VERY BERRY BAKED OATMEAL
Berry baked oatmeal is delicious and brimming with ripe berries. Make this for the week ahead and warm up for a quick and easy breakfast!

Steps:
- Preheat oven to 350F. Lightly grease the baking dish.
- Add 3/4 of mixed berries to the bottom of the baking dish.
- In a large bowl add oatmeal, cinnamon, baking powder, salt. Mix well. Sprinkle the oatmeal mixture evenly over berries.
- In the large bowl add 1 egg and beat it gently. Add almond milk, maple syrup, melted butter and vanilla. Mix well. Gently pour over top of oatmeal mixture and jiggle to help the liquid move through the oatmeal throughout.
- Add remaining mixed berries evenly over the oatmeal mixture. Bake for 35-40 minutes or until oatmeal has cooked and turned a subtle golden brown. Remove from oven and serve.

VEGAN ALMOND BERRY BAKED OATS

Steps:
- Heat the oven to 190C/170C fan/ gas 5. Tip the oats into a heatproof bowl, then pour over 450ml boiling water from the kettle. Stir well, then stir in the vanilla and almond milk.
- Mash the banana, then spread over the base of a medium baking dish (ours was a 20 x 28cm oval) and stir in the frozen fruit to fully combine. You want the banana to sweeten the berries, but you can add 1 tsp maple syrup, if you like. Pour over the oat mixture and scatter with the almonds. Bake for 30-40 mins until set and the fruit juices are bubbling at the edges of the dish. Scoop into bowls and serve with a little extra milk, if you like.

- Heat the oven to 200C/180C fan/gas 6. Mix all of the ingredients together in a large bowl.
- Tip the mixture into a 2-litre ovenproof dish, then bake for 30-35 mins until piping hot in the middle. Serve warm with a little milk or yogurt, honey and extra blueberries, if you like.

- First, preheat your oven to 375°F and lightly grease a 9x9 baking dish with coconut oil or vegan butter. When the oven is ready, toast the chopped pecans on a baking sheet for 3-4 minutes (careful not to burn them).
- In the meantime, mix 2 tbsp of ground flaxseed with 6 tbsp of water in a small bowl. Set aside. Then, in a large mixing bowl, whisk together rolled oats, baking powder, cinnamon, salt, and sugar.
- In a third bowl, melt vegan butter or coconut oil, and add this along with the soy milk, flaxseed mixture, mashed banana, toasted pecans, and vanilla. Stir until combined.
- Next, cover the bottom of your baking dish generously with frozen berries, about 1 ½ cups. Layer the oatmeal mixture over the bottom berry layer, then place the remaining berries evenly across the top of the oatmeal.
