2 tablespoons olive oil
3 cups chopped yams
2 large onions, chopped
2 cups chopped cabbage
2 tomatoes, chopped
6 tablespoons flaked coconut
3 cloves garlic, minced
3 cups tomato juice
1 cup apple juice
1 teaspoon ground ginger
¼ teaspoon cayenne pepper
1 pinch salt
1 large green bell pepper, chopped
½ cup peanut butter

Steps:

  • Heat olive oil in a Dutch oven over medium-high heat. Cook and stir yams, onions, cabbage, tomatoes, coconut, and garlic in the hot oil until the vegetables are slightly browned, 7 to 10 minutes.
  • Pour tomato juice and apple juice into the Dutch oven; season with ginger, cayenne pepper, and salt. Reduce heat to medium-low and cook at a simmer for 1 hour.
  • Stir bell pepper and peanut butter into the mixture. Cook, stirring regularly, until the peanut butter is melted completely into the soup, about 30 minutes more.

1 tablespoon extra virgin olive oil (optional*)
1 onion, finely chopped (about 2 cups)
1 jalapeno, cored and finely chopped (about 2 tablespoons)
4 garlic cloves, minced (about 2 tablespoons)
2-inch knob fresh ginger, peeled and minced (about 2 tablespoons)
2 teaspoon cumin
1/4 teaspoon cayenne
3 tablespoons tomato paste
1 large (1-lb) sweet potato, peeled and cut into 1-inch cubes (about 2 cups)
1/2 cup unsweetened creamy peanut butter
4 cups vegetable broth
1 cup water
1 bunch collard greens, stems removed and chopped
fresh cilantro, cooked brown rice, roasted peanuts and lime juice for serving

Steps:

  • In a large pot over medium heat, warm the olive oil. Add the onion, sprinkle with salt and cook for 3 minutes, until translucent. Add the garlic, jalapeño, ginger, cumin and cayenne then stir together and cook for about 2 minutes. Next add the tomato paste and stir together. Add the sweet potato, peanut butter, vegetable broth and water. Stir together then bring to a boil. Reduce heat to medium-low, cover and cook for 15 minutes. Add the chopped collard greens to the pot, stir, then cover and continue to cook for another 15 minutes, until sweet potato is tender. Using the back of the spoon, mash some of the sweet potato to help thicken the broth. Boil uncovered for 5 minutes. Serve warm with rice and garnish with cilantro, peanuts, and lime juice. Enjoy!

Spicy, nutty and delicious West African peanut soup, inspired by my time in Ghana. A hearty stew with incredible depth of flavor that can even be made nut-free using sunflower seed butter! Naturally gluten-free too.I know the ingredients list looks long, but most are pantry items and it really comes together easily :).

1 and 1/2 tbsp coconut oil
1 large yellow or white onion (chopped)
3 cloves garlic (minced)
1/2 inch fresh ginger (minced)
2 small chili peppers (minced (I recommend red chilis, but use jalapeno if needed))
1 and 1/2 tsp paprika
1 tsp ground coriander
1/4 tsp white pepper ((or use regular pepper))
1 large sweet potato (peeled and cubed (about 1.5 cups) or use carrot or squash)
2 tbsp tomato paste
14 oz. crushed tomatoes ((or use 1 and 1/2 cups diced fresh tomatoes))
4 cups low-sodium vegetable broth
1/2 cup natural peanut butter
2 bay leaves
1 sprig rosemary ((optional))
1 large sprig fresh thyme ((optional))
1/2 bunch collard greens (cut into 1-inch slices (about 2.5 cups) or use kale)
2 tbsp vinegar (divided)
salt and pepper ((to taste, for serving))
fresh cilantro ((for serving))

Steps:

  • Warm the oil in a large pot. When shimmering, add the onion, garlic, ginger, and chilis with a pinch of salt, and cook on medium heat until softened, about 5 minutes. Add the paprika, coriander, and pepper, and stir. Cook for about 60 seconds until fragrant.
  • Add the cubed sweet potato, tomatoes and tomato paste, and cook for about 5 minutes, stirring occasionally, or until the tomatoes are starting to break down and release their juices.
  • Add the broth and peanut butter, stir well, and bring to a boil. Reduce heat to a simmer and add the bay leaves, rosemary and thyme sprigs, and collard greens. Partially cover and cook for about 20 minutes, stirring occasionally, until the collards are tender and the sweet potato is soft. Stir in half of the vinegar.
  • Remove the bay leaves and fresh herb sprigs. Season to taste with salt (this dish generally needs a lot) and pepper, and add the rest of the vinegar if more acidity is needed. Serve with chopped fresh cilantro or parsley, and accompanying starch of choice such as potatoes or rice.

1 tablespoon olive oil or 1/3 cup water (for water saute)
1 large onion, diced
5 - 6 cloves garlic, minced
2 - 3 tablespoons ginger, grated
1 tablespoon ground coriander
1 - 2 chili peppers (jalapeno, serrano, scotch bonnet or habanero peppers), diced*
2 - 3 lbs. sweet potatoes, peeled and cut into 1/2 inch cubes
1 can (15oz.) diced tomatoes, with juices
4 cups low-sodium vegetable broth or water (or combo)
3/4 cup natural peanut butter (creamy or smooth)
5 oz. fresh spinach, chopped if not using baby spinach**
2 small lemons, juice of
mineral salt & pepper, to taste
fresh cilantro, chopped
peanuts, crushed or whole
dash of hot sauce (sriracha, franks hot sauce or red pepper flakes), optional
grain of choice (rice, quinoa or couscous), optional

Steps:

  • In a large pot, heat oil or water over medium heat, add the onion, garlic, ginger, and chili peppers and saute for 5 minutes stirring frequently.
  • Add the sweet potatoes, tomatoes, spices and liquids, and bring to a boil. Reduce heat and simmer for 15 minutes, or until sweet potatoes are fork tender.
  • Turn off heat and stir in the peanut butter, and finish with the spinach and lemon juice. Soup will thicken upon cooling. Season with salt & pepper to taste.
  • Serves 4 - 6
  • Serve in individual bowls with optional grain of choice (this cilantro lime rice would be great) and garnish with cilantro and peanuts. Soup pairs wonderfully with naan bread for soaking and dipping!
  • Leftovers will keep for 5 days in a covered container in the refrigerator. To store longer, keep in the freezer for up to 2 months in freezer friendly containers or baggies.

2 tablespoons oil
1 tablespoon curry powder
2 medium onions
2 carrots
4 celery ribs
2 teaspoons garlic, minced
2 lbs large sweet potatoes (about 2 large ones)
2 cups low sodium vegetable broth
1 (28 ounce) can whole tomatoes
1 teaspoon salt, divided
1/4 teaspoon black pepper
1/4 teaspoon cayenne
1/2 cup chunky peanut butter
3 tablespoons peanuts, roasted
1/2 cup light coconut milk

Steps:

  • Prepare in advance your sweet potatoes by peeling them and chopping them into chunks. Dice your carrots, celery and onion. Drain and quarter your tomatoes from the can.
  • Heat 2 tablespoons of peanut oil in a large Dutch oven or stockpot over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. Add onions, carrots and celery and cook, stirring occasionally, for 2 minutes. Add garlic and cook for 1 more minute. Stir in sweet potatoes, broth and tomatoes, and bring soup to a boil. Simmer, covered, 20 to 30 minutes.
  • Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, peanuts, cayenne, peanut butter, and coconut milk to the soup, stirring to combine. Bring mixture to a simmer and cook for 20 minutes.
  • Serve hot; makes 6 very hearty servings.
