Steps:
- Saute chopped onion and green pepper until they start to brown, then add beans and hot pepper. Add seasoning and let set over low heat until thick, then add tomatoes and cook until you are ready to eat. For the cornbread, omit the directions and just add the pineapple. Bake in a pie pan until golden brown. This is perfect crumbled into the chili. This recipe is easy and can use stuff in your pantry and is good for camping. It is popular even with meat eaters.
PINEAPPLE VEGAN CHILI
Really interesting sounding chili recipe from Claudia from the Simple Living message boards. She says that 1 cup = 3.5 WW points. Claudia says "* 'So Soya' ground beef comes in a box (in the the produce section of Loblaws where I am in Canada) and is a dry soy product that will absorb the moisture and flavor in a recipe and expand. You could leave this out - it wasn't in the original recipe, but I love to add it." Let me know how it turns out!

Steps:
- Put all ingredients except "So Soya" ground beef in a large pot and simmer, covered, on low for 4 hours, stirring frequently.
- Take cover off, add "So Soya" ground beef and let simmer until the desired consistency is reached, approximately 1 hour, stirring frequently.

- Heat oil in an oven-safe dutch oven* medium heat. Add onion, garlic, and a pinch of salt and sauté until soft, about 5 minutes.
- Add carrots, celery, and bell pepper and sauté for another 7 minutes, or until softened. Add tomato paste, all spices, salt, and pepper, stirring for a minute.
- Add tomatoes with juice, all beans, and water, stirring to combine. Increase heat to medium-high. Once boiling, reduce heat and simmer, uncovered, for 15 minutes while you make the cornbread. Taste for seasoning before you pour batter on top!
- Preheat oven to 400F. Mix together flax and water in a small bowl and set aside. Add almond milk and vinegar to a liquid measuring cup and set aside.

- Pre-heat the oven to 180°C (fan)/200°C/gas mark 6. Place the diced butternut squash (half a squash) in a roasting dish, drizzle with olive oil and roast for around 30 minutes, stirring occasionally, until soft. Remove from the oven when cooked.
- While the crust is baking make the pineapple salsa. Mix together 200g diced pineapple, 1/2 small red onion, chopped, a chopped red chilli (if using), the juice of a lime, 1 tbsp olive oil, 1 tbsp chopped fresh coriander and 1 pinch of salt to taste.
