VEGAN CANDIED SWEET POTATOES

This is another recipe I got from the 3ABN network cooking show. They are very good but quite different from the normal "candied sweet potatoes." My family are now preferring these to the old ones with the brown sugar and marshmallows. These are more healthy too which makes a mom feel good. cooking time and prep time does not include the time to bake the potatoes.

Number Of Ingredients 6

6 large sweet potatoes, baked with skins on (do not peel after baking_)
1 1/2 cups coconut milk
1/3-1/2 cup pure honey (you can use pure maple syrup if you prefer)
1 1/2 teaspoons ground coriander
1 teaspoon sea salt (you can use regular salt if you prefer)
chopped walnuts, to sprinkle on top

Steps:

  • Bake potatoes in skins and let cool to handle.
  • Slice in thick rounds (maybe 1/2 inch thick).
  • Place in baking dish that has been sprayed with non-stick vegetable spray.
  • Mix honey and coriander into the coconut milk until smooth and well mixed.
  • Pour over the potatoes.
  • Sprinkle with chopped walnuts.
  • Bake at 425 for 15-20 minutes.
  • They will absorb the liquid and dry a tad while they bake.

This is my family's recipe so it probably originate in Central Pennsylvania. There are other candied sweet potatoe recipes on Recipezaar but they all called for baking and this is stovetop preperation only. I don't have a cover for my cast iron skillet so I just lay a cookie sheet on top!

1/3 cup butter
2/3 cup brown sugar
6 medium sweet potatoes, cut into 1-inch chunks
1/2 teaspoon salt
1/3 cup water
2 pinches cinnamon

Steps:

  • In heavy skillet, heat brown sugar and butter on low til melted an blended.
  • Add sweet potatoes, turn until coated with sugar and butter.
  • Add water, salt and cinnamon.
  • Cover and cook slow on low about an hour or so.
  • They are done when fork goes in easy.

This recipe is a family favorite and it is the number one requested food at family gatherings. I have no idea where the recipe originally came from, but I know my Mother has been perfecting it for years. Now in our family there are two thoughts on the proper way to eat them. Some like them with butter to cut the sweetness and the others eat them plain. Your choice! Enjoy.

1 cup dark brown sugar
1/4 cup water
2 tablespoons butter
1/4 teaspoon salt
4 sweet potatoes, boiled & peeled

Steps:

  • Boil sweet potatoes in skins for 15 minutes, rinse with cool water and remove skins.
  • Mix brown sugar and water in sauce pan, and boil together for 5-minutes, stirring frequently forming a syrup.
  • Add butter and stir until dissolved. Add salt and remove from heat.
  • Cut sweet potatoes in quarters lengthwise with cut side down in a.
  • greased 9"x12" baking dish.
  • Poor syrup mixture over the sweet potatoes, cover them and bake at a 350° F oven for 60-minutes.
  • Baste sweet potatoes with syrup in the pan.
  • Turn them over every 10-minutes.
  • Remove from oven.
  • Optional: serve with or without butter.

4 medium sweet potatoes, peeled and cut into 1-inch slices
1/2 teaspoon salt
4 tablespoons butter
1 cup sugar
1/2 cup pecans, chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 cup pure maple syrup
4 -5 cups mini marshmallows

Steps:

  • Preheat oven to 375°F Butter a 9 x 13-inch baking dish.
  • In a medium saucepan, cover the potatoes with water; add the salt.
  • Boil the potatoes until tender. Drain.
  • Combine the potatoes, butter, sugar, pecans, cinnamon, cloves, nutmeg and maple syrup.
  • Mix well, but leave a few chunks of whole potato.
  • Pour into the baking dish and bake until browned, about 30 minutes.
  • Remove from the oven and top with mini marshmallows.
  • Continue to bake until marshmallows are lightly browned and melted; do not allow to burn.

  • Peel and slice the sweet potatoes into cubes. I got around 550g of cubes after peeling and slicing. You can see the photos in my blog post above for a complete step-by-step.
  • Heat a large wok frying pan over medium high heat with enough oil to submerge the sweet potatoes.Once hot, add in the brown sugar. Mix the sugar around until it melts and bubbles. The sugar will also float to the top. Add in the sweet potato cubes in the oil. These should immediately sizzle in the oil.
  • Flip around the sweet potatoes in the diluted sugar until they’re coated. Leave to cook for a few more minutes until brown and coated in the melted sugar. Mix them around every minute or so!
  • Transfer the sweet potatoes into a strainer to drain the oil and then immediately transfer the coated sweet potatoes on a lined tray or non-stick pan. Separate them from each other before they completely cool because these can easily stick together. Top with some sesame seeds, if desired.

  • Peel and chop sweet potatoes. You want them to be similar in size so that they cook at the same speed.
  • Put a steamer basket in a large pot, and fill water until it almost touches the basket. Place chopped sweet potatoes into the basket. Turn heat to medium and cover with a lid. Cook for 20 minutes.
