HOW TO MAKE A KILLER CHEESE-FREE PIZZA
Learn how to make a killer cheese-free pizza at home! With a flavorful pesto base and plenty of crunchy veggies, this pizza is simple to make and you won't even miss the cheese. Vegan & dairy free.

- Preheat the oven to 500ºF. Place a pizza stone in the oven and allow the stone to heat for at least 15 minutes (if you can do 30, even better!).
- Add the arugula, spinach, sunflower seeds, nutritional yeast, garlic and salt to the bowl of a food processor. Pulse until finely chopped.
- With the food processor running, slowly pour in the olive oil and process until smooth, scraping down the bowl as needed. Set aside.
- Place the pizza dough on a lightly floured surface and allow to relax for about 10 minutes (but no longer than 30).
- Roll out and shape the dough. Then transfer to a piece of parchment paper cut to about the size of your pizza stone that has been lightly dusted with cornmeal.
- Scoop the pesto onto the dough and smear evenly all over, leaving a border around the edges. Top with the walnuts, red onion and bell pepper.
- Transfer to the oven (put the parchment paper with the pizza directly on the pizza stone). Bake for about 10 to 14 minutes, until the crust is golden brown.
- Remove from the oven, then sprinkle with the lemon zest and top with the fresh arugula. Let cool slightly, then slice and serve!

This is from my dad, who developed some vegan recipes after my sister became a vegan. This doesn't have any cheese, and you don't miss it.

Steps:
- Mix water, yeast and sugar and let stand 10 minutes to start bubbling.
- Add flour to yeast mix and blend well.
- Place in a greased or oiled bowl, and cover with a warm damp cloth.
- Allow to rise in a warm place until double in bulk, around 1 hour.
- Punch down dough and pat out onto an oiled (or cornmeal dusted) pizza pan to form the crust.
- Bake in a preheated 450° F oven for 7 minutes. Crust may be refrigerated or frozen at this point. If using right away, turn oven down to 350°F.
- Place olive oil, basil, garlic, ketchup, pine nuts, and lemon juice in blender and process until smooth.
- Spread mixture onto baked pizza crust evenly.
- Add tomatoes, mushrooms and onions (or whatever you like, really) and bake at 350° for 10 minutes.

VEGAN VEGGIE PIZZA
This pizza is so delicious and pretty to serve that my guests always love this pizza and don't feel it's missing anything by being vegan. I used Sue L's Recipe #104173 and our Recipe #252423 for the crust. Preparation and cooking time includes time to make Recipe #252423 for the pizza.

- Preheat oven to 350 degrees F.
- If using Recipe #252423 for the crust, wait until the crusts have baked for 20 minutes and then add and arrange all of the toppings (if using a different pizza crust, then follow the directions for that pizza crust).
- Spread pesto sauce and then pizza sauce over pizza dough. Sprinkle half of the vegan cheese all over sauce. Arrange tomatoes, and yellow squash or zucchini, over pizza. Scatter onion and bell pepper over vegetables. Sprinkle on the other half of the vegan cheese. Scatter on mushrooms, olives, and sprinkle with red pepper flakes, if desired.
- Put the pizza back in the oven to cook for about 10 more minutes.

- Add the sugar and warm water to the yeast in a cup. Stir until the yeast and sugar is completely dissolved.
- Leave to stand for 5 minutes or until the yeast rises.
- Add the yeast to the flour in a mixing bowl.
- Add the water and knead until a dough is formed. (Be careful while adding the water and check the consistency of the dough before adding more. It will be difficult to handle a watery dough.).
- Dust a board with flour and roll the dough flat just slightly larger than the size of the pizza tray.
- Sprinkle some flour on a 30 cm pizza tray.
- Loosely wrap the dough around the rolling pin to transfer it to the tray.
- Cover with a cloth and leave to stand in a warm place for about 20 minutes.
- Preheat over at 180 degrees Celsius.
- In the meantime, slice the aubergine about 5 mm thick.
- Add the black bean sauce to the sliced aubergines. Mix well.
- In a frying pan add 2 tablespoons of olive oil.
- Add the aubergines and stir to coat them in the oil. Cover and allow to cook on medium heat until half cooked, turning occasionally. Be careful not to burn them, they can scorch quite easily!
- Remove from the pan; set aside.
- In the same pan, add the chopped tomatoes. Allow to reduce a little bit for 2-3 minutes, mashing the tomatoes slightly to a semi-puree. Add salt.
- By this time the dough would have risen.
- Place the dough in the oven to pre-cook for 12 minutes.
- In the meantime, cut the mushrooms and pineapples into small pieces (how small or big depends on how you prefer them to be!).
- Slice the onion into rings.
- Cut the pitted olives in half.
- Remove pizza dough from the oven and lay on a stand.
- Start by spreading a layer of the tomato sauce on the dough.
- Sprinkle with some dried basil.
- Arrange the aubergines.
- Arrange the mushrooms, olives, pineapple and red onion.
- Sprinkle a few spoonfuls of tomato puree on top.
- Add some cracked pepper.
- Put in the oven for 20 minutes.
- Remove, slice and serve.

VEGAN MARGHERITA PIZZA
Making a homemade cashew 'mozzarella' is pretty easy to do and you can keep extra in the freezer for future pizza making! I like to use an uncooked tomato sauce and a no-knead dough to simplify things.

- For the mozzarella:.
- Soak the cashews in water overnight or place in a pot of boiling water and boil on the stove for 15 minutes to soften. Drain.
- Add the soaked cashews to the jug of a high speed blender along with the rest of the mozzarella ingredients. Blend until completely smooth.
- Pour into a medium pot and place on the stove over a medium-low heat. Cook until thickened, about 5-10 minutes, then pour into a bowl and set aside - this will thicken as it cools.
- For the pizza dough:.
- Mix the water and yeast in a large bowl. Let sit for 10 minutes to activate the yeast then pour in the flour and salt. Stir to get a shaggy dough. Pour a bit of oil into the bowl then lift up the dough and turn it over to coat it completely in oil. Cover with a damp towel and leave somewhere warm for 2-3 hours until doubled in volume.
- For the tomato sauce:.
- In a bowl, combine the tomato sauce ingredients. Stir together and set aside.
- To make the pizzas:.
- Split the dough into quarters and roll into balls - set aside for 30 minutes to rest, this will make the dough easier to work with.
- Lightly flour a countertop and place a ball of dough onto it. Dust with more flour. Use your hands to pat the dough down and then roll out into a large circle about 1/4-inch thick. You can use your hands to help gently stretch the dough until it's thin enough. Transfer the circle of dough to a baking sheet and bake for 5 minutes until golden. Repeat with the rest of the dough so all your bases are baked.
- Spread a few tablespoons of tomato sauce onto each pizza base. Top with dollops of the 'mozzarella' and drizzle with olive oil. Sprinkle on some salt and black pepper then place each pizza back into the oven, one at a time, for 5-10 minutes until the crust is golden and the 'cheese' is starting to brown. Top with fresh basil and serve immediately.
