These 'meaty' vegan meatballs are easy to make, loaded with flavor, perfectly textured and hold their shape perfectly in a sauce!

1 cup Walnuts ((100g))
15 ounce Can Chickpeas (Drained)
1 Medium Onion (White, Yellow or Brown, Finely Chopped)
2 Cloves Garlic (Crushed)
1/4 cup Nutritional Yeast Flakes ((15g))
2 Tablespoons Soy Sauce
1/2 cup Tomato Paste ((130g))
1 teaspoon Hoisin Sauce
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Salt
1/4 teaspoon Cumin
1/4 teaspoon Ground Coriander
1/2 teaspoon Dried Oregano
1 teaspoon Smoked Paprika
1/4 teaspoon Liquid Smoke
3/4 cup Vegetable Stock ((180ml) or Broth)
1 1/2 cups Vital Wheat Gluten ((225g))
Olive Oil (Extra Virgin, For Brushing, Optional)

Steps:

  • Add walnuts to a food processor and process into crumbs. Transfer the crumbs to a bowl and set aside.
  • Add drained chickpeas, chopped onion, crushed garlic, nutritional yeast, soy sauce, tomato paste, hoisin sauce, garlic powder, onion powder, salt, cumin, ground coriander, oregano, smoked paprika, liquid smoke and vegetable stock to the food processor and process until smooth.
  • Transfer the mixture to a mixing bowl and add the walnut crumbs. Mix together.
  • Add vital wheat gluten and mix in. The mix will be very thick. Don't overmix as this will cause the gluten to become tough and chewy. Just mix it until mixed and then stop mixing.
  • Preheat the oven to 350°F (180°C).
  • Scoop the mixture using a heaped tablespoon measure and roll them into balls. Aim to get around 30 meatballs.
  • Place the meatballs onto a parchment lined baking sheet.
  • Brush the meatballs with olive oil (optional) and then bake for 15 minutes on one side, then flip them over and bake for 15 minutes on the other side. They should be browned and crispy on both sides.

1 cup cooked and cooled quinoa* ((ensure it's cooked + completely cooled before using))
1 15-ounce can black beans* ((rinsed, drained, dried))
2 Tbsp water ((or sub olive or avocado oil))
3 cloves garlic ((minced))
1/2 cup diced shallot
1/4 tsp sea salt ((plus more to taste))
2 1/2 tsp fresh oregano ((or sub half the amount in dried))
1/2 tsp red pepper flake ((reduce for less heat))
1/2 tsp fennel seeds ((optional))
1/2 cup vegan parmesan cheese ((plus more for serving))
2 Tbsp tomato paste
3 Tbsp chopped fresh basil or parsley ((we mixed both // plus more for serving))
1-2 Tbsp vegan worcestershire sauce ((optional // adds depth of flavor // ensure gluten-free for GF eaters))
Marinara sauce

Steps:

  • If you haven't prepared your quinoa yet, do so now (make sure it's cooked and cooled completely before use). 1/3 cup uncooked quinoa will yield ~1 cup cooked. *Prep/cook time does not include preparing quinoa.
  • Preheat oven to 350 degrees F (176 C). Add rinsed, dried black beans to a parchment-lined baking sheet. Bake for 15 minutes or until beans appear cracked and feel dry to the touch (see beans in food processor photo). Remove beans from the oven and then increase oven heat to 375 degrees F (190C).
  • Heat a large (oven-safe) skillet over medium heat. Once hot, add water (or oil), garlic, and shallot. Sauté for 2-3 minutes, or until slightly softened, stirring frequently. Remove from heat (and reserve pan for later use).
  • Add black beans to a food processor along with garlic, shallot, sea salt, oregano, red pepper flake, and fennel (optional) and pulse into a loose meal (DON'T overmix). Then add cooked/cooled quinoa, vegan parmesan cheese, tomato paste, fresh basil or parsley, and Worcestershire (optional). Pulse to combine until a textured dough forms (you're not looking for a purée, but it should be semi-tacky).
  • Taste and adjust flavor as needed, adding more salt for saltiness/depth of flavor, red pepper flake for heat, herbs for earthiness, or Worcestershire (optional) for more depth of flavor. If it's too tacky or wet, add more vegan parmesan cheese and pulse to combine (we added a bit more).
  • Scoop out heaping 1 1/2 Tbsp amounts (using this scoop or a Tablespoon) and gently form into small balls using your hands. Add to a plate and refrigerate for 15 minutes.
  • Heat an oven-safe metal or cast-iron skillet over medium heat. Once hot, add a small amount of oil to prevent sticking, then add the meatballs. Sauté for a few minutes, gently turning the meatballs to get a slight crust on either side. Then transfer to the oven and bake for 20-30 minutes or until golden brown on the edges and slightly dry to the touch.
  • These meatballs are delicious as is, or you can add some marinara to the pan and heat over medium heat for 5 minutes (or until bubbling / hot) to infuse more flavor.
  • Serve with marinara and additional vegan parmesan cheese (optional)! These are also delicious atop any pasta. Leftover meatballs keep for 4-5 days in the refrigerator or 1 month in the freezer. Reheat in the microwave or in a 375-degree F (190 C) oven until warmed through.

I've been playing around with making 'meatballs' using some ingredients/techniques I've seen from other recipes. this is a nice substitute for regular meatballs, but don't drop them into a pot of sauce to cook... they'll fall apart after a while! I used Nutritional Yeast Flakes which you could totally make this recipe without. It has a kind of 'cheese' flavor which I like in meatballs :-)

1 cup cooked lentils
1 cup cooked brown rice (I used short grain for texture)
1/4 cup rolled oats (not quick cooking)
1/4 cup wheat germ
2 tablespoons soy sauce
2 tablespoons nutritional yeast flakes
1/4 cup whole wheat flour
1 tablespoon fresh parsley, minced
1 teaspoon balsamic vinegar
1 teaspoon garlic, minced
2 teaspoons onions, minced
1 tablespoon extra virgin olive oil

Steps:

  • preheat oven to 350 degrees F.
  • combine all ingredients in a bowl. With your hands bruise/mash the lentils a bit, but not to the point that there all mushy.
  • using a small ice cream scoop (or with wet hands) roll out golfball sized balls. (slightly smaller).
  • *continue to dampen hands when doing this -- the mixture is sticky.
  • place on a lightly oiled cookie sheet and bake 15 minutes.
  • Turn over and bake an addional 15 minutes.
  • Serve topped with a nice vegetarian/vegan marinara.

SWEDISH "MEAT" BALLS WITH GRAVY (VEGAN)

Adapted from a recipe found at http://www.grouprecipes.com/103768/vegan-swedish-meatballs.html. That one uses a whole 2 cups worth of soy creamer...granted, that would make it deliciously creamy, I tried to lighten that up a bit (you could adjust the broth-creamer ratio as you wish). I also changed the meatballs up by using TVP instead of a packaged sausage product which we just can't find where I live.

1/2 cup breadcrumbs
1/4 cup plain soymilk (or rice milk)
1/2 cup vegetable broth
1/2 cup textured vegetable protein
1/2 onion, finely diced
1 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
1/4 teaspoon nutmeg, to taste
1/4 teaspoon sea salt, to taste
black pepper
extra vegetable broth
3 tablespoons canola oil
6 button mushrooms, halved and then sliced
1/3 cup soy coffee creamer
2 tablespoons cornstarch
1 1/2 cups vegetable broth
2 tablespoons nutritional yeast
1 pinch nutmeg
1 dash Braggs liquid aminos

Steps:

  • In a medium bowl combine the breadcrumbs with the soy or rice milk. Set aside. Heat up the vegetable broth in a pyrex measuring cup and then add in the dry TVP. Mix together well and let the TVP absorb for a few minutes. While that sits, dice up your onion.
  • Mix together the breadcrumb mixture with the TVP, about 2 tbsp of the onion. the parlsey flakes, garlic powder, nutmeg, salt and pepper. Adjust the salt to taste as it will really depend on how seasoned your veggie broth is. You want the mixture to hold together when formed into a ball in your hand - you may need to add a little extra broth, maybe a few tablespoons. I find pushing down with the spoon as you mix helps to combine everything. Form into balls, 1 1/2 inches in diameter (should yield 12).
  • Heat up the oil in a saute pan, add in the "meat" balls and brown on all sides as best you can. When complete, place them into a casserole dish and set aside.
  • Put your oven on to 350 degrees.
  • Clean out your saute pan of any bits and then return to medium heat. Saute the rest of the onion and the mushrooms for about 5 minutes until the onions are translucent.
  • In a bowl whisk together 1/3 cup soy creamer (or more if you choose) with the corn starch. Mix in 1 1/2 cups veggie broth, or less if you're using more creamer, along with the nutritional yeast and a pinch of nutmeg.
  • Pour the broth mixture into the pan with mushrooms & onions, bring up to a gentle boil, stirring well to get a smooth sauce. Turn heat down and let it simmer for just a few minutes. Add in some braggs for flavour or colour if you choose.
  • Pour the gravy over the meatballs and bake in the oven for about 20 minutes until bubbly. Serve over noodles or mashed potatoes.
