CHICKEN CACCIATORE

Steps:
- Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
- In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
- Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.
COWBOY MEATLOAF AND POTATO CASSEROLE
Steps:
- Preheat the oven to 375 degrees Fahrenheit. Grease a 9-inch square baking dish with baking spray.
- In a large bowl, stir together the ground beef, onions, bread crumbs, barbecue sauce, beaten egg, and chili powder just until well-combined. Press the meat mixture into the bottom of the greased baking dish.
- Bake it for 20 to 25 minutes, or until cooked through. Test for doneness with a meat thermometer. It should read 160 degrees Fahrenheit.
- While baking, microwave the potatoes according to package instructions in a medium, microwave-safe bowl. Mix in the butter, milk, parsley, and garlic powder until well-combined. Gently mix in the bacon bits and French-fried onions.
- Remove the dish from the oven and turn on the broiler. Top the meat mixture with the potato mix, followed by the shredded cheese.
- Place the baking dish 4 inches from the heat. Broil for 3 to 5 minutes or until the cheese melts. Let the cowboy meatloaf rest for 10 to 15 minutes before slicing. Serve and enjoy!

COWBOY MEATLOAF AND POTATO CASSEROLE

- 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
- 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
- 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
- 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.

This is a recipe I adapted from the pampered chef. It makes a nice side dish or is a welcome addition to an appetizer tray. Easy to make and kid-friendly.

- Preheat oven to 450.
- Slice potatoes evenly, about 1/4" thick.
- Spray baking pan with no stick spray.
- Place potatoes on pan and bake turning once until golden, about 15-20 minutes Combine bacon, cheese, and green onions.
- Remove potatoes from oven.
- Brush tops with barbecue sauce.
- Evenly spread cheese topping blend on top.
- Return to oven and bake until cheese is melted.

- Spray a 9x13" pan with nonstick cooking spray, set aside.
- In a large nonstick pan, heat the oil, add the beef, bell peppers and scallions. Cook, stirring as needed, until the beef is browned and the vegetables are softened, 6-8 minutes.
