1/4 cup unbleached cane sugar
1 3/4 cups warm water
1 tablespoon active dry yeast (quick-rise or conventional)
6 1/2 cups unbleached flour
2 tablespoons non-hydrogenated margarine
1 tablespoon baking powder
1/4 cup vegetable oil
2 cups seitan, cut into small pieces
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup hoisin sauce
1/4 cup hot chili sauce
1/4 cup vegan sour cream

Steps:

  • In a small bowl, dissolve cane sugar in warm water. Mix gently and add yeast. Allow mixture to rest for 10 minutes.
  • In a larger bowl, knead together the flour and margarine until mixture resembles small beads. Add yeast mixture and mix gently with a spoon. On a floured cutting board, knead dough until it's smooth and pliable. Form into a ball and place back into a larger bowl. Cover with plastic wrap and allow to rise for about two hours.
  • In a medium skillet over medium-high heat, heat vegetable oil. Add seitan, salt, and pepper, and pan-fry for about 3 minutes on each side. In a medium bowl, mix hoisin sauce, chili sauce, and sour cream. Add fried seitan and set aside.
  • On a cutting board sprinkled with baking powder, divide dough into 12 flat rounds. In the center of each round, add a heaping tablespoon of the seitan mixture. Pull the sides of the rounds up to completely encase the seitan mixture and twist the dough to seal.
  • Fill a large saucepan 1/4 of the way with water, place over high heat, and bring to a boil. In a metal colander over the pot seam buns for about 15 minutes.

  • In a large mixing bowl, combine flour, cornstarch, instant yeast, baking powder, kosher salt (and sugar if you're using it) and gently whisk to combine.
  • Add in your warmed soy milk (you can also use water but soy milk will yield a softer and richer dough) and vegetable oil and mix to form a tacky dough ball. Scrape out the bowl well onto a work surface to knead.
  • You should be able to knead it without it sticking to your hands, if you find you need more, add about 1 tsp and knead until it's easier to work with. The more flour you have, the stiffer the dough will be. I personally prefer really tender bao, so I try to avoid adding any more than in the recipe.
  • Knead until you get a smooth dough that springs back when you poke it (about 5 minutes). Gather into a ball and tuck the seams in at the bottom to smooth.

  • Pour the warm milk into a small bowl along with 2 tbsp of the sugar - stir together until dissolved. Sprinkle over the yeast. Whisk lightly and leave to go slightly foamy.
  • Place all the ingredients for the Char Siu into a medium saucepan and place over a medium heat. Bring to the boil then turn off the heat immediately. Add your dehydrated soy slices, cover, and leave to rehydrate for at least 20 minutes. Once rehydrated, use a slotted spoon to remove the soy slices from the marinade and place them on a baking tray. Place the marinade back on the stove and cook over a medium heat, siring frequently, for around 5-7 minutes or until you have a nice, thick, glossy glaze. Remove from the heat and set aside.
  • Fire up the grill/broiler to full temperature. Using a pastry brush, brush some glaze over the slices of “pork”. Place the “pork” under the grill/broiler for around 3 minutes on each side, brushing with glaze as you flip. Remove from the grill.

  • Start by making the dough. Add ½ cup warm water, 1 teaspoon active dry yeast and 1/3 cup flour to a large bowl, and mix well. Set aside in a warm place for 15 minutes until the mixture foams up.
  • Mix the coconut oil into the foamy yeast mixture until you can’t see any solids and then mix in the remaining 1/2 cup of warm water. Add the last 2 2/3 cups flour, vital wheat gluten, sugar, and salt. Mix in until a dough forms. Knead for 10 minutes. You can add some flour to make it easier to work with, but don't worry if it's a bit sticky. Cover with plastic wrap and let it proof for 1 hour.
  • While that's happening, make the filling. Heat your wok or cast iron pan over medium-high heat and add the oil, onions and tofu. Cook for 3-5 minutes until one side of the tofu is just browned. Turn the mixture over with a rubber spatula and brown the other side. Feel free to add more oil if the mixture looks a bit dry.
  • Add the soy sauces, sugar, salt, sesame oil, hoisin sauce, and white pepper. Stir everything together and then add the water/vegetable stock and flour. Stir gently so as not to break up the tofu chunks.
