½ cup white sugar
½ teaspoon baking soda
½ teaspoon salt
½ cup vegetable oil
1 (4 ounce) container applesauce
1 tablespoon vanilla-flavored almond milk
1 tablespoon vanilla extract
½ cup cinnamon-sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, sugar, baking soda, and salt together in a bowl.
  • Beat vegetable oil, applesauce, almond milk, and vanilla extract together in a separate large bowl; add flour mixture and stir until combined.
  • Divide dough into 14 portions and roll into balls. Spread cinnamon-sugar into a wide, shallow bowl. Roll dough balls in the cinnamon-sugar and arrange onto a baking sheet.
  • Bake in preheated oven until golden brown, about 10 minutes.

Number Of Ingredients 17

1 ½ cups all purpose flour
¾ cup brown sugar
¼ cup white sugar
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
¾ cup cold water
½ cup vegetable oil
2 ½ teaspoons vanilla extract
1 teaspoon apple cider vinegar
2 cups powdered sugar
½ cup vegan butter
½ cup vegetable shortening
½ teaspoon vanilla extract
1 tablespoon nondairy milk
1 tablespoon white sugar
1 tablespoon cinnamon

Steps:

  • Preheat oven to 375°F (190°C). Line a cupcake pan with 12 liners.
  • In a large bowl combine all the dry ingredients. Whisk together until well combined.
  • In a medium bowl combine the wet ingredients. Mix well.
  • Add the wet ingredients to the dry ingredients. Using a spatula mix everything together until just combined. No need to worry about lumps so don't over mix!
  • Divide batter evenly between the liners. Bake for 18-20 minutes until the center cupcakes are golden and a toothpick comes out clean.
  • Remove cupcakes from pan and refrigerate until completely cool.
  • While cooling, make the frosting! Combine the powdered sugar, vegan butter, vegetable shortening and vanilla extract using a stand or hand mixer. Add in non-dairy milk one tablespoon at a time until you achieve the desired consistency.
  • In a small bowl mix together sugar and cinnamon.
  • Once the cupcakes are cool, frost, and sprinkle the cinnamon sugar on the cupcakes.
  • Enjoy!

1 ⅓ cups white sugar, divided
2 teaspoons ground cinnamon
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon cream of tartar
½ teaspoon salt
¼ teaspoon baking soda
½ cup unsalted butter, softened
1 large egg, at room temperature
1 tablespoon vanilla extract
1 cup buttermilk, at room temperature
1 cup unsalted butter, softened
3 ½ cups powdered sugar
2 teaspoons vanilla extract
1 ¼ teaspoons ground cinnamon
¼ teaspoon salt
4 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 cupcake cups with liners.
  • Mix together 1/3 cup sugar and cinnamon for cupcakes in a small bowl. Set aside.
  • Whisk together flour, baking powder, cream of tartar, salt, and baking soda in another bowl until combined.
  • Cream together butter and 1 cup sugar in a large bowl until light and fluffy, 2 to 3 minutes. Add in egg and vanilla and mix an additional 2 minutes. Pour in half of the flour mixture and mix until just combined. Pour in buttermilk and mix until just combined. Add in remaining flour mixture and mix until just combined.
  • Place 1 tablespoon of batter in the bottom of each cupcake liner. Sprinkle 1/2 teaspoon of cinnamon-sugar over the batter. Add another heaped 1 tablespoon of batter on top. Sprinkle with an additional 1/2 teaspoon cinnamon-sugar mixture. Repeat layering in each cupcake liner.
  • Bake in the preheated oven until cupcakes spring back lightly when touched, 24 to 28 minutes. Allow to cool for several minutes in the pan before removing to a wire rack to cool completely.
  • For the frosting: Beat butter on high speed until lightened in color, about 2 minutes. Add in powdered sugar 1 cup at a time, mixing well after each addition. Mix in vanilla, cinnamon, and salt. Add in heavy cream and beat until frosting is light and fluffy, an additional 2 to 3 minutes. Frost cooled cupcakes as desired.

1 cup butter, unsalted room temperature
1 3/4 cups sugar, plus 2 tablespoons for dusting
4 large eggs, room temperature
2 teaspoons pure vanilla extract
1 1/4 cups milk

Steps:

  • Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Sift together both flours, baking powder, salt, and 1 tablespoon cinnamon.
  • With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. Reduce speed to low. Add flour mixture in three batches, alternating with two additions of milk, and beating until combined after each.
  • Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored up to 2 days at room temperature, or frozen up to 2 months, in airtight containers.
  • To finish, combine remaining 1/2 teaspoon cinnamon and 2 tablespoons sugar. Using a pastry bag fitted with a large plain tip (Ateco No. 809 or Wilton No. 1A), pipe frosting on each cupcake: Hold bag over cupcake with tip just above top, and squeeze to create a dome of frosting, then release pressure and pull up to form a peak. Using a small, fine sieve, dust peaks with cinnamon-sugar. Cupcakes are best eaten the day they are frosted; keep at room temperature until ready to serve.

1 ¾ cups all-purpose flour
1 teaspoon baking soda

½ teaspoon apple cider vinegar
⅓ cup unsweetened applesauce
½ cup unsweetened almond milk
1 ½ cups vegan butter, 3 sticks
2 cups organic powdered sugar
2 teaspoons vanilla extract
¼ cup rainbow sprinkles

Steps:

  • Preheat the oven to 350°F (180°C).
  • Grease 10 cups of a muffin tin or line with paper liners.
  • In a large bowl, cream together the granulated sugar and coconut oil with an electric hand mixer until smooth.
  • Add the flour, baking soda, baking powder, salt, vanilla, apple cider vinegar, applesauce, and almond milk, and stir with a rubber spatula until well combined.
  • Use an ice cream scoop to fill the muffin cups about ¾ of the way.
  • Bake for 20- 25 minutes, until a toothpick inserted in the center of a cupcake comes out clean
  • Make the frosting: In a large bowl, cream the vegan butter with an electric hand mixer until smooth.
  • Sift in half the powdered sugar and beat to combine. Sift in the rest of the powdered sugar and the vanilla and beat until smooth.
  • Fold in the sprinkles with a rubber spatula.
  • Place a large zip-top bag in a tall glass. Scoop a good amount of frosting into the bag. Squeeze all of the frosting into a corner of the bag, then snip off that corner.
  • Pipe the frosting onto the cupcakes in a spiral pattern
  • Enjoy!

Add flour mixture and stir just until flour is incorporated. Dough should be firm and thick. If the dough is too soft, chill it in the refrigerator for 15 minutes to 1 hour until it stiffens a bit. This will help keep them from spreading too much.
  • In a small bowl, combine the sugar and cinnamon for rolling. Roll dough into about 1 inch balls. To keep them uniform, use either a 1 tablespoon measuring spoon or 1 tablespoon scooper.
