ROCKY ROAD ICE CREAM CAKE

Rocky Road Ice Cream Cake image

This cake brings all the joys of rocky road with chocolate ice cream, toasted walnuts plus marshmallows and marshmallow creme.

Provided by Food Network Kitchen

Time 5h

Yield 8

Number Of Ingredients 8

6 tablespoons unsalted butter, melted, plus more, for the pan
9 ounces chocolate wafer cookies, crushed
1/2 cup marshmallow creme
1/2 cup chopped toasted walnuts
2 quarts chocolate ice cream, softened
3/4 cup heavy cream
8 ounces bittersweet chocolate, chopped
1/2 cup mini marshmallows

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
  • Put the melted butter and wafer cookies in a medium bowl and mix well. Press the mixture into the bottom and slightly up the sides of the prepared pan. Bake for 10 minutes, then let cool completely before using.
  • Spread the marshmallow creme onto the cookie crust then sprinkle with the walnuts. Scoop the ice cream onto the walnut layer, packing it in tightly. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • Bring the heavy cream to a simmer in a small pot. Pour the cream over the chocolate in a heatproof bowl and stir until smooth. Allow to cool 10 minutes before using.
  • Frost the top and sides of the cake with the ganache and sprinkle with the mini marshmallows. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze another 1 1/2 to 2 hours or overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

WARM ROCKY ROAD CAKE

CLASSIC VANILLA CAKE

Classic Vanilla Cake image

The name says it all: This is the one to serve at birthdays and other celebrations that call for the perfect version of a traditional American layer cake. The oil in the batter keeps the cake moist, and the simple American buttercream is sweet and fluffy.

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 12 servings

Number Of Ingredients 14

1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pans
2 3/4 cups all-purpose flour, spooned and leveled, plus more for the pans
1 teaspoon baking powder
1 teaspoon fine salt
2 cups granulated sugar
1/2 cup vegetable oil
5 large eggs, at room temperature
1 tablespoon pure vanilla extract
1 cup milk
3 sticks (1 1/2 cups) unsalted butter, at room temperature
Pinch fine salt
3 1/4 cups confectioners' sugar
2 teaspoons pure vanilla extract
1/4 cup milk

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter the bottoms and sides of two 9-inch round cake pans; dust with flour, and tap out the excess.
  • Whisk together the flour, baking powder and salt in a medium bowl; set aside.
  • Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
  • Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly between the prepared pans.
  • Bake the cakes on the same oven rack until golden on top and the centers spring back to the touch, 35 to 40 minutes. Rotate the pans about halfway through if they seem to be browning unevenly. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.
  • For the frosting: While the cakes cool, beat the butter and salt in a large bowl with an electric mixer on medium speed until smooth. Gradually beat in the confectioners' sugar. Once it's all been added, increase the speed to medium-high, and beat until white and fluffy. Add 2 tablespoons of the milk, and beat to incorporate. Beat in the remaining milk, one tablespoon at a time (the frosting will be spreadable but not runny).
  • To assemble: Place 1 cake layer right-side up on a cake plate or stand, and spread with 1 cup of the frosting. Top with the second cake layer. Frost the top and sides of the cake with the remaining frosting.

VANILLA ROCKY ROAD CAKE

Vanilla Rocky Road Cake image

Craving something sweet and crunchy, I started searching the pantry. This is what happened when I started with a basic yellow cake mix and began adding ingredients. It is unbelievably decadent and very easy to make. Any brand of cake mix will work, but the eggs, oil and water amounts may change. Follow the directions on your mix.

Provided by Shirley York @surelyshirley

Categories     Cakes

Number Of Ingredients 12

CAKE:
1 box(es) yellow cake mix, any brand
3 - eggs
1/3 cup(s) vegetable oil
1 1/4 cup(s) water
1/2 to 1 cup(s) pecans, coarsely chopped, toasted
1/2 to 1 cup(s) semi-sweet chocolate chips
FROSTING:
1 can(s) fluffy white frosting, any brand
1/2 cup(s) semi-sweet chocolate chips
1/2 cup(s) marshmallows, mini
1/2 cup(s) pecans, coarsely chopped and toasted

Steps:

  • Preheat oven to 350 degrees. Spray 2 cake pans with baker's spray or grease and flour the pans.
  • Mix cake mix as directed on the box. Your ingredients may be different than on the mix I used. Any yellow cake mix will work.
  • Add nuts and chocolate chips and mix well by hand. Pour into prepared pans and bake as directed on the cake mix.
  • Cool cakes in pans for 10 minutes then remove from pans to a wire rack and cool completely.
  • Put frosting into a bowl and stir til smooth. Add 1/2 cup each pecans, chocolate chips and mini marshmallows. Stir gently til well mixed.
  • Place one cake layer on a plate and cover with half the frosting. Add remaining layer and cover the top with the rest of the frosting. You don't need to cover the sides of the cake as the frosting will be very difficult to spread on a vertical surface.
