Steps:
- Preheat the oven to 350° F.
- Grease a standard loaf pan with vegetable oil or spray.
- Mix all the dry ingredients in a bowl and gently stir.
- In a separate bowl, mix the applesauce, brown sugar, vanilla, and oil until evenly combined.
- Mash the bananas finely with a fork in a separate bowl and add to the
- wet ingredients.
- Gently fold in the bowl of dry ingredients to the wet ingredients until everything is evenly combined. Do not over-mix.
- Place the banana bread in the preheated oven for 60-70 minutes. Insert a toothpick into the loaf to see if it is ready. If the toothpick does not come out clean, bake for a few more minutes.
- Leave the banana bread in the loaf pan for 10 minutes to settle, then transfer to a wire cooling rack and allow to cool completely. Enjoy!

- Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
- Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

- Preheat the oven to 350°F (180°C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper, leaving some overhang on the long sides so it will be easy to lift out the bread, and spray again.
- Add the butter to a medium nonstick pan over medium heat. Cook, stirring occasionally, until the butter turns amber brown and smells nutty, about 3-4 minutes. Watch carefully so the butter does not burn. Remove the pan from the heat and set aside to cool for 10-15 minutes.
- Add cooled brown butter and brown sugar to a large bowl. Beat with an electric hand mixer on medium speed until evenly combined, about 1 minute. Add the egg and beat until light and fluffy, 3-4 minutes.
- In a medium bowl, combine the mashed bananas, sour cream, and vanilla and mix with a rubber spatula until well combined.
- In a separate medium bowl, whisk together the flour, salt, baking soda, and cinnamon.
- Alternate adding the flour mixture and banana mixture to the butter mixture, starting and ending with flour and folding with a rubber spatula between each addition until just incorporated. Fold in the chocolate chunks.
- Pour the batter into the prepared loaf pan and smooth with an offset spatula, then sprinkle the turbinado sugar on top.
- Bake the banana bread until golden brown and a toothpick or cake tester inserted in the center comes out clean, 60-70 minutes. Set the loaf pan on a wire rack to cool for at least 1 hour, then lift out the banana bread and slice.

- Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
- Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
- Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
- Bake for another 20 minutes, or until a skewer comes out clean.
- Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

I adapted this yummy recipe from a muffin recipe in ExtraVeganZa. It takes a while to bake but is worth it and a great way to use up bananas getting ripe. I was looking for an egg-free banana bread since I wanted baked goods and had no eggs...this came out great! You can use milk-free chocolate chips to keep it truly vegan.

- Put all the ingredients, in the order listed, into a food processor that can hold at least 4 cups. Vanilla soymilk works well if you reduce the vanilla to 1 tsp, but I like to mix the 2 tsp with plain soymilk.
- Whiz the mixture for about 20-30 seconds or until most of the bananas have liquefied. If adding anything extra like walnuts or chocolate chips, stir them in by hand.
- Pour into a 9 x 5 loaf pan lined with parchment paper, scraping the sides down to make sure all the batter was poured inches.
- Bake at 350F for 60-70 minutes or until an inserted fork comes out clean. Let cool at least 20 minutes prior to eating.

- Preheat oven to 325 degrees Fahrenheit.
- In a large mixing bowl, mix flour, sugar, baking soda, and salt.
- In medium bowl mash together the bananas, oil, apple sauce, and milk.

I like this recipe because it is easy to make and has a stronger taste of banana than most banana breads. It is also a low calorie, low fat recipe. It creates a tasty, chewy on the edges banana bread. This recipe comes from a Better Homes and Gardens Cookbook titled "New Dieter's Cookbook". You can also make this vegan by substituting one medium banana mashed/beaten till liquidy or 1 tablespoon ground flax seed plus 3 tablespoons water for the egg whites. It is very delicous and moist any way you decide to make it.
