Steps:
- Combine sugar and cinnamon in shallow bowl and stir to mix, set aside.
- Cut each peach in half around crease to the stone.
- Twist halves in opposite directions to separate them.
- Pry out stone with spoon and discard.
- Lightly brush each peach half on both sides with melted butter.
- Have peaches and cinnamon sugar by grill side, ready for grilling.
- Set up grill for direct grilling and preheat to high.
- Brush and oil grill grate.
- Dip each peach in cinnamon sugar to coat both sides, brushing off excess.
- Place halves on grill and grill until caramelized (dark golden brown), 3 to 6 minutes per side, turning with tongs.
- Transfer to plates and serve peaches with whipped cream or ice cream.

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
SPICE RUBBED GRILLED DUCK BREAST WITH GRILLED PEACH AND GOAT CHEESE SALAD
Steps:
- Heat grill to medium. Put orange juice in a medium saucepan and cook until reduced by half. Add the blackberries and cook for 2 minutes. Strain the mixture into a bowl. Place the blackberries in another bowl and set aside.
- Mix together all the spices and rub the skin side of the duck with some of the rub. Season breasts with salt and drizzle with oil. Grill, rub side down until a crust forms, 3 to 4 minutes. Turn the breasts over and continue cooking to medium doneness, brushing with some of the orange-blackberry glaze every minute or so. Transfer to a large platter.
- Brush the cut side of the peaches with oil and season with salt and pepper. Grill the peaches, cut side down until slightly charred about 2 minutes. Turn over and grill for another minute. Arrange cut side up around the duck, or on another platter. Spoon some goat cheese into the peach hollows, scatter the arugula and pecans over, and then some of the cooked blackberries. Serve the remaining berries with the duck and peaches, if desired.

- Bring vinegar to a boil in a small saucepan over medium-high heat. Reduce heat, and simmer until vinegar is reduced to 2 tablespoons (about 2 minutes). Remove from heat; stir in honey. Cool to room temperature.
- Sauté the prosciutto in a nonstick skillet over medium-high heat for two minutes or until crisp. Set aside to cool to room temperate. Crumble.
- Prepare grill to high heat.
- Place peach wedges on grill rack coated with cooking spray; grill 30 seconds on each side or until grill marks appear but peaches are still firm. Remove from grill; set aside.
- Combine oil, pepper, and salt in a large bowl, stirring with a whisk. Add arugula, tossing gently to coat. Arrange arugula mixture on a platter. Top with peach wedges and prosciutto. Drizzle with balsamic syrup; sprinkle with cheese.

VANILLA SPICE-RUBBED GRILLED PEACHES WITH FRESH GOAT CHEESE
These are like little warm peach pies--without the crust! You can serve the peaches with vanilla ice cream instead of the goat cheese. Adapted from a recipe by chef Tom Douglas by way of the Chicago Tribune.

- Prepare a grill for medium direct heat.
- For the rub, put the sugar in a small bowl. Scrape the seeds from the vanilla bean into the sugar using the tip of a sharp paring knife (tuck the bean into a bowl of sugar for vanilla sugar).
- Mix the vanilla seeds with the sugar, using the tips of your fingers to break up clumps. Stir in the pepper and cinnamon.
- Cut the peaches in half; remove the pits. Brush the cut sides lightly with oil; sprinkle generously with the spice rub (you will not use all the spice rub -- reserve the remaining for another use).
- Place the peaches, cut sides up, on a lightly oiled grill; grill until the peaches are starting to soften and the skin side is marked by the grill, about 3 minutes.
- Turn; grill until the sugar is nicely golden and caramelized, about 2 minutes (move to a cooler part of the grill if they are browning too quickly).
- Turn the peaches cut-side up again; place 1 tablespoon of the goat cheese in the center of each.
- Grill peaches until goat cheese is warmed and just beginning to melt, about 1 minute. Transfer to a platter.
- Sprinkle the goat cheese with a little more of the spice rub.
- Serve hot.

This recipe was in the newspaper from Allrecipes.com. I am not sure how to classify this dish. It may be a dessert since there is sugar and cheese or it could be a salad. "A rose by any other name..." * UPDATE: I saw Bobby Flay make this on a TV show yesterday and he added tiny greens on top of the peach halve drizzled olive oil and the balsamic and the blue cheese and served it along side pork chops so it seems like a side dish!

- In a saucepan over medium heat, stir together the sugar, balsamic vinegar .
- Simmer until liquid has reduced by half, it should become slightly thicker.
- Remove from heat and set aside.
- Preheat grill to medium-high heat.
- Place peaches cut side down onto the grill, and cook for about 5 minutes, or until the flesh is toasted.
- Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2-3 minutes.
- Transfer the peach halves to individual dishes and drizzle with the remaining glaze.

- Peel, halve, and pit peaches.
- Preheat grill to high. Combine lemon juice and vegetable oil in a bowl. Add peaches; toss to coat. Place peaches (with liquid) on a large piece of parchment-lined foil.
- Stir together brown sugar, water, vanilla extract, cinnamon, and salt. Brush overpeaches. Fold foil to form a packet, crimping edges to seal. Grill, covered, for 15 minutes.
