ZUCCHINI FRITTERS WITH YOGURT DIP

This recipe is from a recipe book I have called: Family Favorites Vegetables. By Parragon NY. I love the taste of fried fritters with vegetables of any kind.

14 oz 2-3 zucchini
1 garlic crushed
3 scallions finely sliced
4 1/2 oz feta chesse (crumbled)
2 Tbsp finely chopped fresh parsley
2 Tbsp finely chopped fresh mint
1 Tbsp finely chopped fresh dill
1/2 tsp freshly grated nutmeg
2 Tbsp all purpose flour
pepper to taste
2 eggs
2 Tbsp olive oil
1 lemon, cut in to quarters to garnish
FOR THE DIP
1 1/4 c strained plain yogurt
1/4 cucumber, diced
1 Tbsp finely chopped fresh dill pepper

Steps:

  • 1. Grate the zucchini straight on to a clean dish towel and cover with another. Pat well and let stand for 10 minutes until zucchini are dry.
  • 2. Meanwhile, to make the dip, mix the yogurt , cucumber, dill, and pepper to taste in a serving bowl. Cover and let chill.
  • 3. Tip zucchini into a large bowl. Stir in the garlic, scallions, cheese, herbs, nutmeg, flour, and pepper to taste. Beat eggs in a separate bowl and stir into the zucchini batter - the batter will be quite lumpy and uneven but this is fine.
  • 4. Heat the oil in a large, wide pan over medium heat. Drop 4 Tbsp of the batter into the skillet, with space in between and cook for 2-3 minutes on both sides. Remove, drain on paper towels, and keep warm. Cook the second batch of fritters in the same way. ( there should be 8 fritters total)
  • 5. Serve the fritters hot with the dip, garnished with lemon quarters.

These crispy fritters, which Melissa Clark developed for her picky daughter, are also an ideal cocktail accompaniment. Hot, salty and crunchy: They can be devoured in one or two bites. To make them, combine shredded or diced carrots and zucchini, lemon zest and scallion with a light batter of flour, egg, milk, coriander and pepper. Let them rest for a half-hour so the vegetables can soften, then drop the battered vegetables by the spoonful into the oil and fry until golden all over. Sprinkle with salt and serve with a creamy dip of yogurt, mint and garlic, and watch them disappear.

1 cup all-purpose flour, more as needed
1 teaspoon baking powder
1 teaspoon coriander
3/4 teaspoon kosher salt, more for serving
1 cup milk, more as needed
1 large egg
1/4 teaspoon grated lemon zest
1/4 teaspoon pepper
2 large carrots, grated (about 1 1/2 cups)
1 large zucchini, grated (about 2 cups)
2 scallions, finely chopped
1 garlic clove, finely chopped
1/2 cup plain yogurt
1 tablespoon chopped mint
1 tablespoon extra virgin olive oil
Olive oil, for frying

Steps:

  • To make the batter for the fritters: in a large bowl, whisk together the flour, baking powder, coriander and 1/2 teaspoon salt. In a separate large bowl, whisk together the milk, egg, lemon zest and pepper.
  • Pour dry ingredients into wet; whisk until just blended (do not overmix). Batter should be slightly thicker than cream. If it's too thick, add some milk; if it's too thin, sprinkle with additional flour. Stir in the carrots, zucchini and scallions. Allow to rest for 30 minutes.
  • To make the yogurt dip: using a mortar and pestle or the back of a knife, mash together the garlic and 1/4 teaspoon salt. In a small bowl, whisk together the garlic paste, yogurt, mint and 1 tablespoon extra virgin oil. Cover and refrigerate until ready to use.
  • Fill a wide saucepan with 1 inch of olive oil; heat until the temperature registers 375 degrees on a deep-fry thermometer (or until a small drip of batter browns immediately). Line a cookie sheet with paper towels. Working in batches, drop battered vegetables by the tablespoon into the oil, being sure not to overcrowd the pan. Fry, turning occasionally, until golden all over, about 3 to 4 minutes. Use a slotted spoon to transfer fritters to the cookie sheet to drain. Transfer fritters to a platter or plate; sprinkle with salt and serve with yogurt dip.

110 g besan flour
110 g self raising flour
2 garlic cloves, Crushed
1 1/2 teaspoons garam masala
1 teaspoon chili powder
1 teaspoon cumin seed
1 tablespoon coriander, Chopped
250 ml water
200 g potatoes, cut into small pieces
230 g eggplants, cut into small pieces
120 g zucchini, cut into small pieces
250 g cauliflower, cut into small pieces
1 teaspoon cumin seed
250 ml yogurt
1 red chile, diced
1/2 teaspoon paprika
2 tablespoons of fresh mint, finely minced
1 tablespoon coriander, finely minced

Steps:

  • Fritters:.Sift both flours into large bowl.
  • Stir in garlic, garam masala, chili powder, cumin seeds and coriander. Mix.
  • Make a well in the middle and stir in water. Mix well to make a smooth batter.
  • Stir in Vegetables.
  • Deep fry until golden brown.
  • Dip:.Place cumin seeds in a small frying pan.
  • Stir in medium heat for about 2 minutes, remove from heat and let it cool.
  • Combine cumin seeds with remaining ingredients in a small bowl and mix well.

Spicy Eggplant Fritters With Yogurt Dip image

This is a wonderful dish when you have a crowd of people over, it makes a great dish, if making several like a buffet style meal or it also is a great appetizer to present while you are finishing up on the main affair. I prefer to serve it like this as they are really the best, eaten straight away, whilst crunchy and hot. It also gives your guests something to pick at, while they are chatting amongst themselves before a meal. These are also great to make as a snack, to sit and munch on, on a lazy Sunday afternoon whilst watching your favourite team play (don't forget your cold beer). I love the dip that goes with these and I feel it compliments all the flavour in the fritters very well. These are also excellent for vegetarian guests even the most strictest ones. I have had guests that can not even eat egg, these work really well as you just use egg substitute instead.

1 large eggplants (about 600g) or 2 medium eggplants, peeled, chopped (about 600g)
1 cup breadcrumbs
3/4 cup fresh coriander, roughly chopped
1/2 cup sultana, chopped
1/2 cup plain yogurt
1 tablespoon tomato paste
3 garlic cloves, crushed
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/2 teaspoon cayenne pepper
1/2 cup plain flour
2 eggs, lightly beaten
vegetable oil (for deep frying)
1 cup plain yogurt
2 tablespoons of fresh mint, finely chopped
2 tablespoons fresh coriander, finely chopped
1 teaspoon grated fresh ginger
1 garlic clove, crushed

Steps:

  • Yogurt Dip.
  • Combine all ingredients in a bowl, mix well, cover and refrigerate until ready to use.
  • Fritters.
  • Boil, steam or microwave eggplant until tender, drain, process eggplant until smooth.
  • Transfer eggplant to a bowl, add remaining ingredients, except oil. mix well.
  • Heat oil in a large pan, drop teaspoonfuls of mixture into hot oil, deep fry until browned and crisp, drain on absorbent paper.
  • Serve fritters on serving plate accompanied with yogurt dip.

These spiced pea and coriander fritters are easy to make ahead of time. Scatter with crunchy spring onions and serve with the cool minty yogurt dip

120ml Greek yogurt
½ garlic clove , crushed
1 tbsp good-quality extra virgin olive oil
3 tsp mint sauce (or 2 tbsp freshly chopped mint leaves)
100g gluten-free plain white flour
3 medium eggs
2 courgettes , grated and the moisture squeezed out
60g peas (thawed if frozen)
2 tbsp finely chopped mint leaves
2 spring onions , finely sliced
1 green chilli , deseeded and finely chopped
1 lemon , zested
1 ½ tsp ground coriander
1 ½ tsp ground cumin
¼ tsp baking powder
4 tbsp vegetable oil , for frying
100g feta , crumbled
3 spring onions , thinly sliced on a diagonal

Steps:

  • In a large bowl, mix together all the fritter ingredients, except the oil, until combined. For the yogurt dip, simply mix all the ingredients together in a small bowl with plenty of freshly ground black pepper and 1 tsp salt. The dip can be made in the morning and chilled.
  • When you're ready to cook the fritters, heat the oil over a high heat (you want to make sure the oil is really hot, so be brave!). Carefully drop 1 tbsp of batter into the pan - add only 4-5 tbsp at a time so you don't overcrowd the pan - and fry for about 2 mins each side until nicely crisp and golden. Remove from the pan and place on kitchen paper to absorb the excess oil. The fritters can be fried a couple of hours before serving, then reheated in the oven.
  • To reheat the fritters ready for serving, heat oven to 220C/200C fan/gas 7. Put the fritters on a baking tray and bake for 10 mins or until crispy and hot. Serve on a platter with the feta and spring onions scattered over, with the minty yogurt dip on the side.
