Steps:
- Preheat the oven to 350°.
- Lightly oil a 9-inch loaf pan and arrange a strip of parchment paper width-wise along the center, with just a bit hanging out over each side.
- Peel the bananas and place them into a large mixing bowl. Mash them well with a fork or potato masher.
- Add sugar, brown sugar, oil, and vanilla to the bowl. Stir until well-mixed.
- Add the flour to the bowl, then sprinkle the baking soda, cinnamon and salt on top of the flour.
- Stir everything together just until mixed. Don't overmix. The batter will be thick.
- Fold in the walnuts.
- Spoon the batter into the prepared loaf pan and smooth out the top with the back of a spoon.
- Sprinkle the top with brown sugar.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the pan from the oven and transfer it to a wire rack. Allow the loaf to cool for at least 15 minutes before removing it from the pan.
- Slice and serve.

- Preheat your oven to 350 degrees F. Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking. If you use a larger loaf pan, such as a 9x5, please know your bread will be much thinner and will take less time to cook.
- In a large bowl mix together the mashed banana, brown sugar, coconut oil, vanilla extract and milk to a bowl until well combined.
- In a large bowl, whisk together the dry ingredients: flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix; it's totally fine if there are some lumps of banana, etc. Feel free to fold in ½ cup chopped walnuts or ½ cup chocolate chips (or both!) if you'd like.
- Add banana bread batter into the prepared pan. Bake for 40-50 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 5-10 minutes, then remove and transfer to a wire rack to finish cooling.
- Once bread is cool, cut into 10 slices. Serve with nut butter spread on top for a healthy snack or breakfast on the go.

Steps:
- Preheat oven to 350°F.
- Lightly spray oil on the inside of 2 loaf pans (8 1/2" x 4 1/2" x 2 1/2"). Place some parchment paper in the bottom of pans if you have it. If not, don't worry about it. You can also use a cake pan but the loaf pans work better.
- Combine the flour, salt, and baking soda in a small bowl.
- In a separate large bowl, mash the bananas and mix in the butter, sugar, eggs, pecans, and bourbon.
- Add the combined dry ingredients into the large bowl and hand stir just until the batter is blended (try not to over stir).
- Pour batter equally into the two loaf pans.
- Bake for 60-70 minutes until the loaves pass the toothpick test.
- Let the loaves cool for 5 minutes, then turn them out onto a rack to finish cooling. If you used the parchment paper, they will roll out of the pans with no difficulty.
- Slice and serve. This bread is tasty all by itself but it can also be spread with butter, cream, jam, or whatever your favorite topping happens to be.

- Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
- Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
- Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
- Bake for another 20 minutes, or until a skewer comes out clean.
- Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.
