As a new vegan and a real picky eater I was struggling a little with the diet change. I heard cauliflower was a great substitute for chicken so I decided to make some fried chicken (or cauliflower) and boy was this delicious! My mother who is not vegan said "it was amazing and it didn't even taste like cauliflower!". Although this is not what I would consider a healthy recipe, it really gives that comfort food satisfaction.

1 1/2 cups unbleached white flour
8 tablespoons smoked paprika
6 tablespoons garlic powder
8 tablespoons cajun seasoning
3 tablespoons salt
water
2 cups vegetable oil
1 tablespoon coconut oil
1 head cauliflower

Steps:

  • First let's rinse the cauliflower make sure its nice and clean and then you can turn the oven on to 355ºf and just let that pre heat.
  • Then you can take that cauliflower to the cutting board and peel away all the green stems cratiling the cauliflower. After its all peeled you can break apart the head of the cauliflower Or you can cut it to keep the stems a little longer.
  • After the cauliflower is separated you can get the baking sheet and lay down some parchment paper. Once that's done all you need to do is put the cauliflower pieces on to the baking sheet and add 1 tablespooms of coconut oil over the cauliflower. Vegitable oil works just as well. Once the preheat is done you can stick them In the oven for around 15- 20 minute. They should not be Browning all over but it usually does have a few crispy edges on some.
  • Now while that's in the oven you can make your batter. First put the flour in the bowl. You'll need a larger bowl for this. Make sure all the clumps are broken up and then you can add the seasoning. Now when it comes to the seasoning the measurements you dont have to be exact. If you like spiciness you could add a little more Cajun and the same goes for the rest. Once all the seasoning is added just mix it all together.
  • Okay so now take a little bit of your mix about 1/4 cup and put it in a separate bowl. Once that's done just add a little water at a time till it's a creamy consistency. You'll know it's perfect if it's thick enough to stick to the fork or wisk but cant be picked up in clumps.
  • If your cauliflower is done you can take that out and prepare the oil but if not then I recommend waiting until the cauliflower is done to heat your oil. I heated my oil in a pot but if you have a deep fryer that will work too. Once the cauliflower is done you can heat the oil on medium heat and begin rolling the cauliflower in the creamy mix and then into the dry mix. I recommend not coating a lot at a time unless you plan on cooking them all at once. When the cauliflower is in the oil I let them cook for a minute some for two minutes depending on size. If you feel they aren't cooked long enough I recommend an extra minute to avoid a gooey inside.
  • After they are cooked then you are all done! Let them sit on a paper towel for a few minutes to get rid of excess oil! Hope you enjoy!

2 cups cauliflower florets (bite sized)
1/2 cup plain flour
3 tablespoons rice flour (`)
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
salt to taste
oil (for greasing the tray and few drops for baking)
2 teaspoons nigella seeds
2 teaspoons sesame seeds

Steps:

  • First off prep your cauliflower. Break them into bite size florets. Bring a large pot of salted to boil. Add the cauliflower florets and blanch for 5 minutes. Drain and set aside
  • Preheat your oven at 180 C/ 350 F. Combine flour, turmeric powder, salt, chili powder and garam masala powder in a small bowl.
  • Also add carom seeds and rice flour.
  • Add water gradually and make a thick batter.
  • Dip each blanched cauliflower floret into the batter and arrange on a greased baking tray. Sprinkle nigella and sesame seeds.
  • Bake in the hot oven for 15-20 minutes or until it becomes golden and crispy. You can flip the florets after 10-12 minutes to ensure thorough cooking.
  • Serve baked cauliflower bites with a sprinkle of raw onions, chopped cilantro leaves and a squeeze of fresh lemon or lime juice.

1 to 2 tsp ranch seasoning (Or use equal amounts of dried parsley, dill, thyme, garlic powder and onion powder.)

Steps:

  • In a bowl, mix everything except cauliflower for the batter. if the batter is too thin, add more flour or starch.
  • In another shallow bowl, mix everything under breadcrumb coating.
  • Dip cauliflower in the batter, then coat in breadcrumbs and place on parchment lined sheet.(use gloves or a fork. the batter is spicy)
  • Drizzle any remaining batter on the cauliflower. Spray oil.
  • Bake at pre-heated 425 degrees F / 220ºc for 25 minutes or until a toothpick goes through the cauliflower easily. Serve warm with dip.
  • Blend everything except celery seeds. Taste and adjust salt and flavor. Add celery seeds and blend for a few seconds. Chill and serve.

1 medium head of cauliflower (chopped into florets)
1/3 cup non dairy milk (such as almond or soy milk)
1 tsp hot sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 cup flour ((all purpose, or use rice flour for gluten-free))
3 tbsp starch ((I use cornstarch, arrowroot or potato starch works too))
1/2 tsp baking powder
1 tsp oil
1 tbsp oil or melted vegan butter
1/2 tsp cayenne (, use 1/4 tsp for less heat)
1 tsp black pepper (, use 1//2 tsp for less heat)
1 tsp sugar (or maple syrup)
1 tsp sweet paprika (, use more if omitting cayenne)
2 tbsp hot sauce
1/2 tsp garlic powder
1/2 tsp poultry seasoning (( or use sage + onion powder))
1 tbsp vinegar
1 tbsp water

Steps:

  • Chop the cauliflower and set aside. Line a baking dish with parchment. Preheat the oven to 425 deg F ( 220 C).
  • Make the batter by whisking all the ingredients under batter. The batter will start to thicken after half a minute, so work quickly.
  • Add cauliflower florets and toss well to coat. It will take a minute for the thick batter to coat the florets well. Some uncoated cauliflower edges are ok. Drop on parchment lined baking dish. Spray oil on top. (You can also sprinkle 2-3 tbsp breadcrumbs on the florets in the dish for extra crispyness).
  • Bake at 425 deg F for 25 mins (35 mins if serving the bites with hot sauce on the side) . In the meantime, make the nashville hot sauce mixture in large bowl. You can double this sauce easily for larger cauliflower.
  • Remove the dish from the oven and cool for 5 mins. Add the baked cauliflower to the sauce bowl and gently toss to coat.
  • Drop back into the baking dish and bake for 15 mins or longer at 400 deg F. Serve with cooling dips such as vegan ranch and some pickles.

1 Medium Cauliflower
1 cup flour + 3 TBS flour
1.5 cups panko breadcrumbs (more if necessary)
1 cup non-dairy milk (plus more if necessary)
2 teaspoons paprika
1 teaspoon turmeric
2 teaspoons dried oregano (or dried herb of your choice)
2 teaspoons Lawrys seasoning salt (okay to do without if you don't have it)
1 teaspoon salt
1 teaspoon pepper
Oil for brushing optional

Steps:

  • Preheat oven to 400F
  • Destem cauliflower and chop into small florets. You want to make sure the florets are small enough for bite-size pieces, anything larger won't come out right!
  • In a medium bowl, combine 1 cup flour, 1 cup non-dairy milk, and half of the spices [so 1 teaspoon of each]. Mix until well combined. The mixture should be like a thin pancake batter. If it is still too thick, add more milk.
  • On a large plate, add half the breadcrumbs and 3 TBS of flour as well as the remaining half of the spices. Use a fork to combine.
  • Put cauliflower florets into a huge bowl and then pour the wet mixture over the florets. Using a spoon or your hands, toss to combine so that every floret is coated in the wet mixture.
  • Now, using your clean hands, take each floret and dredge it through the dry panko breadcrumbs mixture. Then, place it on a lined baking sheet. NOTE: About halfway through, the breadcrumbs will become soggy and no-good. Throw them away and replenish with the remaining half of your breadcrumbs, more spices, and more flour. Continue until all cauliflower is on your baking dish.
  • Cook cauliflower for 15 minutes. After 15 minutes, take the cauliflower out and turn/flip it. At this point, you can use a pastry brush to coat each cauliflower bite with a little bit of oil or you can spray oil on. Feel free to skip this step if you are oil-free.
  • Cook for 15 minutes more and remove from the oven when the breading is golden brown.
  • Serve immediately with the dipping sauce of your choice. [1 part vegan mayo to 1 part ketchup or 2 parts maple syrup to 1 part dijon mustard]

Steps:
