4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 ounces good Roquefort cheese
1 tablespoon chopped scallions
8 (1-inch-thick) veal chops
Kosher salt
Freshly ground black pepper

Steps:

  • Place the butter and Roquefort cheese in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed until smooth. Add the scallions and mix until combined. Cut a strip of parchment paper 4 1/2 inches wide and place the mixture on the short end of the paper. Roll into a log about 1 inch in diameter, rolling the parchment paper around the butter mixture. Chill.
  • Sprinkle both sides of the veal chops generously with salt and pepper. Allow to sit at room temperature for 15 to 30 minutes. Meanwhile, prepare a charcoal grill with hot coals. When the coals are hot, grill the chops for 6 to 8 minutes on each side, until almost cooked through. Remove to a platter and cover with aluminum foil. Allow to rest for 15 minutes. Serve with 1 or 2 slices of cold Roquefort butter on each chop.

Very assertively-flavored steak recipe that I learned about 12 years ago when I was learning to cook to impress my now-husband. Adapted from Betty Crocker's New International Cookbook. This Spanish-influenced recipe can tend to be somewhat on the salty side, so be careful to use unsalted butter to saute the steaks, and a good-quality, not-overly-salty blue cheese in the sauce. Serve simply, with a lightly-dressed salad, good crusty bread, and a nice red wine.

8 ounces good blue cheese, crumbled
1 -3 garlic clove, chopped
2 tablespoons dry white wine (drinking quality)
1 dash ground red pepper
2 tablespoons unsalted butter
4 small New York strip steaks (about 1 inch thick, about 2 pounds) or 4 small rib eye steaks (about 1 inch thick, about 2 pounds)
fresh ground pepper
1/4 cup water
chopped parsley (for garnish)

Steps:

  • In a medium skillet, combine cheese, garlic, wine, and red pepper over low heat.
  • Stir frequently until cheese melts.
  • Remove from heat and keep warm.
  • In large skillet, melt butter over medium-high heat, and cook steaks to your liking, turning only once.
  • (About 4- 5 minutes per side will result in steak done to about medium, depending on your cook top).
  • Sprinkle pepper over steaks, remove from skillet and keep warm.
  • Add water to skillet and heat to boiling, stirring constantly to loosen browned bits.
  • Boil 2 minutes, then stir pan juices into cheese mixture.
  • Pour over steaks and sprinkle with parsley.

1 pound sliced fresh mushrooms
1 small onion, chopped
1 garlic clove, minced
1/2 cup white wine or reduced-sodium chicken broth

1/4 cup water
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet coated with cooking spray, cook veal in oil over medium heat until no longer pink, 2-3 minutes on each side. Remove and keep warm. , Add mushrooms, onion and garlic to the skillet; cook over medium-high heat until tender, 5-8 minutes.   • Melt butter in heavy large skillet over high heat.
  • Season veal with salt and pepper.
  • Working in batches, add veal to skillet and saute until just golden brown, about 2 minutes per side.

  • Bring to boil, scraping up any browned bits.
  • Add both stocks.

2 pounds veal, cut into thin even slices
1/2 cup butter
3 tablespoons sherry or Marsala
1 tablespoon flour
1/2 cup milk
1/2 cup water
1 bouillon cube
Dash of nutmeg
Freshly ground pepper to taste
1/2 pound Swiss or Gruyere cheese, sliced very thin

Steps:

  • Pound the veal very lightly until very thin. Heat six tablespoons of the butter in a skillet, add the veal and cook until brown on both sides. Add the sherry and cook a few seconds longer. Remove from the heat.
  • To make sauce, melt the remaining butter in a saucepan, add the flour and stir with a wire whisk until blended. Meanwhile, bring the water and milk to a boil and dissolve the bouillon cube in the mixture. Add all at once to the butter mixture, stirring vigorously with the whisk until the sauce is thickened and smooth. Season with nutmeg and pepper.
  • Arrange the veal in a single layer in a shallow baking dish. Scrape loose the brown particles from the skillet and pour drippings over the meat. Top with the sauce and arrange cheese over all. If desired refrigerate several hours. Before serving, heat in a preheated hot oven (425 degrees) until the cheese melts and turns brown, about twenty minutes.

1 teaspoon unsalted butter, softened

two 1-inch-thick rib veal chops (about 1/2 pound each), frenched if desired

Steps:

  • In a small bowl mash together the Saga Blue, the butter, the lemon juice, the parsley, and salt and pepper to taste until the mixture is smooth. Transfer the mixture to a sheet of wax paper, roll it into a log, and chill it for 15 minutes.
  • In a skillet, preferably cast-iron, heat the oil over moderately high heat until it is hot but not smoking, in it sauté the chops, patted dry and seasoned with salt and pepper, for 5 to 6 minutes on each side for barely pink meat, and top each chop with half the Saga Blue butter.

2 1/2 pounds leeks (white and pale green parts only), halved lengthwise, sliced into 1/2-inch pieces (about 6 cups)
1 tablespoon sugar

Salt and freshly ground white pepper
2 1/2 cups chicken stock or canned low-salt broth, boiled until reduced to 1/2 cup
Veal
8 1-inch-thick veal loin chops (about 8 ounces each), fat and sinew trimmed
Dried thyme, crumbled
Freshly ground pepper
3 tablespoons unsalted butter
1/4 cup brandy
1/4 cup whipping cream
6 tablespoons unsalted butter, cut into 6 pieces, room temperature
1 1/2 ounces Roquefort cheese, crumbled (about 1/2 cup)
Salt and freshly ground white pepper

Steps:

  • For sauce: melt butter in heavy large skillet over medium heat. Add leeks, sugar and thyme. Season with salt and pepper. Cook until liquid evaporates and leeks begin to soften, stirring occasionally, about 10 minutes; do not brown. Transfer all but 1 cup leek mixture to bowl and reserve for garnish. Stir remaining leeks, reduce heat to low and cover. Cook until leeks are very soft and lightly caramelized, stirring occasionally, about 20 minutes.
  • Puree caramelized leeks and stock in blender until smooth. (Can be prepared 1 day ahead. Cover reserved leeks and sauce separately and refrigerate.)
  • For veal: Preheat broiler. Season veal with thyme and pepper. Melt 3 tablespoons butter in heavy large skillet over medium heat. Add veal and cook until just pink inside, about 4 minutes per side. Transfer to plate and cover to keep warm. Add brandy to skillet and cook until liquid is almost evaporated, scraping up any browned bits. Add cream and leek sauce and bring to simmer. Whisk in 6 tablespoons butter 1 piece at a time. Add cheese and any accumulated meat juices and whisk until smooth. Season with salt and pepper. Divide sauce among broilerproof plates. Top with veal and sprinkle reserved leeks over. Broil until leeks are heated through, about 1 minute.

1 cup all-purpose flour
1 teaspoon salt

1 pound mozzarella cheese, shredded
½ cup sherry wine
½ cup butter
3 tablespoons all-purpose flour
3 tablespoons sherry wine
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together the 1 cup flour, salt and white pepper in a shallow dish. Set aside. Heat olive oil in a large skillet over medium-high heat. Coat veal medallions with the flour mixture and shake off the excess. Fry for about 1 minute on each side, just to brown but not cook through.
  • Arrange the veal in a 9x13 inch baking dish. Sprinkle the mozzarella cheese over the top. Clean out the pan from the veal, and melt butter with 1/2 cup of sherry over low heat. In a small bowl, mix the 3 tablespoons flour with 3 tablespoons sherry, and whisk into the pan. Continue whisking over low heat until the mixture is thickened. Season with salt and pepper to taste. Pour the sherry sauce over the veal and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, until cheese is melted and gooey. Sauce will be runny. Soak it up with Italian bread!

Season sauce to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate. Rewarm sauce over low heat before serving.) Prepare barbecue (medium high heat). Combine cayenne pepper, thyme, garlic powder, white pepper, black pepper and salt in a small bowl. Brush both side of veal chops with oil. Sprinkle spice mixture over both sides of veal chops. Grill to desired doneness, about 4 minutes per side for medium-rare. Arrange 1 veal chop on each plate. Spoon blue cheese sauce over and serve.
