I am trying out several of the ready made vegetarian meat substitutes and this casserole is a result of my trial by fire! Play with the ingredients add more heat, garlic or whatever your favorite herbs and spices are. I look at this recipe as a stepping stone to other recipes.The fried onions that I use in the recipe for the topping are the prepared ones - One brand is French's but you may also buy them in Oriental markets as fried red onions

1 1/2 cups green cabbage, coarsely shredded
0.5 (340 g) package vegetarian ground beef
2 garlic cloves, smashed
1 1/2 cups cooked rice
1 cup carrot, grated
1 onion, chopped
3/4 cup mushroom, sliced
3/4 cup tomatoes, canned, diced
1/4 cup salsa
1/2 cup dry fried onions
season with salt & pepper

Steps:

  • Place half the cabbage on the bottom of a lightly greased casserole dish.
  • Mix the garlic with the ground round.
  • Then layer the veggie ground round, rice,carrot,onion, mushroom, remaining half of the cabbage.
  • Top with the tomato/salsa.
  • Cover and bake in 350 oven for 1 hour.
  • Top with the fried onions and serve.

This recipe is based on my mother's stuffed cabbage recipe. Adapted to be vegetarian and less time consuming, it's made as a casserole.Sept 2012-updated to be vegan.

1 cup onion, chopped
4 cups cooked brown rice
1 (18 ounce) can tomato paste
1/2 cup vinegar
1 cup water
1/2 cup maple syrup
1 head cabbage, chopped

Steps:

  • Preheat oven to 400°F.
  • Sauté onion until translucent mix with rice.Set aside.
  • Chop the cabbage and brown it in a frying pan.
  • Mix tomato paste,vinegar, water, maple syrup.
  • Spray a large baking pan with non-stick spray. Spread 1/2 of the fried cabbage.
  • Spread the rice mixture on top of the cabbage.
  • Top with remaining cabbage.
  • Spread tomato mixture on top.
  • Bake at 400°F for 1 hour.

  • Fill a large pot with water and bring it to a boil. Add the cabbage to the boiling water and cook it for 5 to 7 minutes, until slightly tender. I prefer it to have a little crunch, but you can cook it longer if a softer texture is desired. Drain the cabbage in a colander, rinse with cold water and set aside.
  • In the same large pot, warm the olive oil over medium-low heat. Add the onion, carrots, and garlic, and cook for 5 minutes, or until softened. Add the mushrooms, sprinkle with salt & pepper, and continue to cook for 5 more minutes, until the mushrooms have released their juices.
  • Stir in the dried herbs, diced tomatoes, tomato sauce, and tomato paste, then bring to a low boil. Reduce to a simmer and cook for 10 minutes. Stir in the lentils and brown rice.

  • Place the soy curls in bowl and cover with hot water for 20 minutes. Drain and wring out as much of the liquid as you can. Transfer to a food processor and pulse a few times until chopped up into smaller pieces. Alternatively you can use a cutting board and mince them up by hand into small pieces.
  • Combine the minced soy curls with the cooked brown rice, nutritional yeast and parsley. Set aside.
  • Preheat your largest skillet over medium heat and saute the onion in a drizzle of olive oil and pinch of salt until translucent and begins to get a little color. (Omit oil and use a splash of water to be WFPB + Plantricious complaint).
  • Stir in the red pepper flakes and garlic and cook just until the garlic fragrant taking care not to burn it. Add the cabbage and give everything a toss. You might need to work in batches here or just wait for the cabbage to wilt before adding more.
