VEGAN CHOC CHIP BLONDIES



Vegan Choc Chip Blondies image

This recipe also comes from "Vegan Cookies Invade Your Cookie Jar" by T.H. Romero and I.C. Moskowitz. They are very yummy, fudgy and can be whipped up in nearly no time. Feel free to use a mix of different kinds of chips.

Number Of Ingredients 11

3 ounces firm silken tofu
1/4 cup non-dairy milk (e.g. soy milk)
1/3 cup oil
1/2 cup brown sugar (unpacked)
1/2 cup sugar
1 teaspoon vanilla extract
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup chocolate chips (make sure theyre vegan)

Steps:

  • Puree the tofu, non-dairy milk and oil until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugars and vanilla.
  • Sift in flour, baking soda, baking powder and salt.
  • Use a spatula to mix batter until smooth. Fold in chocolate chips.
  • Transfer to an 8X8 greased baking pan and smooth out the top.
  • Bake in the preheated oven at 325°F/150°C for 25 minutes or until set.
  • Remove from the oven and let the brownies cool for at least 30 minutes before slicing and serving.
  • Enjoy.

1 cup butter, softened
1 cup brown sugar
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
3 cups quick-cooking oatmeal
1 cup chocolate chips
1 cup coconut (optional) or 1 cup chopped pecans (optional)

Steps:

  • Cream butter and sugars.
  • Add eggs and vanilla; beat well.
  • Sift dry ingredients and add gradually to wet ingredients; mix well.
  • Add oats, 1 cup at a time, chocolate chips, coconut or pecans and mix.
  • Spread dough evenly into ungreased 15 X 10 inch pan.
  • Bake at 350 degrees for 20-25 minutes.

This is my healthified version of Recipe #460577. I like that these blondies taste just as chocolatey and indulgent as the real deal (well, at least to me), but are so much better for you. I hope youll like them, too. :)

3 ounces firm silken tofu
1/4 cup soy yogurt
3 tablespoons water
1/3 cup unsweetened applesauce
1/8 cup dark brown sugar (unpacked)
1 teaspoon vanilla extract
1 cup whole wheat flour (I use whole spelt flour)
1/2 cup flour (I use spelt flour)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 pinch salt
1/3 cup chocolate chips (make sure theyre vegan)

Steps:

  • Puree the tofu, yogurt, water and applesauce until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flours, baking soda, baking powder and salt.
  • Use a spatula to mix batter until smooth. Fold in chocolate chips.
  • Transfer to an 8X8 greased baking pan and smooth out the top.
  • Bake in the preheated oven at 325°F/150°C for 25 minutes or until set.
  • Remove from the oven and let the blondies cool for at least 30 minutes before slicing and serving.
