VEGAN BISCUITS AND GRAVY



Vegan Biscuits and Gravy image

Flaky vegan biscuits with thick, peppery mushroom gravy! A flavorful, healthy, satisfying 30-minute vegan breakfast.

1 batch Best Damn Vegan Biscuits
2 Tbsp vegan butter or olive oil
2 cloves garlic ((minced))
1/4 cup diced white or yellow onion
1 cup thinly sliced mushrooms ((crimini or white button // chop finely for smoother texture))
2 Tbsp finely chopped walnuts ((optional))
1 pinch each salt and pepper ((plus more to taste))
1/2 tsp fresh sage or thyme ((optional // chopped))
1 1/2 Tbsp all-purpose flour
1/2 cup vegetable broth (DIY or store-bought)
3/4 - 1 cup unsweetened plain almond milk

Steps:

  • Preheat oven to 450 degrees F (232 C) and prepare biscuits. Add to baking sheet. Place in the oven once you get to step 6 (when adding the walnuts to the gravy).
  • Add butter or olive oil to a cast iron skillet or large saucepan over medium heat. Then add garlic, onion, mushrooms, and walnuts and season with a healthy pinch each salt and pepper. Cook for 3-4 minutes or until the onions are translucent. Near the end of cooking, add the herbs (optional).
  • Slightly reduce heat. Add flour and whisk to coat. Cook for 1 minute.
  • Then slowly whisk in broth then add almond milk 1/4 cup (120 ml) at a time, building up to desired thickness (it will continue thickening as it cooks). Season again with a pinch each salt and pepper.
  • Cook until thickened, stirring frequently, over medium-low heat. Taste and adjust seasonings as needed. I go heavy on the pepper out of preference.
  • Keep on low until you're ready to serve, adding more almond milk as needed if it gets too thick. (Bake biscuits for 10-15 minutes.)
  • To serve, split biscuits and top with gravy. Store leftovers separately - store gravy covered in the fridge for up to 3-4 days, and store biscuits (once completely cooled) at room temperature in a tupperwear or plastic bag. Reheat in a 350-degree F (176 C) oven to keep flakiness intact.

1 1/2 cups Bisquick Heart Smart mix
1/2 cup soymilk
2 teaspoons earth balance butter
2 tablespoons onions, diced
1 tablespoon flour
1 cup water, warmed
1 teaspoon better than bullion vegetable stock base
garlic powder
fresh ground black pepper
Braggs liquid aminos, amino acid
1 tablespoon cornstarch

Steps:

  • First make your biscuits by combining the bisquick mix and soymilk. Cook in a 450 degree oven for 8 minutes.
  • Melt butter, and cook onion until translucent.
  • While onion is cooking, dissolve your vegetable base in water, add garlic powder, black pepper and braggs amino acid. (I didn't measure the braggs, just poured some in to taste). Set aside.
  • When onion is done, add flour and begin to slowly add water mixture to form your gravy. Dissolve cornstarch in a little bit of cold water and add to gravy to thicken.
  • Pour gravy over biscuits and enjoy!

This dead simple recipe is an adaptation of one brought to The Times by Chloe Coscarelli, the vegan chef and cookbook author. These delicious biscuits are easy - no rolling or folding required - and the maple "butter" comes together in a snap.

2 cups all-purpose flour, plus extra for work surface
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup vegan margarine, plus extra for brushing
1/2 cup soy, almond or rice milk, plus more as needed
1 cup vegan margarine, at room temperature
1/4 cup maple syrup

Steps:

  • Heat oven to 425 degrees. Whisk together flour, baking powder and salt in a large bowl. Add margarine and cut it roughly into flour using a pastry cutter, until mixture is the texture of coarse meal with a few larger margarine lumps. Work quickly so the margarine does not melt. Add nondairy milk and stir with a wooden spoon until just combined. Do not overwork.
  • Transfer the dough to a lightly floured surface and pat into an oblong shape, about 1 inch thick. Using a 2-inch floured cookie or biscuit cutter, cut the biscuits out and place them on a baking sheet. Brush the tops lightly with melted margarine and bake for about 12 to 15 minutes, or until they begin to turn golden. Remove biscuits from oven immediately and transfer to a wire rack to cool.
  • Make the maple "butter": In a mixing bowl, using a whisk or electric mixer, whip margarine with maple syrup until light and fluffy. Refrigerate until serving.

  • In a medium sized pot heat oil over medium-high heat, add flour and stir for 2 – 3 minutes, until it turns light golden brown. Add the garlic powder, poultry seasoning and nutmeg, mix well, add in the sausage and stir another minute or so. Mixture will form a ball of sorts. Slowly add the milk and continue to stir, bring just to a boil, reduce heat to medium and continue to cook, stirring constantly, until gravy has thickened to desired consistency, about 10 minutes. Use the back of the spoon/fork to help break up the sausage if needed. Gravy will thicken a bit more as it cools. Season with plenty of pepper and salt to taste. Set aside with lid on, or slightly askew stirring every now and then until ready to serve. If gravy cools too much, heat over low until warmed.
  • Preheat oven to 425 degrees F. Lightly flour a flat surface (use a cutting board, marble slab, etc). Leave a little extra flour on the side for your fingers and the biscuit cutter. Line a baking sheet with a silpat or lightly grease with oil.
  • In a medium size mixing bowl, add the flour, baking powder, baking soda and salt, mix well to combine. Add the chilled butter and cut it into the flour using a pastry blender or the back of a fork. You’ll know it’s ready when the butter is about pea sized and the mixture is crumbly looking. Add in the milk and mix until just combined, making sure there are no flour patches. The dough should form into a rough ball, it should be tacky not sticky. If mixture is too wet & sticky, add a little extra flour and mix just a needed.

  • Begin by making the buttermilk biscuits according to these instructions. Once the biscuits are in the oven, start making the gravy.
  • Break apart the sausage into small pieces and add to a heavy bottom pan set over medium-high heat. I recommend using a cast iron skillet. Cook the sausage for 3-5 minutes, until it is brown on all sides. The time will depend on the type of vegan sausage you use.
  • Slowly add the flour, stirring occasionally, until the flour is completely absorbed into the sausage. Turn the heat to medium-low and slowly add the non-dairy milk, stirring constantly. Stir for 5-10 minutes until the gravy begins to be noticeably thicker. It should clear the bottom of the skillet when stirred. Once they gravy has reached your desired thickness, remove from heat. Note: if your gravy is too thick, you can add an additional 1/4 to 1/2 cup of milk.
