If you can't get the Baharat Spice Blend, you can use half and half cumin and cayenne pepper. They are good hot or cold.

Number Of Ingredients 9

1 tablespoon olive oil
100 g butternut squash, peeled and grated
1 large carrot, peeled and grated
1 large courgette, peeled and grated
1 teaspoon baharat, spice blend
salt and pepper
6 sheets phyllo pastry
1 egg, beaten
oil, for brushing

Steps:

  • Preheat oven to 180C/350F/Gas 4.
  • Heat the oil in a pan.
  • Cook the vegetables for about 10 mins until softened.
  • Stir in the spice blend, and season.
  • Separate the sheets of filo into two piles of 3.
  • Cut each pile into 3 lengthways and then each strip in half crossways.
  • So you should have 12 little piles of 3 sheets each.
  • Put a heaped teaspoon of veggie mix in the bottom corner the strip.
  • Fold over to make a triangle and then continue folding so you end up with what looks like a little samosa.
  • Use a little beaten egg to seal the last bit.
  • Brush with oil and put on a baking sheet.
  • Bake for about 15 minutes until golden.

This is elegant and tasty party fare. The pastries are called briouats in Morocco, where they are made with the paper-thin pancakes called ouarka. Fillo makes an easy and perfect substitute. You can keep the prepared rolls uncooked in the freezer. In Morocco they are fried, but it is much easier to bake them, and the results are very good.

Number Of Ingredients 13

1 medium onion, finely chopped
4 tablespoons vegetable oil
1 1/2 pounds lean ground beef or lamb
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon ginger
Salt
Pepper or good pinch of ground chili pepper
1 cup finely chopped parsley
1 cup finely chopped cilantro
5 eggs, lightly beaten
1 pound fillo sheets
3/4 cup (1 1/2 sticks) butter ,melted, or 3/4 cup vegetable oil

Steps:

  • Prepare the filling. In a large skillet, sauté the onion in the 4 tablespoons oil until softened. Add the meat, spices, salt, and pepper or ground chili pepper, and cook, crushing the meat with a fork and turning it over, for about 10 minutes, until it changes color. Stir in the parsley and cilantro.
  • Lightly beat the eggs in a bowl and pour over the meat. Cook gently, stirring, for a moment or two only, until the eggs set to a creamy consistency. Let the filling cool. Taste and add more spices and pepper if you like.
  • To fill and roll the cigars: cut each sheet of fillo into three rectangles and put them together in a pile so that they do not dry out.
  • Brush the top one very lightly with melted butter or oil.
  • See drawings on page 117. Put a tablespoon of filling along one of the short edges. Roll the fillo over it. Roll up like a cigar, tucking the ends in when you've rolled it halfway so that the filling does not fall out, then continue to roll, letting the ends unfold so that they appear open. Place the rolls side by side on a greased baking sheet, brush with melted butter, and bake in a preheated 300°F oven for 35 minutes, or until golden. Serve very hot.
  • You may dust the cigars with confectioners' sugar or cinnamon or with both.
  • If you want to fry a few for an instant snack (they are nice fried), do so in about 1/2 inch not-too-hot vegetable oil, turning over once, until browned. Drain on paper towels.

  • Plan to work with the almonds in two or three batches because peeling becomes difficult once the almonds cool. Extra hands make short work of this step.If you're using Moroccan almonds, they may feel gritty. Wash or rinse them, then leave to drain in a colander.
  • Divide the blanched almonds in half. You'll be frying half of the almonds and leaving the other half raw. The fried almonds add color, texture and flavor to the almond paste.
  • Cut your warqa pastry sheets into strips. For cherry-sized balls, use a 5x30cm (1.75x10-inch) strip of dough. Increase the measurements proportionate to the size balls you rolled.
  • Heat 1/2" of vegetable oil in a deep frying pan set over medium heat. At the same time, heat 1 kg of honey mixed with 1 tablespoon of orange flower water in a second pot. Remove the honey from the heat when it is quite hot and becomes slightly foamy on top. Set up a heat-proof strainer over a bowl.
