bowl and beat well.
- Add the milk, flour, and salt, and beat until just blended.
- Fill the muffin tin cups or custard cups 3/4 full with the batter.
- Place your batter-filled muffin tins or custard cups in a COLD oven on the center rack, then turn the oven on to 450 degrees.
- Cook for approximately 25 minutes and try not to open the oven door while they are cooking!

- Preheat the oven to 425 degrees F.
- Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.
JUICY APPLE POPOVERS
These are kind of like an individual fluffy apple pancake.

- Heat the oven to 425 degrees F.
- Whisk the eggs and milk together in a medium bowl. Add the flour, salt, and sugar and whisk to blend. Melt 2 tablespoons of butter and whisk it into the batter.
- In each cup of regular sized muffin tins, divide cold butter, apple and raisins. Place the muffin tins in the oven for 5 minutes to melt the butter and cook the apples slightly.
- Remove the tins from the oven and pour the batter into each cup filling them half way up. Bake for 10 minutes, then reduce the heat to 375 degrees F and bake until puffed and golden brown, 15 to 20 minutes more. Serve hot.
CHEESY POPOVERS
They're irresistibly good!! These popovers are a delicious alternative to bread and they're easy to make. Mix flour, grated cheese and salt with evaporated milk, water and eggs. Stir quickly, spoon into muffin pans, top with more grated cheese and bake, and Voila!! Cheesy popovers!!

- Preheat oven to 350°F Place 12 muffin pan in oven while it is heating.
- Combine flour, 1 cup grated cheese, and salt in a large bowl.
- Combine evaporated milk and water and heat to 125F (approximately 1 minute on high in the microwave) and whisk with eggs. Add to flour mixture. Do not overmix. Don't worry if there are a few lumps.
- Remove hot pan from oven. Spray with nonstick cooking spray. Put 1/3 cup batter into each cup. Sprinkle wirh remaining grated cheese.
- Bake in preheated oven 35-40 minutes, until puffed and browned. Serve hot.
- TIPS: Us any of your favorite cheese, just replace with the same amount.
