- Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions, adding broccoli, cauliflower, carrots and celery during the last 6 minutes of cooking. Drain; transfer to a greased 13x9-in. baking dish., Meanwhile, in a large saucepan, heat butter over medium-high heat; saute onion until tender. Stir in flour until blended. Gradually stir in milk and broth; bring to a boil. Cook and stir until thickened, about 2 minutes; stir in cheese, mustard, salt and pepper. , Add to macaroni mixture, stirring to coat; sprinkle with paprika. Bake, uncovered, until heated through, 15-20 minutes.

Steps:
- Bring a large pot of water to boil; cook pasta until al dente.
- While pasta is cooking, in med saucepan, melt 2 T of the margarine.
- Remove from heat; add flour and stir until blended.
- Whisk in stock and milk, stirring over med heat until mixture comes to a boil and thickens.
- Reduce heat to low.
- Stir in cheeses and seasonings.
- Continue stirring until cheese is melted.
- Remove from heat and set aside.
- In a large skillet, melt remaining 1 T margarine.
- Add remaining ingredients.
- Cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp.
- Reduce heat to low.
- When noodles are done, drain well.
- Toss with vegetables; stir in cheese sauce.
- Garnish with scallion curls.
BAKED MACARONI AND CHEESE

- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.
CHEESE'S BAKED MACARONI AND CHEESE
I got this recipe from my sister, whom I nicknamed Cheese when we were little girls. Now that we're adults, the name still sticks and my children call her Auntie Cheese. Needless to say, with a nickname like Cheese, her Baked Mac and Cheese is definitely the best around.

- Cook and stir the cut-up kielbasa in a large skillet over medium heat for 6 to 8 minutes, until heated through and beginning to brown. Remove the sausage from the skillet, and set aside.
- Fill a pan with lightly salted water, bring to a boil over medium-high heat, stir in the macaroni, and return to a boil. Cook, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 8 minutes. Drain well.
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Melt the butter in the skillet over medium-low heat, and cook and stir the chopped onion for about 5 minutes, until translucent. Whisk in the flour, stirring constantly to avoid lumps. Cook and stir the butter, onion and flour for 2 to 3 minutes to make a roux, and remove from the heat. Whisk in the milk a little at a time, stirring constantly, until all the milk has been incorporated, and return to low heat. Bring the sauce to a simmer, and cook over low heat for about 2 minutes, stirring constantly, to finish cooking the flour. Whisk in the Cheddar cheese, a few cubes at a time, until all the cheese has been incorporated and the sauce is hot and smooth.
- Pour the macaroni into the cheese sauce, and stir to combine. Stir in the cooked kielbasa, salt, and pepper.
- Spoon the macaroni mixture into the prepared baking dish, and sprinkle the bread crumbs over the top. Bake for about 20 minutes in the preheated oven, until the crumbs are brown and the casserole is bubbling. Let stand for 15 minutes after baking, to set before serving.

- In a large bowl, toss the macaroni with the oil.
- Cook the broccoli with 1 teaspoons salt in boiling water for 2 minutes then drain well and rinse in cold water to stop the cooking.
- Add broccoli and the spinach to the macaroni.
- Melt butter in medium saucepan over medium heat, add onion and saute under tender.
- Add mushrooms and cook 5 more minutes.
- Sprinkle in the flour, stirring until blended.
- Gradually add in milk and cook over medium heat, stirring constantly for 15 minutes.

VEGAN BAKED MACARONI AND CHEESE
This is a delicious baked pasta recipe that both my husband (who can eat cow's milk) and I (who can't) enjoy very much. As you make this, keep in mind that, while it's similar in appearance to mac and cheese, it's fairly different in taste and texture. I don't think there's any way to replicate the creamy mouthfeel and stretch of dairy cheese. However, this is the closest-to-dairy homemade non-dairy mac and cheese we've come across, and it's also very yummy in its own right. - Preheat your oven to 350 degrees.
- Cook the macaroni according to the package's instructions and drain well.
- Heat the oil and saute the onions until they're soft and starting to brown.
- When the onions are cooked, mix them thoroughly with the drained macaroni.

- Heat oven to 200C/180C fan/gas 6. Mix 3 tbsp of the milk with the cornflour and warm the remaining milk in a pan. Meanwhile, bring a pan of water to the boil, tip in the macaroni and cook for 6 mins, stirring occasionally.
- To make the sauce, stir the cornflour mix into the warm milk and keep stirring over a low heat until thick and smooth. Remove from the heat and stir in most of the cheddar (leaving a little to sprinkle over at the end) along with the Grana Padano and pepper to taste.
- Drain the macaroni well, then stir into the sauce. Squeeze the excess moisture from the spinach by pressing it into a fine sieve. Divide the spinach between four individual ovenproof dishes, followed by the tomatoes. Spoon the macaroni cheese over the veg, then finish with a sprinkle of the remaining cheddar. Bake for 15-20 mins or until the sauce bubbles and browns on top.

- Preheat the oven to 375°F.
- Lightly coat a 9-by-13-inch baking dish with cooking spray.
- Cook the pasta according to the package directions. Add broccoli the last 5 minutes to parboil. Drain and set aside.
