This is an adaptation of Messy Cook's Fantabulous Oatmeal Applesauce cookies. These are kind of soft but dense. They're a nice replacement for breakfast bars.

2 ripe bananas
1/2 cup unsweetened applesauce
1/2 cup honey (you could sub maple syrup)
2 teaspoons vanilla extract
2 cups rolled oats
1 cup white whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg (fresh grated)
1 large navel orange, zest of
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/2 cup chopped dried apricot

Steps:

  • Preheat oven to 350.
  • Mash bananas in large measuring cup. There should be just shy of 1 cup of mashed banana - add a little extra apple sauce if you don't have enough banana. Stir in apple sauce, honey, and vanilla. In a separate bowl, mix together flour, oats, baking soda, and spices. Add wet stuff and stir until incorporated. Fold in zest, walnuts, and fruit.
  • Scoop onto parchment paper-lined baking sheets. (I use an ice cream scoop.) Press them a little to flatten slightly. Bake about 15 minutes.

Steps:

  • Pre-heat oven to 350 degrees F and line a large baking sheet with parchment paper.
  • Add all dry ingredients to a large bowl and stir. Next, add all remaining ingredients and mix again until everything is combined.
  • Use a 1/4 cup scoop to scoop the batter onto the parchment paper. Pat the tops down a little and bake cookies for 15-17 minutes, until firm and cooked through. Let cool on a wire rack before eating.

scant 1/2 cup applesauce or mashed banana
1/4 cup almond or cashew butter OR allergy-friendly sub
1/2 tsp pure vanilla extract
1/16 tsp salt
2-3 tbsp mini chocolate chips or sugar free chocolate chips
2 1/2 tbsp freeze-dried raspberries OR 2 tbsp dried fruit or more chocolate chips
optional 2 tbsp sugar or pinch stevia ((see note below))
optional add-ins, (such as chia seeds, shredded coconut, etc.)

Steps:

  • *Especially if using banana, you can easily omit the added sweetener entirely for a wholesomely delicious taste that's like eating mini muffins in the form of a cookie. If you'd prefer more of a dessert taste, add extra sweetener as desired, starting with the listed 2 tbsp and going from there - if you want to use a liquid sweetener, just cut back on the banana or applesauce.Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter until smooth, then stir in all other ingredients until well-combined. Shape into cookies-I used a mini cookie scoop-and bake on a greased cookie sheet for around 15 minutes. Let cool 10 minutes before removing from sheet.
