This rice recipe has been in our family for years. It's handy when you're in a hurry for a side dish to complement almost any main dish, not just Tex-Mex fare. -Sharon Donat of Kalispell, Montana

1 can (14-1/2 ounces) vegetable broth
1 can (14-1/2 ounces) stewed tomatoes
1 cup uncooked long grain rice
1 teaspoon olive oil
1 teaspoon chili powder
1/4 teaspoon dried oregano
1/4 teaspoon garlic salt

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender and liquid is absorbed.

An easy recipe for vegetarian Spanish rice, using fresh tomatoes, bell peppers and green chilies. Found while searching for Spanish recipes for ZWT5. Cilantro would make a good addition, if you like it.

Number Of Ingredients 9

2 tablespoons vegetable oil
1 cup rice
1 1/2 cups crushed tomatoes
2 garlic cloves, minced
1 small onion, chopped
2 1/3 cups vegetable broth
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, choped
1 (4 ounce) can green chilies

Steps:

  • In a food processor or blender, blend the tomatoes, garlic, onion and 1/3 cup vegetable broth until smooth. Set aside. Heat the oil in a large saucepan over medium heat. Add the rice and stir until coated with the oil.
  • Stir the tomato mixture into the rice. Add the remaining broth, cover, and cook over low heat until the liquid has been absorbed and the rice is tender, about 25 minutes.
  • Stir in the peppers and green chilies. Heat through and serve immediately.

2 cups water
1 (10 ounce) can diced tomatoes

Steps:

  • Heat oil in a deep skillet over medium heat. Add rice, red bell pepper, onion, and garlic. Cook and stir until rice is browned and onion is tender, about 5 minutes. Stir in water and diced tomatoes. Season with chili powder and salt. Cover and simmer until rice is cooked, about 30 minutes.

2 cups low sodium chicken broth
1 cup long grain rice
3 teaspoons olive oil
1 onion, sliced thinly
1 garlic clove, minced
1 green bell pepper, seeded and chopped
1/2 orange bell pepper, seeded and chopped
1/2 red bell pepper, seeded and chopped
1/2 lb mushroom, sliced
2 cups canned crushed tomatoes (I used Muir Glen)
1/4 cup pimento stuffed olive, sliced
1/8 teaspoon salt (optional)
1/4 teaspoon pepper

Steps:

  • Bring stock to boil in a saucepan over high heat.
  • Stir in rice and return to a boil.
  • Immediately reduce heat to low.
  • Cover saucepan and simmer 15-20 minutes, or until rice is tender and liquid is absorbed.
  • Heat oil in a heavy nonstick skillet over medium heat.
  • Sauté onions and garlic 5-7 minutes or until onions are softened.
  • Stir in bell peppers and sauté another 4-5 minutes, stirring frequently.
  • Add remaining ingredients and simmer 4-5 minutes, stirring occasionally.
  • Add cooked rice to vegetable mixture.
  • Cook until heated throughout.
  • Serve with chicken, steak, or pork and fresh green beans or spinach, and some nice biscuits.

1 Asian eggplant, diced
1 yellow summer squash, diced
1 (16 ounce) can pinto beans, drained and rinsed
3 tablespoons capers
3 cups cooked rice
¼ teaspoon whole mustard seeds, or to taste
¼ teaspoon dehydrated minced garlic, or to taste
¼ teaspoon red pepper flakes, or to taste
¼ teaspoon ground cumin, or to taste
¼ teaspoon dried cilantro, or to taste
salt to taste

Steps:

  • Place red bell pepper and onion in a large frying pan over medium heat. Add olive oil. Cook and stir until onion becomes translucent, about 5 minutes. Add eggplant and squash; cover and cook until tender, about 5 minutes more. Add pinto beans and capers. Cook until heated through, about 5 minutes. Add rice. Stir in the garlic and cook for 30 seconds, until fragrant. Add the rice. Cook for about 6 to 8 minutes, stirring frequently (and then almost constantly toward the end of the 6 to 8 minutes), until the rice is lightly golden brown.
  • Add in the tomato paste and stir to combine, then stir in the tomatoes, the broth, corn, peas, cumin, chili powder and salt. Increase the heat and bring to a boil. Cover, reduce the heat and let gently simmer until the liquid is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and let the rice stand covered for 5 to 10 minutes untouched.
  • Fluff the rice with a fork. Taste and season with additional salt if needed, then garnish with the cilantro.
