1 Tbsp Olive Oil
1 Large Onion
2 Small Garlic Cloves
1 Pk Beyond Meat
1 Can Diced Tomatoes
3/4 Cup Enchilada Sauce
3/4 Cup Corn
1 Can Red Kidney Beans
1 Tsp Oregano
2 Tsp Chili Powder
2 Tsp Paprika
1 Tsp Cumin
1/2 Tsp Cayenne Pepper
1/2 Tsp Salt
1/2 Tsp Pepper

Steps:

  • Chop 1 large onion and 2 garlic cloves
  • Add onions and garlic to 1 tablespoon olive oil and saute for 15 minutes
  • Add Beyond Meat and brown for 15 minutes or until meat is cooked through
  • Combine all ingredients and stir well
  • Cook for 15 minutes or until thoroughly heated
  • Garnish with shredded vegan cheese, green onions, vegan sour cream or cilantro. Serve with corn muffins and fresh salad.

This chili starts with a few different whole dried chiles, toasted and blended together, then fried with vegan ground meat and other aromatics to form the complex backbone of this stew. Along with tomatoes and kidney beans, I like to add some soy sauce (for umami depth), cider vinegar (for acidity and brightness) and a shot of hard liquor. The volatile alcohol in the liquor helps pull aromas up and out of the chili and into your nose. If you want to opt for a vegetarian version, feel free to use unsalted butter in place of the vegan butter, and garnish with sour cream or Cheddar.

2 whole dried ancho, pasilla or mulato chiles, stems and seeds removed, torn into rough 1-inch pieces (about 1/2 ounce)
1 whole dried New Mexico red, California, costeño or choricero chile, stems and seeds removed, and torn into rough 1-inch pieces (about 1/8 ounce)
1 to 2 dried hot chiles, such as árbol or pequín, stems and seeds removed and torn into rough pieces (optional)
2 tablespoons vegan butter
1 pound vegan ground meat, such as Impossible or Beyond
1 medium onion, grated on large holes of a box grater (about 1 1/2 cups)
2 large garlic cloves, grated on Microplane (about 4 teaspoons)
1 teaspoon dried oregano
Kosher salt
2 chipotle peppers packed in adobo sauce, finely chopped
2 teaspoons ground cumin
1/4 cup tomato paste
1 (15-ounce) can whole tomatoes packed in juice, drained and chopped into 1/2-inch pieces
1 (16-ounce) can dark kidney beans, drained
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1 tablespoon whiskey, vodka or brandy (optional)
Diced onions, chopped cilantro, chopped pickled jalapeños, sliced black olives, vegan sour cream, shredded vegan cheese, fresh tortillas or tortilla chips, for serving (optional)

Steps:

  • Make the chile paste: Add all the dried chiles to a Dutch oven or large, heavy-bottomed saucepan and cook over medium-high heat, stirring frequently, until slightly darkened and giving off an intense roasted aroma, 2 to 5 minutes. Turn down the heat if they begin to smoke. Add 1 cup water; it should immediately boil. Reduce heat so water barely simmers, and cook until chiles have softened, about 4 minutes. Transfer the chiles and liquid to a blender and blend at high speed, scraping down sides as necessary, until a completely smooth purée is formed, about 2 minutes. Set aside.
  • Prepare the chili: Melt the butter in a large Dutch oven over medium-high heat. Add the vegan ground meat and cook, breaking it up with a wooden spoon, until fat has mostly rendered and it is starting to sizzle rather than steam, about 10 minutes. (I don't mind leaving the rendered fat in the chili. It homogenizes as the chili reduces, so the end result should not be greasy. However, you can drain the mixture at this point if you prefer less fat in the finished chili.)
  • Add the onion, garlic, oregano and salt. Cook, stirring frequently, until the onions have softened, about 2 minutes. Add the chipotles, cumin and reserved chile paste, and cook, stirring frequently, until the paste reduces to the point that it starts to sizzle and fry, about 4 minutes. Add the tomato paste and cook, stirring frequently until homogenous, about 1 minute.
  • Add chopped canned tomatoes and scrape up any brown bits that have stuck to the pan. Add kidney beans, soy sauce and 1 cup water, and stir to combine. Bring to a boil, reduce to a simmer, and cook, stirring occasionally, until flavors have developed and chili is thickened to desired consistency, about 30 minutes. Stir in vinegar and liquor, if using. Adjust texture by adding water, and season to taste with salt and pepper. Serve with whatever garnishes you like.

VEGAN NO BEAN CHILI

This recipe is for a vegan "true" chili. This is not going to be a chili bean recipe or a soup, although I'm sure i would be good, with some modifications, as either. This is adapted from "Jeff's Hot Dog Chili" which can be found here: https://www.allrecipes.com/recipe/223538/jeffs-hot-dog-chili/ . It is a perfect topper for hot dogs, chili cheese fries and sloppy joes. I know there are a lot of ingredients but it will be worth it. If you are not vegan, it is great with shredded cheese on top. I eat mine with diced onions, shredded cheese and yellow mustard. Enjoy!

2 vegan burgers, patties (The Beyond Burger)
1 cup textured vegetable protein, crumbles
1/4 cup ketchup
1/4 cup tomato paste
1/4 cup vegan worcestershire sauce
1/2 cup water
1/2-1 teaspoon garlic salt
1/2 teaspoon onion powder
1 tablespoon chili powder (new mexico or california)
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 beef flavored vegan bouillon cubes
1 cup water
4 tablespoons avocado oil
1/2 small yellow onion
1 -2 teaspoon diced jalapeno
1/2 teaspoon unrefined unbleached cane sugar

Steps:

  • Start by placing 2 tbsp of the avocado oil in a cast iron pan on medium heat.
  • Dice up 1/2 a small yellow onion and the jalapeño and add to the oil, stirring for 1-2 minutes until onions are translucent; remove mixture and set aside.
  • Place the 2 Beyond Burger patties in the pan. Using a wooden spoon, break them up the same way you would ground beef. Cook until burger bits are crispy. Be sure to get all the pieces stuck to the bottom of the pan. Lower the heat so as not to burn it.
  • While the burger crumbles are cooking, boil 1 cup of water. In a separate bowl or large mug, place the 2 vegan beef bouillon cubes. Using the handle of the wooden spoon, crush the cubes into a powder. Once the water has boiled, turn the heat off and add the crusted cubes to create a broth.
  • Next, add in the TVP, stirring once, then letting it sit to rehydrate. All water should be absorbed by the TVP.
  • Once rehydrated, add 1/2 of the TVP mixture and onion mixture into your Beyond Burger crumbles. .
  • Add the remaining 2 tbsp of avocado oil and stir so everything is coated and the TVP browns. This should take about 3 minutes with the stove on medium heat.
  • In a separate bowl, combine the remaining ingredients: ketchup, tomato paste, vegan worcestershire sauce, chili powder, onion powder, garlic salt, pepper, and sugar. Once all of the ingredients are mixed, pour the mixture into your "meat". Stir for a couple minutes so everything is coated. At this point it should look almost like a paste and should be very thick. .
  • Let this mixture cook for about 5 minutes total before adding the remaining 1/2 cup of water. Reduce the flame to low heat and let simmer for 15-20 minutes, adding more water if needed. Be sure to stir occasionally making sure nothing is sticking to the bottom or burning. .
  • Taste and adjust seasonings if necessary. For more heat, I would suggest adding more jalapeño 1 tsp at a time or additional chili power in the same fashion.
  • *Substitutions*.
  • EVOO can be used in place of avocado oil, plain white sugar can be used in place of the unrefined sugar and tomato sauce can be used in place of tomato paste. Just be sure to adjust the water accordingly so you don't end up with a chili that is too watery.
  • **Also, since you are only using 1/2 of the TVP mixture, I usually freeze the other half to have later for tacos.
