Vegetarian Crockpot Moroccan Tagine image

This delicious Crock Pot Moroccan Tagine is an easy to make vegetarian (and vegan!) crock pot recipe. It's loaded with sweet potatoes, carrots, and chickpeas then topped with some crunchy almonds, salty olives and fresh mint.

1 tablespoon extra virgin olive oil
1 large onion (diced)
3 carrots (diced)
2 tablespoon ras el hanout
¼ cup tomato paste
1 lb. sweet potatoes (cubed)
2 14-ounce cans of chickpeas (drained and rinsed)
¾ cup dried apricots (cut in half)
8 pitted dates (quartered)
2 tablespoons minced ginger
4 cloves garlic (minced)
2 sticks cinnamon (broken in half)
To Serve: Steamed couscous, chopped toasted almonds, cilantro, mint, olives, and lemons

Steps:

  • Heat the olive oil in a large frying pan over medium-high heat. Add the onion and saute, stirring occasionally, until it starts to brown, about 5 minutes. Add the carrots and cook, stirring once or twice, until it browns, about 5 minutes. Add the ras el hanout, tomato paste, and ¼ cup of water to the pot and let it cook for 2 minutes, or until the tomato paste starts to caramelize. Pour everything into your crock pot..
  • Add the sweet potatoes, chickpeas (see notes), apricots, dates, ginger, garlic, cinnamon sticks, and 4 cups of water to your crock pot and stir well. Set your crock pot for 8 hours on low.
  • Serve the Vegetarian Crock Pot Moroccan Tagine over some steamed couscous with some chopped almonds, cilantro, mint, olives, and a squeeze of lemon over top.

1 small butternut squash (about 2 pounds), peeled and cut into 1/2-inch cubes
2 medium zucchini, cut into 1/2-inch pieces
1 medium sweet red pepper, coarsely chopped
1 medium onion, coarsely chopped
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
12 dried apricots, halved
2 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons paprika
1 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1 can (14.5 ounces) crushed tomatoes
2 to 3 teaspoons harissa chili paste
2 teaspoons honey
1/4 cup chopped fresh mint leaves
Plain Greek yogurt, optional
Optional: Additional olive oil, honey and fresh mint

Steps:

  • Place the first 6 ingredients in a 5- or 6-quart slow cooker., In a skillet, heat oil over medium heat. Add garlic, paprika, ginger, cumin, salt, pepper and cinnamon; cook and stir until fragrant, about 1 minute. Add tomatoes, harissa and honey; bring to a boil. Pour tomato mixture over vegetables; stir to combine. Cook, covered, on low until vegetables are tender and sauce has thickened, 4-5 hours. Stir in mint. , If desired, top with yogurt, and additional mint, olive oil and honey to serve.

1 Medium Yellow Onion (Peeled And Diced)
3 Cloves Garlic (Peeled And Minced)
1 Medium Butternut Squash (Peeled, Seeded And Diced)
30 Ounce Canned Garbanzo Beans (Drained And Rinsed)
29 Ounces Canned Fire Roasted Tomatoes (With Juice)
2 Medium Carrots (Peeled And Diced)
18 Ounces Vegetable Broth
1 Tablespoon Granulated Sugar
1 Tablespoon Lemon Juice
1 Teaspoon Ground Coriander
1 Teaspoon Kosher Salt
1 Teaspoon Ground Chili Powder

Steps:

  • Heat a medium skillet over medium-high heat on the stove-top. Add the olive oil and saute the onion and garlic in the oil until the onion is translucent.
  • Add the cooked onion, garlic and remaining ingredients to a 6 quart or larger slow cooker and stir to combine.
  • Cover and cook on LOW for 6 to 8 hours or until the carrots and butternut squash are tender.
  • Serve plain or over cooked couscous or rice if desired.

Shopping at Ikea I bought a Tangine because it looked so cool! Don't worry, if you don't have one - you can just make this on the stove top. If you want it to be ready when you come home from work, just toss it into a crockpot (slow cooker) P.S. you can also make this with Lamb or Pork if you want to!

5 boneless skinless chicken breasts, chopped into bite size pieces
1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 tablespoon mccormick's montreal steak grill seasoning
1 teaspoon ground turmeric
1/8 teaspoon ground cinnamon
olive oil
1/2 of an onion (White, Yellow or red, your choice)
1 cup chicken stock, from a box
1/2 cup raisins (if you want, you can use more)
1/2 cup prune (if you want you can use more)
couscous (optional, any flavor you want)

Steps:

  • Super Easy:.
  • Olive Oil in pan on high heat.
  • Add chopped onions and sautee a little.
  • Add chicken.
  • Mix a bit.
  • Reduce heat and add all the spices and mix a little.
  • Count to 60 so let the spices warm up a little.
  • After 1 minute has passed, add chicken stock, prunes and rasins and stir a bit.
  • Cover and simmer for about 15 minutes.
  • Uncover, stir a bit again and simmer another 5 minutes until the stock has reduced a bit and it's not so runny.
  • If you are using couscous, put the cous cous on a serving plate first then pour this chicken dish over the couscous which will absorb any loose liquid.

  • If using a crockpot (slowcooker).
  • Dump everything in the same order as above: oil, onions, chicken, then spices, fruit, cover with stock and slow cook for anywhere from 4 hours (ideal) to no more than 10. The longer it cooks, the better it will be - but it WILL dry out after 10 hours unless you a little extra chicken stock.

1 cup uncooked green lentils
3 tablespoons olive oil
1 onion, chopped

salt and freshly ground black pepper to taste
3 potatoes, peeled and cubed
1 (14 ounce) can crushed tomatoes
2 sweet potatoes, peeled and cubed
2 large carrots, peeled and sliced
4 cups vegetable broth

Steps:

  • Place water and lentils in a saucepan. Bring to a boil. Reduce heat to medium-low, cover, and simmer until lentils are tender and liquid has been absorbed, about 20 minutes.
  • Heat oil in a skillet or tagine over medium-high heat. Saute onions until browned and translucent, about 5 minutes. Add garlic, turmeric, coriander, cumin, salt, and pepper. 3 lbs skinless chicken pieces, skin removed
2 cups chicken broth
1 (14 1/2 ounce) can diced tomatoes, undrained
2 onions, chopped
1 cup dried apricot, chopped
4 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground red pepper
6 sprigs fresh cilantro
1 tablespoon cornstarch
1 tablespoon water
1 (15 ounce) can garbanzo beans, rinsed and drained
2 tablespoons chopped fresh cilantro
1/4 cup slivered almonds, toasted
hot cooked couscous or rice

Steps:

  • Place chicken in crock pot slow cooker. Combine broth, tomatoes with juice, onions, apricots, garlic, cumin, cinnamon, ginger, coriander, red pepper and cilantro in medium bowl; pour over chicken.
  • Cover; cook on low 4 to 5 hours or until chicken i no longer pink in center. Transfer chicken to serving platter; cover to keep warm.
  • Combine cornstarch and water in small bowl; mix until smooth. Stir cornstarch mixture and beans into crock pot slow cooker. Cover; cook on High 15 minutes or until thickened. Pour sauce over chicken. Sprinkle with cilantro and toasted almonds. Sever with couscous or rice.

1 (3 lb) package stew beef chunks or 8 skinless chicken thighs, bone-in
4 garlic cloves
2 onions
1 teaspoon ground cumin
1 teaspoon paprika

1/2 teaspoon allspice
1/2 teaspoon salt
1/2 teaspoon hot red chili pepper flakes or 1/4 teaspoon cayenne pepper
2 cups small chunks carrots

1 (10 ounce) can condensed chicken broth or 1 cup chicken bouillon

Steps:

  • Thaw lamb.
  • Trim excess fat from lamb or beef, then cut into large bite-size pieces.
  • If using chicken thighs, leave whole.
