VEGETABLE FRITTATA WITH SPINACH AND POTATO
This flavorful vegetable frittata makes the perfect weekday meal or weekend brunch!

Steps:
- Preheat the oven to 375F.
- Heat 1 tablespoon of olive oil in a non-stick, oven-safe pan (or cast iron skillet) over medium heat. Add the potatoes and saute for 7-10 minutes until tender. Meanwhile, whisk the eggs, basil, and cheese together in a bowl and set aside. Remove the potatoes from the pan and set aside.
- Add the remaining olive oil and cook the green onion, tomatoes, and frozen peas for 3-4 minutes over medium heat. Add the spinach and garlic and cook for another 30 seconds or so.
- Pour in the egg mixture and reduce the heat. Scramble the eggs for 1 minute then add in the potatoes. Cook for another 3-4 minutes until the egg starts to set. Smooth into an even layer and place in the oven for 10-12 minutes until the eggs have set. Slice and serve topped with more basil and cheese if desired. Enjoy!

Steps:
- Heat olive oil in a medium skillet over medium heat.
- Place potatoes in the skillet, cover and cook about 10 minutes until tender but firm.
- Mix in spinach, green onions and garlic.
- Season with salt and pepper.
- Continue cooking 1 to 2 minutes, until spinach is wilted.
- In a medium bowl, beat eggs and milk.
- Pour into skillet over the vegetables.
- Sprinkle with cheddar cheese.
- Reduce heat to low.
- Cover.
- Cook 5 to 7 more minutes or until eggs are firm.
- Cut into wedges and serve.

- Preheat oven to 450 degrees F. Put a baking sheet into the oven to preheat.
- In a large bowl combine 1 tablespoon of the canola oil with 1 teaspoon of salt and 1/4 teaspoon pepper. Add the sliced potatoes to the bowl and toss to coat. Remove the baking sheet from the oven, and add the potato slices, making sure they are all in a single layer. Transfer to the oven and bake for 8 minutes.
- In a skillet, heat the remaining 2 tablespoons of the oil over medium heat. Add the onion and saute for 2 minutes. Stir in the garlic and spinach and saute for another 2 minutes.
- In a large bowl whisk together the eggs, milk and remaining salt and pepper. Mix in the cheese and the onion and spinach mixture and set aside.
- Spray an oven-proof skillet with nonstick cooking spray. Turn the oven down to 350 degrees F. Remove the potatoes from the oven and add them to the skillet. Pour in the egg mixture and transfer the skillet to the oven. Bake until the eggs have set, about 30 to 35 minutes.
- Remove from oven and let cool for 5 minutes. Serve warm or at room temperature, directly from the skillet.

- Preheat the broiler on your oven.
- In a frying pan with an ovenproof handle heat the oil and saute onion, garlic and green bell pepper over a low heat. Saute until vegetables are just tender but not browned. Add the zucchini and continue cooking, stirring occasionally, until crisp-tender. Add the potatoes, stir well to combine, and continue cooking, stirring frequently, until the potatoes are heated through and starting to stick to the pan.
- Then add the tomatoes and black olives, stirring well to combine with the other ingredients, and cook just until the tomatoes have begun giving up their juice.
- Beat the eggs with the salt, pepper, oregano, and cayenne. When all the vegetables are cooked, pour the eggs over them
- Arrange the tomato slices over the top of the eggs, and sprinkle the mozzarella and Parmesan cheeses over the tomato slices. Cook gently over low heat until the eggs are almost set (they'll be firm around the edges and a bit runny in the middle).

- Preheat oven to 180 degrees Celsius.
- Fry the onion in the olive oil until golden and slightly crispy - about 10 minutes.
- Blanch the sliverbeet in boiling water for 2 minutes and set aside.
- In a bowl, combine the sliverbeet, ricotta and cornichons. Season to taste with salt and pepper.
- Seperate the eggs and beat the whites until they form stiff peaks.

LEEK, POTATO & SPINACH FRITTATA
This is such a quick and easy recipe. I often make it for my lunch and (instead of serving it up nice and round) serve it more as a hash - so it fits in my tupperware box! I make this with 2-3 eggs because I serve it more as a hash, but for a full-on frittata you could use as many as 4. If you prefer to have this as a hash then you don't need to bother grilling/broiling it - just mix everything up well and keep everything moving in the pan so it all cooks through properly.

- Pre-heat your grill/broiler.
- Dice the potato and par-boil for approx 5 minutes.
- While the potato is cooking, chop the leek and onion.
- Put the leek, onion and par-boiled potato into a frying pan with 1 cal spray (or olive oil if you're not dieting!) and soften everything up for another 5 mins or so.
- Throw the spinach on top of everything in the pan and press down well so that it starts to wilt.
- Pour over the eggs and top with the cheese and paprika. Season well and cook for another 5 minutes or so on a low heat.
- To cook the top through properly, place the pan under the grill for the last 5 minutes to melt the cheese and finish everything off nicely.
SPINACH-FETA FRITTATA
This spinach and feta frittata is great for breakfast or lunch. I love it with cherry tomatoes, but fresh melon and other fruit would also be delicious with it.

- Melt butter in a 10-inch, oven-proof skillet over medium heat. Add onions and cook until they start to turn translucent, about 2 minutes. Stir in potatoes and spinach, and remove from heat. Sprinkle with feta cheese.

- Melt one tablespoon of butter in frying pan and cook potatoes over medium heat until they begin to brown - remove from pan.
- Melt remaining butter add vegetables and ham and cook on medium heat for about 8 minutes.
- Break eggs and beat gently, season to taste.
