A tender, flaky biscuit wraps around your favorite taco fillings in an easy, flavor-packed hot sandwich.

1 lb lean (at least 80%) ground beef
1 package (1 oz) Old El Paso™ taco seasoning mix
2/3 cup water
1 1/2 cups Old El Paso™ Thick 'n Chunky salsa
1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Buttermilk Biscuits (8 Count)
1/2 cup shredded Monterey Jack cheese or Mexican cheese blend (2 oz)
1 cup sour cream, if desired

Steps:

  • In medium saucepan, cook beef, drain. Add taco seasoning mix, water and 1/2 cup of the salsa until thickened.
  • Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.
  • Bake at 375°F 9 to 14 minutes or until golden brown. Serve with remaining salsa and sour cream.

Sheet Pan Roasted Veggie Tacos image

Beautiful sheet pan roasted veggie tacos filled with perfectly seasoned vegetables and plenty of plant-based protein. Serve these easy vegetarian tacos with avocado, sliced red cabbage, fresh cilantro, and your choice between two creamy, delicious sauces. The ultimate meatless dinner made on one pan!

For the spices:
1 ½ teaspoons cumin
1 ½ teaspoons coriander
1 ½ teaspoons turmeric
¾ teaspoon garlic powder
½ teaspoon dried oregano
Optional: ¼ teaspoon cayenne
½ teaspoon salt
Freshly ground black pepper
For the veggies:
1 head cauliflower, cut into florets (about 3-4 cups cauliflower florets)
1 medium sweet potato, diced into ½ inch cubes
1 red bell pepper, cut into chunks
1 red onion, cut into chunks
Optional: 1 cup frozen or fresh corn
2 tablespoons olive or avocado oil
½ medium lime, juiced
For the black beans:
1 (15 ounce) can black beans, rinsed and drained
For serving:
8 tortillas of choice, charred for serving (I love soft corn tortillas!)
1 avocado, sliced or diced
Sliced red cabbage, for crunch
Jalapeno cashew cream sauce (DF, V)
OR Cilantro yogurt sauce
Fresh chopped cilantro

Steps:

  • First, make whatever sauce you are choosing to go with this recipe to save you time and so you are ready when it's time to eat. More in my note section below. The recipes are linked in the ingredients and can be found in the post itself and in the note section too!
  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Depending on the size of your sheet pan, you may need to use two pans in order to fit all of the veggies.
  • In a small bowl, mix together all of the ingredients for the spices so they are well combined: cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper.
  • Add the cauliflower florets, diced sweet potato, red bell pepper, red onion, and corn (if using) to the prepared pan. Drizzle with avocado oil and lime juice. Sprinkle spices all over the veggies. Use a tong or clean hands to combine all the veggies so they are well coated with the spices and oil. I find that using hands is much easier!
  • Roast the veggies for 30-40 minutes, stirring halfway through. You'll know they are done when sweet potatoes are fork tender. During the last 5-10 minutes of baking, remove the pan from the oven and add the rinsed and drained black beans right to the sheet pan with the veggies. This is simply to warm the beans in the oven without needing to use another pot or bowl!
  • Serve on charred tortillas with my favorite jalapeno cashew cream sauce, a little red cabbage for crunch, avocado slices and cilantro. Enjoy! Serves 4, 2 tacos each.

Make these tasty vegan tacos with a smoky-sweet salsa and pack in all of your 5-a-day in one meal. Kiwi brings a moreish, fruity dimension to the salsa

175g pack baby corn
1 large red onion , sliced (190g)
1 red pepper , deseeded and roughly chopped
½ tsp cumin seeds
2 tsp olive oil
1large ripe kiwi , halved lengthways (110g)
1large tomato , halved (115g)
100g wholemeal flour , plus extra for rolling
1 large garlic clove
15g fresh coriander , chopped
1 tsp vegan bouillon powder
½ tsp smoked paprika
85g red cabbage , finely shredded

Steps:

  • Heat oven to 220C/200C fan/gas 7. Pile the corn, red onion and pepper into a large shallow roasting tin and toss with the cumin seeds and oil. Add the kiwi and tomato on one side of the tin and roast for 20 mins.
  • Meanwhile, mix 60ml water into the flour with the blade of a knife to make a dough. Knead briefly until smooth, then cut equally into four and roll out each piece on a lightly floured surface into a 16cm round tortilla. Cover with a tea towel to stop them drying out.
  • Remove the cooked tomato and kiwi from the tin and return the veg to the oven for 10 mins. Remove the skin from the kiwi and scoop the flesh into a bowl with the tomato, garlic, half the coriander, bouillon and paprika. Use a hand blender to blitz to a smooth salsa.
  • Heat a large non-stick frying pan, without oil, and cook the tortillas one at a time for a minute on one side and about 10 seconds on the other, until you see them puff up a little. Spread a tortilla with some salsa, top with cabbage and roasted veg, then scatter with the remaining coriander. Add a spoonful more salsa and eat with your hands.

4 cups meatless veggie crumbles (like Morningstar Farms or Boca brands)
1 ounce taco seasoning
3/4 cup water
2 large tomatoes, diced
2 cups shredded low-fat cheddar cheese
shredded romaine lettuce
8 taco shells or 8 whole wheat tortillas

Steps:

  • Warm meatless burger crumbles in sauté pan.
  • Add water and taco seasoning and bring to a boil. Simmer and stir until desired consistency is reached.
  • Heat taco shells (or tortillas) according to directions on package.
  • Dice tomatoes, shred cheese and lettuce, all to desired amounts.
  • Pour two ounces of protein crumbles into shell, and add desired toppings.

1 Tbsp. oil
2 medium red or green peppers, coarsely chopped
1 cup sliced carrots
1-1/2 cups TACO BELL® Thick & Chunky Salsa
1 cup frozen whole kernel corn
12 flour tortillas (6 inch)
1-1/2 cups KRAFT Shredded Cheddar Cheese

Steps:

  • Preheat oven to 425°F. Heat oil in large skillet on medium heat. Add peppers and carrots; cook and stir 5 min. Reduce heat to low. Stir in salsa and corn; simmer 5 min., stirring occasionally.
  • Spoon about 1/4 cup of the vegetable mixture onto half of each tortilla; sprinkle each with 2 Tbsp. of the cheese. Fold tortillas in half; place on baking sheet sprayed with cooking spray. Press top of each tortilla gently into filling to secure.
  • Bake 5 min. or until cheese is melted. Serve with BREAKSTONE'S or KNUDSEN Sour Cream, if desired.
