SHRIMP COCONUT CURRY SOUP

2 tbsp coconut oil
1/2 onion (diced)
2 garlic (minced)
1 cup sliced mushrooms
2 carrots (diced)
1 small tomato (diced)
1/2 cup celery (sliced)
1/2 zucchini (diced)
1 cup broccoli florets
12 medium-size shrimp (raw )
5 cups chicken broth
1 cup coconut milk (the full fat option is best)
2 tbsp Thai coconut curry paste (be generous)
Salt & pepper, to taste
1/4 cup cilantro
plain rice for serving (optional)

Steps:

  • In a large pan, heat coconut oil until shimmering and cook the onion with the mushrooms until the onion is soft and translucent. Add the garlic and cook until fragrant. Next, add the carrots, tomato, and celery. Stir and allow to cook for a minute.
  • Pour in the broth and the curry paste, lower heat and let it simmer until carrots are cooked.
  • Next, add the zucchini and broccoli and let it cook for another minute. Include the raw shrimp and pour in the coconut milk, stir and bring heat up until it boils. It should only take about 5 minutes until the shrimp is done. But double check, and make sure shrimp is all pink.
  • Remove from heat and add the cilantro.
  • Serve as soup, or serve over plain rice.

2 13.5-ounce cans coconut milk (about 3 1/4 cups)
1/4 cup yellow curry paste (such as Mae Ploy)
1 cup low-sodium chicken broth or clam juice
1 medium carrot, sliced into 1/4-inch-thick rounds
1 small red bell pepper, chopped into 1/4-inch pieces
1 small onion, chopped
1 15-ounce can baby corn, drained and rinsed, cut into pieces
5 sprigs Thai basil, with stems (or regular basil)
1 Thai chile (such as prik kee noo) or serrano chile, stemmed and thinly sliced
3 kaffir lime leaves (or the zest of 1 lime)
1 1/2 tablespoons fish sauce
4 cups canola oil or safflower oil
8 ounces fresh thin rice noodles
1 pound medium shrimp, peeled and deveined
4 ounces snap peas, halved
1/4 cup chopped fresh cilantro leaves
1/4 cup lightly salted peanuts, chopped

Steps:

  • In a large saucepan, bring the coconut milk and curry paste to a boil over medium-high heat, whisking constantly until smooth, about 2 minutes. Add the chicken broth, carrot, red bell pepper, onion, baby corn, basil, chile, lime leaves and fish sauce. Bring the mixture to a simmer over medium-low heat. Cover the pan and cook until the vegetables are tender, about 20 minutes.
  • Pour the oil into a large wide saucepan. Attach a deep-fry thermometer to the side of the saucepan and heat the oil to 350 degrees F. Add half of the noodles and fry until crisp, about 20 seconds. Drain on paper towels and set aside.
  • Remove the lid from the curry and add the shrimp, snap peas and the remaining noodles. Simmer, uncovered, until the shrimp is cooked through, 5 to 7 minutes. Remove the lime leaves and basil sprigs and discard.
  • Ladle the curry into bowls. Garnish with the fried noodles, cilantro and peanuts.

1 1/2 pounds large shrimp, peeled and deveined, shells reserved
3 to 4 sprigs fresh thyme
2 bay leaves
2 tablespoons black peppercorns
1/4 cup vegetable oil
1 large onion, finely chopped
3 scallions, finely chopped
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
3 cloves garlic, crushed
3 medium tomatoes, peeled, seeded and chopped
2 teaspoons Aji
1 1/2 cups coconut milk
Juice of 6 limes
1 1/2 cups peas, fresh or frozen

Steps:

  • Place the shrimp shells in a saucepan, along with the thyme, bay leaves and peppercorns. Add 3 cups of water, bring to a boil, reduce the heat and simmer until reduced by a third, about 30 minutes. Strain the liquid (you should have about 1 cup) and discard the shells.
  • Heat the oil in a large skillet over moderate heat. Add the onion, scallions, salt and pepper and saute until soft, about 3 to 5 minutes. Add the garlic, tomatoes, aji and reserved shrimp stock and simmer until thickened, about 5 minutes. Stir in the coconut milk, shrimp, lime juice and peas, and cook until the shrimp are pink and just cooked, turning the shrimp once as they cook, about 3 minutes. Serve over white rice.

You can make this as spicy as you want by adding green peppers like anaheim or jalapeno peppers. You can omit the vegetables or add more that you like. The coconut milk and seasonings are strong enough flavor to carry this dish. If I am feeling lazy, I even skip the saute step.

1 lb shrimp
1 teaspoon cooking oil
1 green pepper (anaheim pepper)
4 garlic cloves
1 tablespoon ginger, sliced
4 tablespoons onions, minced
1 teaspoon mirin
1/2 teaspoon paprika (just for color)
1/4 cup white wine
0.5 (13 1/2 ounce) can coconut milk
1 cup vegetables, like bokchoy spinach, sweet peas
1/2 cup celery leaves, minced

Steps:

  • Wash seafood, drain.
  • In a large pan, saute garlic, onion and ginger in oil.
  • Add in all ingredients except seafood and vegetables.
  • Wait for he mixture to thicken at about 1/3 its original volume before adding seafood. At this point the coconut milk is starting to be oily and sweeter.
  • Add seafood and vegetables.
  • Let sauce come to a boil again then simmer for 2 minutes or until seafood is cooked.
  • Add celery leaves at last minute.
  • Serve with rice.

1 tablespoon fresh lime juice
1 garlic clove

1 1/2 tablespoons all-purpose flour
1 cup well-stirred canned unsweetened coconut milk
1/4 cup sliced scallion greens
1/4 cup coarsely chopped fresh cilantro springs
Accompaniment if desired:coconut rice

Steps:

  • Peel and devein shrimp and reserve shells. In a small saucepan simmer shells in 2 cups water 15 minutes and pour shrimp broth through a sieve into a large measuring cup. Discard shells.
  • While shells are simmering, in a bowl combine shrimp, lime juice, and salt to taste and chill, covered. Chop garlic and thinly slice bell pepper, and onion in oil over moderate heat, stirring occasionally, until softened, about 5 minutes. Drain, seed, and chop tomatoes.
  • Add flour to onion mixture and cook, stirring, 1 minute. Stir in tomatoes, coconut milk, and 1 cup shrimp broth (reserving remainder for another use if desired) and simmer, stirring occasionally, until vegetables are soft, about 20 minutes. Add shrimp to vegetable mixture and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.
  • Sprinkle shrimp mixture with scallions and cilantro and serve over rice.

1 pound green beans, trimmed
1/2 pound carrots, cut into 1/2-inch slices
1/2 pound eggplant, cut into 1-inch chunks
1 small fresh chile, stemmed, seeded, and minced, or 1 small dried chile, or to taste
2 garlic cloves, roughly chopped
5 nickel-sized slices peeled fresh ginger
1/3 to 1/2 pound ground pork or turkey, optional
1 large tomato, roughly chopped, or about 1 cup canned tomatoes, drained and chopped
1 1/2 cups coconut milk, homemade (page 584) or canned
1/2 cup unsweetened shredded coconut
Salt to taste
1 cup roughly chopped fresh basil leaves, preferably Thai

Steps:

  • Heat the oil in a large skillet over high heat. If you're using them, soak the dried shrimp in hot water to cover. When the oil is hot, toss in the green beans and carrots. Cook, shaking the pan occasionally, for a minute, then add the eggplant, chile, garlic, and ginger. Again, cook and shake until the ingredients begin to brown. Crumble the meat if you're using it and add it, then cook, stirring occasionally, until the meat begins to lose its color. Stir in the soaked shrimp and their liquid and lower the heat to medium.
  • Add the tomato and about half the coconut milk. Cook, stirring occasionally, until the coconut milk is just about evaporated, then add a little more. Meanwhile, toast the coconut in a dry skillet over medium heat, tossing from time to time until lightly browned, about 5 minutes.
  • Whenever the mixture threatens to dry out, add a little more coconut milk, cook until the carrot is tender, the coconut milk is used up, and the mixture is moist but not soupy. Stir in the toasted coconut, taste and add salt if necessary (it will be if you did not use the dried shrimp), then stir in the basil and serve.
