HOMEMADE SEITAN BARBECUE (BBQ) RIBS - VEGAN
This is an original recipe by Susan V from fatfreevegan.com. It's so easy to make and incredibly yummy! You can buy Vital Wheat Gluten at most grocery stores (look for Bob's Red Mill). I did not have nutritional yeast so I omitted this ingredient with no lack of taste. These were "grilled" on a griddle and it worked out great. My meat eater hubby loved it as did the kids. - Preheat the oven to 350°F and lightly spray an 8x8-inch baking dish with canola oil.
- Mix the first 5 ingredients together in a large bowl. Mix the water with the nut butter, Liquid Smoke, and soy sauce and add it to the dry ingredients. Stir to mix well in the bowl for a couple of minutes.
- Put the dough into the baking dish and flatten it so that it evenly fills the pan. Take a sharp knife and cut it into 8 strips; then turn the pan and cut those strips in half to form 16 pieces.
- Put it in the oven and bake for 25 minutes. While it's cooking prepare your grill pan or grill.
- Remove it from the oven and carefully re-cut each strip, going over each cut to make sure that the ribz will pull apart easily later. Generously brush the top with barbecue sauce. Take it to the grill pan or grill and invert the whole baking dish onto the grill (or use a large spatula to lift the seitan out, placing it sauce-side down on the grill). Brush the top of the seitan with more sauce.
- Watch it closely to make sure that it doesn't burn. When sufficiently brown on one side, turn over and cook the other side, adding more sauce, if necessary. When done, remove to a platter and cut or pull apart the individual ribs to serve.

- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- Combine vital wheat gluten, onion powder, garlic powder, and paprika in a large bowl.
- Mix 1/2 cup hot water and bouillon cube together in a small bowl. Pour 1 1/2 cups water and the bouillon mixture over the vital wheat gluten mixture and mix together to form a dough.
- Dust work surface with flour. Turn dough out onto work surface and pat into a 6-inch square.
- Heat tahini in a small microwave-safe bowl until warmed through, about 30 seconds. Spread half of the tahini over the dough with your fingers. Flip dough over and repeat with remaining tahini on the other side. Cut the dough into 1x3-inch strips. Transfer strips to baking sheet.
- Bake in the preheated oven until golden brown on the bottom, 10 to 15 minutes. Flip strips and bake until second side is golden brown, about 10 minutes more. Remove from oven and coat with barbecue sauce. Return to the oven and bake until flavors combine, about 5 minutes more.

- Drain and wash your jackfruit in a colander. Press the hard ends of the jackfruit and separate any seeds you find under the cold water.
- Add your washed jackfruit along with vegetable stock, soy sauce to a small or medium sized saucepan and use cold water to cover the jackfruit. I used around a cup of water for my saucepan. Bring to a boil, then reduce heat and allow to simmer for 20 minutes.
- Now in the bowl of a stand mixer or mixing bowl add gluten, protein powder, mushroom seasoning, onion powder, garlic powder, smoked paprika, and cumin. Mix the dry ingredients together.
- Once the jackfruit is done simmering, drain the liquid from your jackfruit. I poured the jackfruit through a colander into a mason jar.

- Heat 2 teaspoons of the olive oil in a medium skillet on medium-high heat. Add the mushrooms and cook until they're soft and browned, approximately 5 minutes. Let cool.

- Add all the BBQ sauce ingredients (everything expect the tempeh) to a saucepot and place it over medium heat. Bring to boil, stirring occasionally. Once boiling, reduce the heat to low and let cook until thick, stirring occasionally. This should take about 20-25 minutes. Once it coats the back of a wooden spoon, you BBQ sauce is ready.
- Cut the tempeh into thin strips (between 1/2" and 1" thick) and place them on the prepared baking tray. Brush each strip gnerously with the bbq sauce and bake for 15 minutes.
- Remove from oven and flip. Add more sauce to the other side of the tempeh and bake for another 20 minutes or until you get a nicely browned color. The edges of the tempeh should look caramelized. Brush extra bbq sauce over to top for serving.
